I am tired of the same old meat loaf. Anybody have an exotic meatloaf recipe?

Use your basic meatloaf recipie adding a little curry and chopped roasted red bell pepper.Put some feta cheese in the middle of the meat,then press together to form the loaf.Mix some chutney and ketchup together and spread on top of the meat loaf,bake as usual.Enjoy.....I am tired of the same old meat loaf. Anybody have an exotic meatloaf recipe?
I used to eat at a Hungarian restaurant that made a great meatloaf. They started off with pretty much the same meat mixture that you're probably using now and added some pieces of hard boiled egg (I've done it with and without the egg - if you do put them in, don't over mix the meat) they put some kielbasa - or ';Polish'; - sausage (1 and 1/2 inch diameter) down the length of the meatloaf in the middle. When you slice it, you get a cross section of the sausage. Sometimes, they made it with dill pickle spears, tooI am tired of the same old meat loaf. Anybody have an exotic meatloaf recipe?
Don't know what your same old recipe is, so don't know what to tell you that would be any different...
Make meat loaf as normal then cut off end of green pepper, stuff and bake
Sometimes I add in steak sauce or bbq sauce instead of the routine ketchup. I also add in chopped up green peppers and onions, but that's probably pretty typical.
Spice it up, put some jalapenos in it, or instead of ketchup, put bbq sauce on it, or salsa!
we mix salsa in our recipe.
Mozzarella Stuffed Meat/Turkey Loaf





1 1/4 pounds ground turkey breast (or ground beef)


1 10-oz pkg frozen chopped spinach, thawed, squeezed dry


1/2 cup minced onion


1/2 cup seasoned bread crumbs


1/4 cup chopped fresh parsley


1 teaspoon dried oregano


2 egg whites


salt and ground black pepper, to taste


1/4 teaspoon cayenne pepper


4 ounces fresh mozzarella, cubed


2 tablespoons ketchup


2 tablespoons Dijon mustard





Preheat oven to 375掳


In a large bowl, combine turkey, spinach, onion, bread crumbs, parsley, oregano, egg whites, salt and peppers. Mix until combined and divide in half.





Press 1/2 of the turkey into an 8-inch loaf pan covered in foil. Top bottom half with cubed mozzarella cheese. Press the rest of the turkey mixture over top and press down to flatten the top.





In a small bowl, combine the ketchup and mustard and with a pastry brush, brush the top of the meatloaf. Bake about 1 hour, until top is golden and the loaf begins to pull away from sides of pan. Let stand 10 minutes before slicing.

Add brown gravy mix and then make a trench on the top when the loaf is done fill the trench will garlic mashed potatoes and top with cheese or crisp onions
I know what you mean. I used a can of Rotel Tomatoes and Green Chilis to mine and it was really good. Spiced the taste up a little but not too spicy, just tasty.
I don't know how ';Exotic'; this is but sometimes I add the meat from one Italian sausage to about a pound of chopped sirloin and my usual meatloaf ingredients.
Reuben Meatloaf





Ingredients





(4 servings)





1 lb Ground beef, crumbled


1 c Breadcrumbs; soft, preferab


1/2 c Thousand island dressing


1 Egg


1/2 ts Caraway seed (optional)


Pepper





Filling:


1 cn Sauerkraut; 8 oz


1 oz Corned beef (from can), chop


1/2 c Cheese; swiss, shredded








Instructions





Fat grams per serving: Approx. Cook Time: :20 Combine all meat mixture ingredients in medium bowl. Press 1/2 of mixture in bottom of loaf pan. Make slight indentation, lengthwise down centre of meat loaf. Combine all filling mixture and put in indentation. Top with remaining meat mixture, pressing to enclose filling and sealing edges. Cook at HIGH (100%) 13-18 minutes or till firm and temperature is 145F. Let stand covered for 5 minutes.











Sweet and Sour Meatloaf





Ingredients





(6 servings)





8 oz Tomato sauce (1 can)


1/4 c Brown sugar


1/4 c Vinegar


1 ts Mustard


2 lb Ground beef


1 c Sliced mushrooms


1 Egg, slightly beaten


1/4 c Onion, minced


1/4 c Crushed crackers


1 ts Salt


1/4 ts Pepper








Instructions





Combine first 4 ingredients to make sauce. Combine remaining ingredients, kneading together with hands. Add 1/2 tomato sauce mixture. Put in loaf pan. Pour remaining sauce over loaf. Bake at 400 degrees for 45 minutes.











Apple Meatloaf





Ingredients





(4 servings)





1 lb Lean Ground Beef


1 x Apple, cored and chopped


1 x Med Onion, chopped


1/8 ts Pepper


1/2 ts Garlic Salt








Instructions





1 or 2 slices of Bread Preheat oven to 350. Combine all ingredients except bread. Soak bread in cold water, squeeze out moisture, shred, and add. Place in loaf pan and bake 25-30 minutes. Or...form into patties, roll in bread crumbs and pan fry, or broil.











Aussie Meatloaf

1 lb Ground beef - lean


1 lb Sausage stuffing


1 c Breadcrumbs - fine


2 Onions - medium, chopped

1 tb Curry powder


1/2 c Water

Salt and pepper to taste





SAUCE:


1 Onion - chopped very fine


1/4 c Water


1/2 c Ketchup


1/4 c Dry red wine OR beef stock


1/4 c Worcestershire sauce -

2 tb Vinegar


1 tb Instant coffee


1/4 c Brown sugar - packed


1 oz Margarine


2 ts Lemon juice

Contributed to the echo by: Fred Towner Barbecue Meatloaf Aussie Style - First Prize LOAF: Combine meats, breadcrumbs, onions, salt, pepper, garlic, parsley, curry and egg in large bowl. Mix well. Mix milk and water and add to meat mixture a little at a time until smooth but firm. Shape into loaf and put into greased baking pan. Bake 30 minutes at 375F.


SAUCE: Saute onions in margarine until golden and add all other ingredients. Bring slowly to a boil, lower heat and simmer 10 to 15 minutes. (great with ribs or chicken). After loaf has cooked for 30 minutes, pour half of the sauce over the meat, return to oven and bake 45 minutes more, basting often with remaining sauce. Well, I don't know exactly what your ';same old meat loaf'; recipe involves.





I have made meat loaf in the past with such ingredients as minced or chopped onions, garlic, seasoned Italian bread crumbs, one egg, some beef bullion and grated Parmesan cheese.
Best Meatloaf


Ingredients:


3 pounds lean ground beef


1-1/2 cups dried gluten free bread crumbs or croutons


1 Tablespoon olive oil


1 large red onion


1 teaspoon or more powdered garlic or 4 cloves


1 teaspoon or more Italian seasoning (oregano, basil)


3 eggs


1 cup catsup


2 Tablespoons horseradish


1 Tablespoon Worcestershire sauce


2 Tablespoons Dijon mustard


1/2 teaspoon salt to taste


1 teaspoon pepper


Garnish


1/2 cup ketchup


1 teaspoon Dijon Mustard


1 Tablespoon horseradish


Heat oven to 350 degrees.





In a skillet, heat oil, onion, garlic, Italian seasoning, salt and pepper over medium heat. Stir for even heating until softened and onions are translucent.





In a large bowl combine ground beef, eggs, bread crumbs, ketchup, horseradish, Worchestershire sauce, mustard, and onion mixture. Add more seasonings if desired. Mix together thoroughly with clean hands.





Pack into a 8-inch x 4-inch (approximately) glass baking dish.





Garnish: Combine ketchup, horseradish and mustard. Spread garnish on top of loaf.





Bake at preheated 350 degrees until meat thermometer registers 170 degrees about 90 minutes in regular oven or 60-70 minutes in convection oven. Let stand for 5 - 10 minutes and pour off any accumulated fat before serving.





Serves: 8 - 10
make yuor meay loaf the same as you usually do, but cover the bottom of your pan with about 1/4 in. of brown sugar and then a layer of ketchup (instead on covering the top of the loaf). put the meat in and bake it. It is execellent and a bit different. And instead of just using ground beef, use like 1 lb sausage and 1 lb ground beef (lean).

    My regular meatloaf recipe (which is delicious, by the way) is probably more elaborate than you want to use. Here's one I use in a pinch:





    2 lbs lean ground beef


    1 Tsp kosher salt


    1 Tsp Seasoned Salt


    2 T Worcestershire sauce

    Italian Meatloaf





    Ingredients


    2 tablespoons extra-virgin olive oil


    1 red pepper, seeded, small diced


    1 onion, diced


    2 teaspoons (about 3 cloves) chopped garlic


    1 pound ground beef


    2 eggs


    3/4 cup bread crumbs


    1 cup grated Parmesan


    1 tablespoon Worcestershire sauce


    1 tablespoon balsamic vinegar


    2 tablespoons chopped basil leaves


    1 tablespoon chopped parsley leaves


    1 teaspoon salt


    1/2 teaspoon black pepper


    1 cup marinara sauce


    Directions


    Preheat oven to 350 degrees F.








    Heat 1 tablespoon of the olive oil in a medium saute pan over medium heat and add the peppers, onions and garlic. Saute until just soft, remove to a plate and cool.





    When the peppers and onions are cool, combine all of the remaining ingredients together except for the marinara. Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.





    Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve

    dad's meatloaf with tomato relish





    Tomato Relish:


    Extra-virgin olive oil


    1 onion, finely diced


    2 garlic cloves, minced


    2 bay leaves


    2 red bell peppers, cored, seeded, and finely diced


    2 tomatoes, halved, seeded, and finely diced


    1/4 cup chopped fresh flat-leaf parsley


    1 (12-ounce) bottle ketchup


    1 tablespoon Worcestershire sauce


    Sea salt and freshly ground black pepper


    Meatloaf:


    3 slices white bread, crusts removed, torn into chunks by hand


    1/4 cup whole milk


    1 1/2 pounds ground beef


    1 pound ground pork


    2 eggs


    Leaves from 2 fresh thyme sprigs


    Salt and freshly ground black pepper


    3 to 4 bacon slices








    Preheat the oven to 350 degrees F.


    Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.





    Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.





    This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small ';hamburger'; patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.





    Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.





    Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side.     Here is my basic meatloaf:





    1 pd of ground beef (or meatloaf mix)


    2/3 cup of milk


    1/2 cup of bread crumbs (or cracker crumbs)


    1/4 cup ketchup (or tomato sauce)


    1/2 cup of finely chopped onion


    1 teaspoon of salt


    dash of black pepper


    1 egg (beaten)


    (sometimes I add a package of dry onion soup mix and a teaspoon of Worcestershire sauce to jazz it up, neither are necessary)





    Preheat oven to 350





    Mix all things together. Form into loaf and place in baking dish or loaf pan. You can put more ketchup on the top if you would like. Bake for 1 hour.

    Tomato sauce adds body, ketchup adds flavor, restructure your ketchup with 1/2tsp of cornstarch.


    Classic Meatloaf





    Ingredients:


    1-1/2 pounds ground beef


    1 can (8 ounces) tomato sauce


    1 cup soft bread crumbs


    1 egg


    1 small onion, finely chopped


    2 teaspoons Worcestershire sauce


    1 teaspoon dried thyme leaves, crushed


    1/2 teaspoon garlic salt


    1/4 teaspoon pepper


    Topping


    1 tablespoon packed brown sugar


    1 teaspoon dry mustard





    Procedure:


    Heat oven to 350掳F. Measure 1/4 cup tomato sauce, combine with topping ingredients in small bowl.





    Set aside.


    Combine remaining tomato sauce with remaining meatloaf ingredients in large bowl, mixing lightly but thoroughly.


    Shape beef mixture into 8 x 4-1/2-inch loaf on rack in broiler pan. Spread topping over meatloaf.





    Bake in 350掳F oven 1 hour to medium (160掳F) doneness, until not pink in center and juices show no pink color.


    Let stand 10 minutes before cutting. Cut into slices.

    The EASIEST meatloaf recipe (located on the back of any Lipton Onion Soup Mix box is:





    1 envelope Lipton Onion Soup Mix


    2 lbs ground beef


    3/4 cup breadcrumbs


    2 eggs


    3/4 cup water


    1/3 cup ketchup





    Mix all the ingredients together.





    Bake in 13x9 pan at 350 for about an hour.

    I have to make a big one tho..Teenage boys..





    2 - 2.5 lbs of ground beef..


    1 pkg. crushed saltine crackers..


    1 egg..


    1 onion diced small..


    ketchup..ummm..I would say 1/4 cup..





    Mix all together..I ball mine up in a ball shape..pick it up..and well..I slap it around a bit..LOL!! Helps make it stay together..


    put in baking pan and form into a load..Rub the outsides with ketchup..





    Or you can make a glaze out of ketchup and brown sugar..My family likes it both ways..
    This is our family recipe and the secret is chili sauce, not ketchup or tomato sauce.





    2lbs ground beef

    2 or 3 splashes of worcestershire sauce

    Stove Top Savory Herb Stuffing


    diced onion


    diced bell pepper


    2 Tablespoons Ketchup


    1-2 pounds ground beef





    In a large bowl beat eggs and water and add the stuffing and seasoning. Then add the onion and bell peppers and ground beef and mix well. Bake uncovered at 350 degrees for 1 1/4 to 1 1/2 hours. Just about ten minutes before it's done, remove and cover with top of meatloaf with ketchup, and return to oven for the last ten minutes.
    The ketchup I do believe just adds flavor to the meat.The other seasonings that you put taste well with ketchup.You could use tomato paste, but thin it down a little.Tomato sauce can be poured and browned on top of the loaf for added flavor and color.Happy cooking to you......

    Combine ingredients thoroughly; form into an 8 x 4-inch loaf in shallow baking pan. Bake at 350 degrees F for 1 hour. Let meat loaf stand 5 minutes before slicing.

    2 1/2 cups crushed butter-flavored crackers


    1 small onion, chopped


    2 eggs


    3/4 cup ketchup


    1/4 cup brown sugar


    2 slices bacon





    1 cup ketchup


    2 tablespoons vinegar


    3/4 teaspoon salt, or to taste


    2 tablespoons prepared yellow mustard


    1/2 cup brown sugar


    DIRECTIONS


    Preheat the oven to 350 degrees F (175 degrees C).


    In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar until well blended. Press into a 9x5 inch loaf pan. Lay the two slices of bacon over the top.


    Bake for 1 hour in the preheated oven, or until cooked through. While the loaf bakes, mix together the remaining 1 cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.

    Combine. Bake in loaf pan 400 degrees for 15 min. While


    this is cooking, make your sauce:





    Sauce:


    1/3 C. ketchup


    2 T. sugar


    2 T. vinegar


    2 T. Worcestershire sauce


    1/4 C. water


    1/4 C. chopped onion.





    Pour sauce over meatloaf.


    Cook additional 45 min. at 350 degrees.
    Mom's Basic Meatloaf





    A basic meatloaf with ground beef, cracker crumbs, ketchup, chopped onion, and seasonings.





    INGREDIENTS:


    1 pound lean ground beef


    2/3 cup milk


    1/2 cup cracker crumbs


    1/4 cup ketchup


    1/2 cup finely chopped onion


    1 teaspoon salt


    1/8 teaspoon black pepper


    1 egg, beaten


    PREPARATION:


    Mix all ingredients together gently. Form into a loaf and place in baking dish or loaf pan. Top with more ketchup if desired. Bake at 350掳 for about 1 hour.


    Serves 4.
    ';bat out of hell'; is probably the most classic meatloaf recipie.
    I make my meatloaf without ketchup. My son puts it on afterwards. I mix the meat with garlic powder, salt, pepper, parsley, an egg, some bread crumbs and chopped up mushrooms and onions. I then pour some beef gravy over the top and pop it in the oven. I tried it once with Lipton Onion Soup mix. It wasn't bad.
    i like to make an italian meat loaf


    2 lbs of italian sausage bulk


    2 large eggs


    1 med red onion chopped


    3 entire cloves of garlic


    red %26amp; yellow bell peppers...(as many as u like)


    1/2 parmesian


    1 cup of mozzarella


    1 cup of corn flakes


    1/2 cup sweet baby ray BBQ sauce


    1/2 ketchup


    saute all the veggies for about 3-5 mins


    mix the sausage,eggs,and cornflakes. use your hands..much easier..them combine all the veggies,cheeses,BBQ,and ketchup...mix well and press into a loaf pan.


    bake at 350 for about 35-40 mins..u can brush some bbq on top of the meatloaf to help keep it from getting dry.

    1/2 teaspoon unflavored gelatin (powdered)


    1 tablespoon soy sauce


    1 teaspoon Dijon mustard


    2/3 cup crushed saltine crackers


    2 tablespoons minced fresh parsley leaves


    3/4 teaspoon table salt


    1/2 teaspoon ground black pepper


    1 pound ground sirloin


    1 pound ground beef chuck





    Glaze





    1/2 cup ketchup


    1 teaspoon hot pepper sauce


    1/2 teaspoon ground coriander


    1/4 cup cider vinegar


    3 tablespoons packed light brown sugar

    1. Adjust oven rack to middle position; heat oven to 375 degrees. Spread cheese on plate and place in freezer until ready to use. Prepare baking sheet (see illustration below).





    2. Heat butter in 10-inch skillet over medium-high heat until foaming; add onion and celery and cook, stirring occasionally, until beginning to brown, 6 to 8 minutes. Add garlic, thyme, and paprika and cook, stirring, until fragrant, about 1 minute. Reduce heat to low and add tomato juice. Cook, stirring to scrape up browned bits from pan, until thickened, about 1 minute. Transfer mixture to small bowl and set aside to cool.





    3. Whisk broth and eggs in large bowl until combined. Sprinkle gelatin over liquid and let stand 5 minutes. Stir in soy sauce, mustard, saltines, parsley, salt, pepper, and onion mixture. Crumble frozen cheese into coarse powder and sprinkle over mixture. Add ground beef; mix gently with hands until thoroughly combined, about 1 minute. Transfer meat to foil rectangle and shape into 10 by 6-inch oval about 2 inches high. Smooth top and edges of meat loaf with moistened spatula. Bake until an instant-read thermometer inserted into center of loaf reads 135 to 140 degrees, 55 to 65 minutes. Remove meat loaf from oven and turn on broiler.





    4. While meat loaf cooks, combine ingredients for glaze in small saucepan; bring to simmer over medium heat and cook, stirring, until thick and syrupy, about 5 minutes. Spread half of glaze evenly over cooked meat loaf with rubber spatula; place under broiler and cook until glaze bubbles and begins to brown at edges, about 5 minutes. Remove meat loaf from oven and spread evenly with remaining glaze; place back under broiler and cook until glaze is again bubbling and beginning to brown, about 5 minutes more. Let meat loaf cool about 20 minutes before slicing.
    I like mine made with 2 slices of toast torn, 1 egg, 1/2 chopped onion and chopped bell pepper.





    I use 12-16 oz of tomato paste instead of ketchup. I put 1 cup of it on the top druing the last 10 minutes .

    Magic Meat Loaf





    1 1/2 lb Ground Chuck

    sides of loaf. (If potatoes are peeled, coat with butter to keep from

    Manwich Night Meatloaf





    1 1/2 lb Ground beef


    1 c Soft fresh bread crumbs


    1/2 c Finely chopped onions


    1 Egg


    1/2 ts Salt


    1/4 ts Pepper


    1 cn (15 1/2 oz) Manwich


    1 tb Mustard





    In a bowl, mix first 6 ingredients with 1/2 cup sauce. Shape into loaf and


    place in shallow baking pan. Bake at 350 degrees for 40 minutes. Drain.


    Spread mustard over loaf and pour remaining sauce over all. Bake an


    additional 30 minutes.

    1 can condensed tomato soup (or tomato sauce),soup adds more flavor.


    1/2 package of meatloaf seasoning

Be sure to press edges of meat so that cheese won't melt over and run in bottom of pan. Bake for about an hour or 1 1/2 hours.

Combine all meatloaf ingredients thoroughly. Brush top of meatloaf with soy sauce. Place in slow after shaping loaf well, on a rack or ring of aluminum foil to keep it out of the drippings.     1 pack of ground beef or turkey


    1 onion


    1 bellpepper


    20 saltine crackers

    Dice up your onions and bellpeppers and crush your crackers. In a large bowl combine the meat, onions, bellpeppers and crackers. Add salt and pepper seasoning to your liking. You can add about 2tbsp of worchestire sauce if you like. You can scramble the egg if you like and mix all the ingredients together. Once mixed, mold meatloaf in a pan. Open one can of tomato sauce and pour over meatloaf. Cover with foil and place in pan and bake at 375degrees for 45min. Remove from oven and pour other can of tomato sauce onto meatloaf and place back in oven for another 25min.

    1 onion, finely diced


    2 garlic cloves, minced

    Leaves from 2 fresh thyme sprigs

    Cooking Instructions


    Preheat the oven to 350锟?F.





    Coat a skillet with a 2-count of oil and place over medium heat. Saut锟絟e onion, garlic and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup and Worcestershire; season with salt and pepper. Simmer the relish for 10 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.





    In a large mixing bowl soak the bread pieces in the whole milk. Set aside. In a separate large mixing bowl, combine the ground beef with the ground pork and mix well. Squeeze out the milk from the bread and add the bread to mixing bowl. Add the eggs, 1 cup of the tomato relish, and thyme; season with salt and pepper. Mix well with hands. To test, fry a small ';hamburger'; patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.





    Take a small baking tray and line with parchment paper. Form the meat into a loaf shape on the tray and top with another 1/2 cup of the tomato relish.
    Yes... well depending on how much you want to make....


    just get a retangular dish-in separate bowl mix ground beef, 1 pack crackers, 1egg , 1/2 cup ketchup( mush with hands until well mixed,(it will be a bit messy) spray your glass dish with pam,pour in dish and cook on 350 for about an hour... that will probably only feed 3 people, depending on how hungry they are... It has been a while since I have made it but that is really all you need, you may want to add onion, green pepper, seasonings.... Good Luck with it....
    Here's what I do: I still use the egg, but instead of breadcrumbs and a bunch of seasonings, I buy Stove Top savory herbs stuffing, put it my mini processer, grind it to bread crumb consistancy and add it with just a little worchester (i know, that's spelled wrong..i can't say it either, haha). Mix all together and bake uncovered at 350 for about an hour. The amounts you will need will depend how many people (or what size) meatloaf you want to prepare. Don't make it too dry, but you also don't want it too wet. 1 egg should be enough per 1 1/2 lbs of meat.

    Prep Time: 15 Cook Time: 30 min

    3 large potatoes


    1/4 cup (1/2 stick) butter


    1 cup cottage cheese


    1/2 onion, diced


    Salt and pepper


    Paprika


    Preheat the oven to 350 degrees F.


    Scrub the potatoes, slice them, and put in a pot with water to cover. Boil the potatoes until tender, then drain and mash them with 2 tablespoons of the butter. Add the cottage cheese, onion, and salt and pepper to taste. Stir the mixture gently, and then put in a greased casserole. Dot with the remaining 2 tablespoons of butter and sprinkle with paprika. Bake, uncovered, for 30 minutes.

    Here is the Meatloaf I make all the time and my husband and kids love it.





    1 pound ground beef


    1/4 cup ketchup


    1/2 packet dry onion soup mix


    3 slices leftover bread (heels are great), torn into bite-size pieces


    1 teaspoon Italian-style seasoning


    1 tablespoon water


    water as needed





    Preheat oven to 425 degrees. In a large bowl, combine the beef, ketchup, soup mix, bread, Italian-style seasoning and water. Mix well. Shape into a loaf and place into a 9 inch pie pan OR a 9x13 inch baking dish. Baste the top of the meatloaf with ketchup. Bake at 425 degrees for one hour, or until the edges are just crispy and the top has a crust. Cool for 15 to 20 minutes before cutting.
    2lbs lean ground beef


    1/2lb sausage


    1 can cream of mushroom soup


    1 packet of brown gravy mix dry without adding water.


    1 bag of seasoned corn bread dressing crumb


    2 eggs


    salt and pepper

    Bake at 350 until done





    When you remove it from the oven cover with 1 packet of brown gravy mix prepared as directed on package.

    Blend all ingredients thoroughly in a glass or stainless bowl.


    Shape into a loaf and place in an oven-safe (Pyrex) glass loaf pan.





    Bake in a 350 F oven for about 45-50 minutes.

    Sweet and Sour Meatloaf Recipe





    1-1/2 pounds ground beef


    1 cup dry bread crumbs


    1 teaspoon salt


    1/4 teaspoon pepper


    2 eggs


    1 teaspoon instant minced onion


    1 15 ounce can tomato sauce, divided in half





    Topping:


    Reserved half of tomato sauce


    2 tablespoons brown sugar


    2 tablespoons vinegar


    1/2 cup sugar


    2 teaspoons prepared mustard





    Mix together beef, bread crumbs, salt, pepper and eggs. Add onion and one half of the can of tomato sauce. Form into a loaf . Bake at 350 degrees for 50 minutes.





    In a saucepan, combine topping ingredients and bring to a boil. Pour over meat loaf, and return to oven for 10 minutes more.
    INGREDIENTS:


    1 pound lean ground beef


    2/3 cup milk


    1/2 cup cracker crumbs

    1/2 cup finely chopped onion

    Chili Cheese Meatloaf Recipe





    Ingredients:


    1 can (8 OZ.) tomato sauce


    1/2 cup catsup


    1 pound lean ground beef


    2 eggs


    1 cup fresh bread crumbs


    1 can (7 oz.) whole green chilies


    1 (8 oz ) package Jack cheese








    Directions:





    In a small bowl mix together tomato sauce and catsup. In a large bowl combine ground beef, eggs , crumbs and 1/2 cup tomato mixture. Stuff 4 whole green chilies with half of the cheese cut into strips. Grate the remaining cheese and cut the remaining chilies into strips. In a well-greased 5 x 10 x 3 inch loaf pan, pour half the tomato mixture to cover the bottom of the pan. Spread half of the meat mixture over this evenly. Lay the four stuffed chilies in pairs on top of the first layer of meat. Cover with remaining meat. Pour remaining tomato sauce mixture over top and garnish with cheese and strips of chile. Bake in a preheated 350 F oven for 1 hour. Remove from oven when done and allow to sit for 5 to 10 minutes before serving
    MEAT LOAF





    1-1/2 pound ground beef


    1/2 pound sausage


    1/2 onion cut up (save the other half for the other recipe)


    1/2 package of crackers crushed in the package (save other half)


    1 egg


    ketchup





    Mix the ground beef and sausage and onion and crackers and egg all together and form into a loaf. Put it in a loaf pan and stripe it with ketchup. Stick it in a 350 degree oven for 60 to 90 minutes. To check for doneness, cut out the center slice after an hour. If anything is still pink, give it a few more minutes.





    NOW FOR THE OTHER RECIPE.....





    SCALLOPED CORN





    1/2 package crackers (remember these)


    1/2 onion cut up (this is gonna be good)


    1 egg


    1 can whole corn (drain it)


    1 can creamed corn





    Dump all the above into a casserole dish and stir. Dust the top with salt and pepper. Cover it and stick it in the 350 degree oven with the meat loaf. This one takes just about an hour and is a great side dish. Most families include it in Thanksgiving dinner. I can't wait that long.

    1 lb ground beef


    1/2 lb. ground turkey


    1/2 cup bread crumbs


    1 egg beaten


    1 medium onion diced


    1 Tbs brown sugar


    1 Tbs Worschestire sauce


    2 Tbs ketchup


    1 tsp freshly ground black pepper


    1/2 tsp kosher salt





    Blend all ingredients thoroughly. Fold in 1 cup shredded sharp cheese (or cheese of your choice).


    Shape into a loaf and place in an oven-safe glass pan.





    Bake in a 350 F oven for about 50-60 minutes.

    2 lbs lean hamburger


    1/2 lb italian sausauge (I like the hot kind - deskinned)


    1/2 cup chopped up onion


    2-3 pieces of bread shredded


    one tsp Worchester sauce


    one tsp soy sauce


    one shake of Italian seasoning, garlic powder, pepper


    use water or milk to moisten and mix well. I know my meatloaf will be gone in one to two days and I refrigerate the leftovers so I add 2 eggs too.


    (optional - one packet onion soup mix)





    Cook at 350 degrees (I use a glass huge meatloaf pan) for 60-75 minutes...my family loves it!

    I've always liked this version that tastes like Boston Market:





    Top Secret Recipes version of Boston Market Meatloaf


    •1 cup tomato sauce


    •1 1/2 tablespoons Kraft original barbecue sauce


    •1 tablespoon granulated sugar


    •1 1/2 pounds ground sirloin (10% fat)


    •6 tablespoons all-purpose flour


    •3/4 teaspoon salt


    •1/2 teaspoon onion powder


    •1/4 teaspoon ground black pepper


    •dash garlic powder





    1.Preheat oven to 400 degrees.


    2.Combine the tomato sauce, barbecue sauce and sugar in a small saucepan over medium heat. Heat the mixture until it begins to bubble, stirring often, then remove it from the heat.


    3.In a large bowl, add all but 2 tablespoons of the tomato sauce to the meat. Use a large wooden spoon or your hands to work the sauce into the meat until it is very well combined.


    4.Combine the remaining ingredients with the ground sirloin-- flour, salt, onion powder and ground pepper. Use the wooden spoon or your hands to work the spices and flour into the meat.


    5.Load the meat into a loaf pan (preferably a meatloaf pan with two sections which allows the fat to drain, but if you don't have one of those a regular loaf pan will work). Wrap foil over the pan and place it into the oven for 30 minutes.


    6.After 30 minutes, take the meatloaf from the oven, remove the foil and, if you aren't using a meatloaf pan, drain the fat.


    7.Using a knife, slice the meatloaf all the way through into 8 slices while it is still in the pan. This will help to cook the center of the meatloaf. Pour the remaining 2 tablespoons of sauce over the top of the meatloaf, in a stream down the center. Don't spread the sauce.


    8.Place the meatloaf back into the oven, uncovered, for 25-30 minutes or until it is done. Remove and allow to cool for a few minutes before serving.


    Serves 4.Anybody with a good meatloaf recipe?

    1/4 cup tomato sauce (from 8oz can)





    Mix all ingredients. Form into loaf. Put in Pyrex dish (uncovered). Mix rest of tomato sauce with a little water and pour over loaf. Bake at 325-350 for 45 to 60 minutes.
    Try this one - it is Meatloaf Stuffed Green Peppers:





    6 green bell peppers (about 1/2 pound each)


    1/2 cup fine dry bread crumbs


    1 cup heavy cream


    3/4 cup finely chopped onion


    3 tablespoons unsalted butter


    1 1/4 pounds lean ground chuck


    1/2 pound ground pork


    1/4 cup chopped scallion greens


    1/4 cup minced fresh parsley leaves


    1 1/2 teaspoon salt


    1/8 teaspoon ground cloves





    In a kettle of boiling salted water blanch the bell peppers, covered partially, for 3 minutes and transfer them to a bowl of ice and cold water to stop the cooking. Cut 3/4 inch from the stem end of each bell pepper, reserving the bottoms, and chop fine the flesh from around the stems, discarding the stems. In a bowl let the bread crumbs soak in the cream for 8 minutes, or until the cream is absorbed. In a skillet cook the onion in the butter over moderately low heat, stirring occasionally, until it is softened and let it cool. Stir the onion mixture into the bread crumb mixture, stir in the chuck, the pork, the scallion greens, the parsley, the salt, the cloves, and black pepper to taste, and divide the mixture among the bell peppers. Arrange the bell peppers in a shallow 15 1/2- by 10 1/2-baking pan, add 2 cups water to the pan, and bake the peppers in the middle of a preheated 375°F. oven for 1 hour, or until the meat is no longer pink.

















    This is a recipe I use. Can't say where I got it from as I do all my own cooking and don't follow recipes. This one is good I think you'll like it.


    1 lb ground beef. 80 % lean.


    1 box Lipton beefy onion or golden onion soup mix.


    1 egg


    1 bread crumbs


    garlic


    %26amp; Lastly some B-B-Q sauce.


    Mix the soup mix, egg, bread crumbs, %26amp; ground beef together. The bread crumbs use as much as needed. Season it with garlic. Again I season to taste. Throw in some pepper and salt too. Once all this is mixed together you can shape it and into a loaf. Thorw it into a crock pot and add B-B-Q sauce. Oh, before I forget put three holes in the top of the loaf about the diamiter of your index finger. About half way down into the loaf. Put some sauce into these three holes. The sauce in the crock pot mix in a little water to thin it out mostly so it doesn't form too bad of a crust in the crock pot. Turn on med heat or high and cook til done. At high heat keep an eye on it so as NOT to burn it. On med heat not so bad BUT do check on it and baste it with the base keeping the meat tender so it doesn't dry up on you.     Old-fashioned Meatloaf:





    Prep: 20 min., Cook: 7 min., Bake: 1 hr., Stand 10 min.





    1 tablespoon butter


    3 celery ribs, finely chopped


    1/2 large onion, finely chopped


    2 pounds lean ground beef


    2 tablespoons Worcestershire sauce, divided


    1/2 cup Italian-seasoned breadcrumbs


    1/3 cup ketchup


    2 teaspoons Creole seasoning


    1 teaspoon Greek seasoning


    1 teaspoon garlic powder


    2 large eggs, lightly beaten


    1 (8-ounce) can tomato sauce


    3 tablespoons tomato paste


    1 tablespoon ketchup


    Garnish: chopped fresh flat-leaf parsley





    Melt butter in a medium nonstick skillet over medium heat; add celery and onion, and sauté 7 minutes or just until tender.





    Stir together celery mixture, ground beef, 1 tablespoon Worcestershire sauce, breadcrumbs, and next 5 ingredients in a large bowl. Shape into a 10- x 5-inch loaf; place on a lightly greased broiler rack. Place rack in an aluminum foil-lined broiler pan.





    Bake at 350° for 45 minutes. Stir together remaining 1 tablespoon Worcestershire sauce, tomato sauce, tomato paste, and 1 tablespoon ketchup until blended; pour evenly over meatloaf, and bake 10 to 15 more minutes or until no longer pink in center. Let stand 10 minutes before serving.





    Yield: Makes 6 to 8 servings

    1 pound (or 1 1/2 pounds) ground beef (lean or regular - whatever you have)


    1 Chopped medium onion


    1 Minced clove garlic


    3/4 cup Oatmeal


    1/4 cup Wheat germ (optional - or use wheat bran, or oat bran - whatever you have)


    1 Egg beaten


    1 tablespoon Worchestershire Sauce


    2 tablespoons Barbeque Sauce (any flavor - use what you have)

    1/2 teaspoon Black pepper (we like black pepper, so sometimes we put in more)


    3/4 cup Milk


    1/3 cup Ketchup


    1 tablespoon Prepared mustard


    1 tablespoon Brown sugar





    Preparation


    Preheat oven to 350 degrees F. Combine the ground beef, onion, garlic, oatmeal, wheat germ, egg, Worchestershire sauce, barbeque sauce, salt, blackpepper, and milk in a bowl. Do not overmix or the meatloaf will get tough. Put the mixture in a meatloaf pan (I use a 9';x5'; glass bread baking dish). Bake until firm about 45-60 minutes.

    2.5. hamburger or ground turkey


    1/2 cup crushed saltine crackers


    1/4 onion, chopped


    1/2 tsp garlic, minced


    2 eggs, beaten


    1 can tomato paste plus 1 1/2 cans water, mixed





    Topping


    1 can condensed tomato soup


    2 tbsp. prepared yellow mustard


    2 tbsp. splenda brown sugar substitute





    In bowl, combine beef, onion, garlic, eggs, and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Pour water and tomato paste mixture over and bake for 30 minutes at 350. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.
    COUNTRY MEATLOAF


    This is a homey version of meatloaf. The onions %26amp; bell peppers are not precooked, so they add a very slight crunch to the experience.





    1 1/2 c. onion, chopped


    1 c. bell pepper, chopped


    3 T. dried parsley


    1 tsp. black pepper


    1 1/2 tsp. salt


    2 cloves garlic, minced


    2 eggs, lightly beaten


    20 or so squares of saltines, crumbled


    2 1/2 to 3# ground chuck or gr. round


    2/3 c. catsup, + extra for topping


    1 c. mozzarella or provolone cheese,


    shredded





    Preheat oven to 350 degrees F.. Crush dried parsley before adding to this mixture. Combine all ingredients in a large bowl, %26amp; mix well. Spray loaf pan or 9x13” baking dish with oil. Place meat mixture into prepared pan, %26amp; cover with foil. (NOTE: if you use the 9x13” baking dish, then shape meat into a loaf %26amp; place in center of dish. I like using the baking dish instead of a loaf pan, because the grease seems to drain away from the meat instead of baking into it.) Bake for about 1 hr. 15 min. Remove from oven %26amp; remove foil. Cover top of meat loaf with catsup, %26amp; place back into oven uncovered %26amp; bake for another 15 to 20 minutes, until done. Remove from oven, drain off excess grease, %26amp; let stand in pan for 10 minutes. Slice %26amp; serve hot, warm or cold.





    CHEESEBURGER MEATLOAF





    1 1/2 lbs. ground chuck


    1/2 c. fine cracker crumbs


    1 egg, beaten


    1/4 green pepper, chopped


    1/4 tsp. dried basil leaves


    1 can (5 1/3 oz.) evaporated milk


    1 c. cheddar cheese, shredded


    1/4 c. onion, chopped


    3/4 tsp. salt


    2 slices of American cheese





    Preheat the oven to 350 degrees F. In a bowl combine all of the ingredients, except the 2 cheeses. Place the sliced cheese in the bottom of a waxed paper-lined loaf pan, %26amp; add the meat mixture on top of the cheese. Sprinkle the shredded cheese over all, %26amp; finish by layering on the rest of the meat mixture. Bake about 1 hour. Remove from oven, %26amp; let set about 10-15 minutes before removing it from the pan. Remove lining paper, slice, %26amp; serve. Leftovers can be rewarmed, or take the leftover loaf from refrigerator %26amp; slice about 1/2” thick or the thickness you like your hamburgers. Pan sauté the slices %26amp; put on hamburger buns. They are almost better this way than as a meatloaf.
    Here's a good one and just for the record, I don't even like meatloaf but since I've made this one i eat it every other week.





    Savory Meat Loaf


    A Betty Crocker Kitchens favorite, this herb-flecked meat loaf is everything a good meat loaf should be!





    1 1/2 pounds lean ground beef


    1 cup milk


    1 tablespoon Worcestershire sauce


    1 teaspoon chopped fresh sage leaves or 1/4 teaspoon dried sage leaves


    1/2 teaspoon salt


    1/2 teaspoon ground mustard


    1/4 teaspoon pepper


    1 garlic clove, finely chopped or 1/8 teaspoon garlic powder


    1 egg


    3 slices bread, torn into small pieces


    1 small onion, chopped (1/4 cup)


    1/2 cup ketchup, chili sauce or barbecue sauce








    1 . Heat oven to 350°F.


    2 . Mix all ingredients except ketchup. Spread mixture in ungreased loaf pan, 8 1/2x4 1/2x2 1/2 or 9x5x3 inches, or shape into 9x5-inch loaf in ungreased rectangular pan, 13x9x2 inches. Spread ketchup over top.


    3 . Insert meat thermometer so tip is in center of loaf. Bake uncovered 1 hour to 1 hour 15 minutes or until thermometer reads 160°F.





    I didn't do the bbq, ketchup or chili sauce on top, cause I had gravy with mine! Oh and instead of the 3 slices of bread, I used a cup of breadcrumbs. Oh and one more thing, if you like sage then keep it in, if you are not fond of it like me then take it out. The first time I left it in, but since then I have kept it out and it is just as good!





    This recipe was a huge success amongst my friends, hope you enjoy it!
    Spanish Meatloaf


    Serves 6





    1-1/2 lb Ground Beef, lean


    1 (5.5 oz envelope) Wyler's ''Hearty Beef Stew'' Soup Starter


    1 (8 oz bag) Mexican Style Cheddar Cheese, shredded


    1 (4 oz can) Diced Green Chili Peppers


    1 (14-1/2 oz can) Diced Tomatoes, drained


    1 Cup BBQ Sauce (recommended: Kraft Carb Well)





    Instructions:


    Preheat the oven to 350ºF





    In a large bowl add the soup starter, diced green chili peppers, and the diced tomatoes; mix until the liquid is absorbed. Add the ground beef and BBQ sauce and mix thoroughly until well combined.





    Place 1/2 of the mixture on a broil pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal.





    Bake for 45 minutes; drain any residual fat if necessary.





    Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.
    I made this meat loaf just this week. It was really good.





    Italian Meat loaf and Spinach roll





    1 pound ground beef,


    1/2 pound ground pork


    1 1/2 cups soft bread crumbs


    1 small onion, diced finely


    1/2 cup tomato sauce


    1 egg lightly beaten


    2 cloves garlic crushed


    a pinch each of basil, oregano, thyme, marjoram, and rosemary


    3/4 teaspoon each salt and black pepper


    1/2 teaspoon crushed red pepper flakes


    1 package(10 ounces) chopped frozen spinach, thawed and squeezed dry


    1 cup shredded mozzarella cheese


    1/2 cup shredded Parmesan cheese





    Heat oven to 350 degrees. combine beef, pork, bread crumbs, onion, tomato sauce,egg, garlic, and seasonings in a large bowl. Mix spinach and cheeses together in medium bowl.


    Press meat mixture into about an 8x14-inch rectangle about 1/2 inch thick on a large piece of wax paper. Spread filling over meat mixture, leaving about an inch border all the way around. Roll from short end in jellyroll fashion, press over filling at both ends and seal. Place seam side down on rack in open roasting pan. Sprinkle top with additional Parmesan cheese, if desired. Bake 60 to 70 minutes until meat checks done (160 degrees) cut in 1 inch slices to serve.





    I did use an extra amount of tomato sauce to pour over the top the last 15 minutes of baking even thought the recipe doesn't call for that.

    Meatloaf:


    3 slices white bread, crusts removed, torn into chunks by hand


    1/4 cup whole milk


    1 1/2 pounds ground beef


    1 pound ground pork


    2 eggs


    Leaves from 2 fresh thyme sprigs


    Salt and freshly ground black pepper


    3 to 4 bacon slices








    Preheat the oven to 350 degrees F.


    Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.





    Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.





    This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small ';hamburger'; patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.





    Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.





    Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!
    this is our favorite.....we eat a meal with it the first night....then sandwiches the next....no leftovers!!!!





    1 1/2 lbs ground chuck


    1 egg....slightly beaten


    25 zesta saltine crackers....crushed


    1 cup heinz ketchup


    1/2 tsp black pepper


    1 tsp salt


    1 pkg dry lipton onion soup mix





    Mix all ingredients until completely blended.....


    press mixture into 10x10 cooking dish....(I usually try to keep it away from the side of dish...so I can drain drippings a time or two while cooking.....)


    I use the end of a wooden spoon and poke holes into the top....


    then pour alot of ketchup on top and spread...


    bake for 15 minutes at 350.....then decrease temp to 300 and bake 2 hours....delicious.


    (You can use a broiler pan...so the drippings can drip into pan below....just watch and make sure meatloaf doesn't get too brown)
    1 pound extra lean ground beef


    1 pkg stove top stuffing mix crushed


    1 cup water


    1 tsp garlic powder





    Mix and put equal amounts into 8 muffin cups sprayed with Pam. Make in indent in each mini meatloaf. Spoon in pasta sauce or salsa or BBQ sauce (whatever you like). Bake at 350 for 30 min. Top with cheese (whatever kind you like) and bake an additional 10 min, until bubbly. Enjoy!
    I like to use this simple recipe. It produces a flavorful and moist meatloaf.

    1/2 cup crushed Ritz crackers


    3/4 cup shredded Cheddar cheese


    1 (1 ounce) package dry onion soup mix


    2 eggs, beaten


    1/4 cup ketchup


    2 tablespoons steak sauce





    Preheat oven to 350 degrees. In a large bowl, stir together ground meat, Ritz crackers, cheddar cheese and onion soup mix until well combined. In a separate bowl, stir together eggs, ketchup and steak sauce until smooth. Stir the egg mixture into the beef mixture, adding a little water if necessary. Shape into a loaf and place in a 9x5 inch loaf pan. Bake in preheated oven 45 to 60 minutes, until no longer pink.

    * 1/2 cup packed brown sugar


    * 1/2 cup ketchup


    * 1 1/2 pounds lean ground beef

    2. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.


    3. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.

    We have food allergies so we don't use egg either. What makes a good replacement for the egg and even breadcrumbs is oatmeal. You can basically use any meatloaf recipe but just omit the onion out of it..





    Here is a link below also. It has a few recipes. The recipes probably call for onions but you can always omit and really not tell a huge difference.
    Just add some breadcrumbs, seasonings (salt/pepper/garlic powder) a lil bit of ketchup (bout 1 tbsp or good squirt) a few shakes of worchester sauce ,.......Mix together well


    Put in loaf pan and bake as usual, draining some of the fat in the pan 1/2 way through cooking*

    you have to have eggs to bind the mixture together. you could try it with a bit of water and more bread crumbs but it might not stay together as it is cooked and or served.

    meatloaf was actually invented by chance. someone trying to figure out how to stretch a package of hamburger to feed their family. you can modify or create it to your specific needs . you of course can make it without eggs or onions. if you have any celery or carrots you can add those if you like. or just leave it all out and just make it with crackers and hamburger. i recommend adding a roll of ground sausage to spice it up a bit. just be sure to cook the meat to the recommended temperature and enjoy your meal. good luck.

    1 lb. ground chuck


    1 egg, beaten


    2 tbls. worcestershire sauce


    1 cup ketchup


    1/2 tsp. onion salt (can sub garlic salt if you hate onions)


    3/4 stack Town House Crackers, crushed


    2 cups sharp grated cheese





    Mix all ingredients, except cheese. Press meat out onto plastic wrap about 1/2 inch thick. Sprinkle cheese over meat evenly. Roll up the meatloaf, jelly roll style. Tuck in the ends, and secure with LOTS of toothpicks. Bake at 350 degrees for about 45 min.





    Sauce:


    1 cup ketchup


    1/2 cup mustard


    1/2 cup brown sugar





    Combine, and heat thoroughly. About 15 min. or 20 min. before meatloaf is done, pour on some of the sauce, and finish baking. Keep the rest to pour onto the meatloaf slices at the table.
    I never use eggs in my meatloaf. Use hamburger or ground turkey, worcestershire sauce, salsa, a squirt of mustard, garlic powder, pepper, itallian seasoning or basil and oregano, thyme, a dash of red pepper, about a quarter cup or half cup parmesan cheese, and half cup italian bread crumbs, mix all together and bake. When it is done, flip it over and drain the juice. Put a little of the juice back over the top after flipping it, bake for about another 15 minutes. You can also add some spagetti sauce over the top. Sometimes I add shredded carrots or shredded zuccini. always let set in pan for at least half hour to soak up some of the juice that has been left over. It also cuts better if let rest before serving.

    My favorite meatloaf recipe doesn't use eggs.





    Mix meatloaf meat (hamburger, pork turkey in pretty much any proportion) with some ragu spaghetti sauce and bread crumbs. Spread it out on a cookie sheet, about a half inch thick roughly in a rectangle.


    Layer thin slices of ham and swiss on top to cover.


    Roll up.


    Slather with more ragu.


    Bake at 350 for about an hour.

    Ingredients-


    1 tablespoon butter


    2/3 cup minced white onion

    4 shallots, minced


    1/4 cup minced red bell pepper


    1/2 cup minced yellow bell pepper

    1 cup chicken stock

    In a large bowl, combine salt, black pepper, cayenne pepper, nutmeg and cumin. Stir in eggs, ketchup and half-and-half. Blend in vegetable mixture from skillet. Stir in tomatoes and ketchup. Simmer uncovered for 20 minutes. Stir in remaining tablespoon butter, and season to taste with salt and pepper.     4 tablespoons pan drippings


    4 level tablespoons flour


    2 cups water


    1/2 teaspoon Gravy Master


    1/2 tablespoon beef, chicken or pork soup base


    Salt and pepper to taste





    Start with 4 tablespoons of pan drippings. Blend in 4 level tablespoons flour, using low heat and stirring until smooth. Slowly stir in 2 cups water and additional pan drippings. Boil Gently 5 minutes. Stir in 1 teaspoon Gravy Master. Add Salt and pepper to taste. Makes 2 cups Perfect Gravy.

    3/4 cup quick cooking oatmeal


    2 eggs, beaten

    1/2 cup tomato juice


    1 sweet onion, minced


    1 tablespoon Worcestershire sauce


    1 teaspoon salt


    1/4 teaspoon ground black pepper


    3 tablespoons butter


    3 tablespoons all-purpose flour


    1 (10 ounce) can condensed beef broth


    3/4 cup water


    1 can cream of mushroom soup


    hot cooked mashed potatoes





    Directions :


    Combine ground beef, pork, oatmeal and eggs.


    Mix in milk, tomato juice, onion, Worcestershire sauce, salt and pepper.


    Pack firmly into a greased 9x5 inch loaf pan.


    Bake at 350 degrees for 90 minutes.


    Let stand 10 minutes before slicing.


    Meanwhile, combine broth and water. Cook until bubbly.


    Whisk in cream of mushroom soup.
