I hate ketchup, what's a good meatloaf recipe?

Italian-Style Meat Loaf


Prep Time: 15 min.


Bake Time: 1 hr. 20 min.


1. 1 jar Prego Traditional Pasta Sauce


2. 2 lb. ground beef


3. 1 %26amp;1/2 cups Pepperidge Farm Herb Seasoned Stuffing


4. 1 tsp. onion powder


5. 2 eggs, beaten


6. 4 cups shredded mozzarella cheese


7. Directions: MIX thoroughly 1 cup pasta sauce, beef, stuffing, onion powder and eggs.


8. Shape firmly into 8';x4'; loaf in greased baking pan.


9. BAKE at 350掳F. 1 hr. 15 min. or until done.


10. Spoon remaining pasta sauce over meat loaf


11. Sprinkle with cheese.

I don't use ketchup in my meatloaf recipes. I get pound of 3 parts of pork , beef , veal. I add an egg, Italian bread crumbs, or croutons work. Add garlic salt, pepper, sometimes I chop up an onion and add it. 1 can of cream of celery. Mix loaf , cook.I hate ketchup, what's a good meatloaf recipe?
1 lb ground beef


1 beaten egg


3/4 C. bread crumbs ( I use Progresso)


1 small onion chopped


salt,pepper, garlic powder, parsley flakes


1 can seasoned tomato sauce, divided


three strips bacon





Preheat oven to 350. Combine all ingredients except last two and shape into a loaf. Use only half of the tomato sauce.


Spread remaining tomato sauce over the loaf. . Lay bacon slices over tomato sauce.


Bake at 350 for one hour. Let sit for ten minutes before slicing.
here are recipes for my Mom's meatloaf and my husband's....neither call for ketchup in the mix itself, we just pour it over the meatloaf which you do not have to do:





My Mom's:





1 1/2 lb ground beef


2 eggs beaten


1/4 c. chopped onion


3/4 c. oatmeal


2 t. salt


1 c. tomato juice*


1/4 t. pepper





*can used 1 c. home canned tomatoes





Preheat oven 350 degrees. Combine all ingredients thoroughly in large mixing bowl. Pack into a glass casserole dish or loaf pan. Punch down sides to make small pockets for grease to collect. Bake for an hour. Top with ketchup if desired.





My Husband's:





2 lbs ground beef


3 eggs


2 pkgs crackers


1 box chicken flavored stuffing


2 c. oatmeal


2 large cans salsa*


1 t. pepper


1 t. salt


pinch of onion salt


pinch of garlic salt


1 c. (dried) minced garlic


1 t. seasoned salt


1 t. taco seasoning


1 t. steak seasoning


1 bottle ketchup


1 c. minced onions*





*if you want to use fresh ingredients, substitute salsa with fresh tomatoes and a whole chopped onion instead of minced onion.*





Preheat oven to 350 degrees. In a large mixing bowl, combine all ingredients. Mix well with hands until well blended. Take 2 large glass casserole dishes and divide meat mixture into each one evenly. Bake for an hour.
buy a packet of meatloaf seasoning at your local grocery store, they are really good and you sure don't need catsup. fill it with cheddar cheese though, wow,
Meatloaf with Tomato Gravy





Meatloaf:


1/2 cup dry bread crumbs


2 tablespoons extra-virgin olive oil


1/2 medium onion, diced


2 cloves garlic, minced


2 teaspoons dried oregano


2 1/2 teaspoons kosher salt


1/2 teaspoon freshly ground black pepper


2 1/2 pounds meatloaf mix (or pork and beef combo)


1/3 cup grated Parmesan


2 teaspoons Worcestershire sauce


2 large eggs, beaten


Gravy:


1/2 medium onion, diced


3 cloves garlic, smashed


1 teaspoon dried oregano


2 tablespoons extra-virgin olive oil


1 tablespoon unsalted butter


3 tablespoons tomato paste


1 bay leaf


1 (15-ounce) can low-sodium chicken broth


1 (15 1/2-ounce) can crushed tomatoes


1/4 cup grated Parmesan


1 teaspoon red wine vinegar


1 teaspoon kosher salt


Freshly ground black pepper








Preheat oven to 350 degrees F.


Toast the bread crumbs in a dry skillet over medium heat until browned and fragrant, about 1 minute. Transfer to a large mixing bowl and set aside. Add the olive oil, onions, garlic, oregano, salt, and pepper to the skillet and cook until onions are tender, about 8 minutes. Let cool slightly. Add the onions to the bread crumbs along with the meat, cheese, and Worcestershire sauce. Toss and mix gently. Add the eggs and stir to coat the meat completely.





Transfer to a foil-lined sheet pan and gently press into desired shape. Bake until an instant read thermometer registers 160 degrees F in the center of the loaf, about 45 minutes.





Tent the meatloaf with foil and let rest for 15 minutes while you make the gravy (or you can make the gravy while the meatloaf is baking).





Gravy: Cook the onions, garlic, and oregano in the olive oil and butter in a large skillet over medium-high heat until browned, about 6 minutes. Add the tomato paste and bay leaf. Stir until paste turns brick red and garlic is fragrant, about 3 minutes. Add the chicken broth and crushed tomatoes. Bring to a boil over high heat. Reduce heat to maintain a simmer and cook sauce until it thickens, about 5 minutes. Whisk in Parmesan cheese, vinegar, salt, and pepper. Discard the bay leaf and transfer the sauce to a gravy boat. Slice the meatloaf and serve with the gravy.








Now if you just don't like toatos with meatloaf at all, get some store bought brown gravy.
I use salsa in mine. Anything to keep it moist, it doesn't have to be ketchup. I've even seen some that top it with raw bacon before it goes in the oven

How can you hate ketchup? I get hives if I don't have any in the house, I stock up, I have a cupboard devoted to Ketchup only!!!!!!!!

Take any meatloaf recipe and sub BBQ sauce for the ketchup or tomato sauce or paste. Or you can use pizza sauce and some mozzarella cheese and have a pizza meatloaf also.
Put an egg or two and a little milk to keep the meatloaf moist. Use ingredients you like as seasoning. I like chopped onions, fresh minced garlic, Lipton Onion soup mix, some Italian bread crumbs.





Meatloaf should be an easy and quick. So I like to keep it simple.
