Does anyone have a good meatloaf recipe?

Meatloaf is one of my favorite recipes, it always come out moist and tender - served with roasted, baked or mashed potatoes and whole green beans or steamed baby carrots.





Meatloaf


3 pounds ground beef


3 large eggs


1/2 to 3/4 cup Italian style bread crumbs


1 packet Lipton's Onion or Beefy Onion Soup Mix


1 can sliced mushrooms, drained -optional


1/2 cup sliced black olives - optional


2 tablespoons BBQ sauce


1 tablespoon A-1 sauce


1/2 cup salsa


1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand





Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.

This meatloaf recipe is also called Meatloaf Braccioli because of the way the loaf is rolled. Braccioli means rolled meat in sauce. This meatloaf recipe offers a new twist for braccioli since it is made of ground beef to form a meatloaf. It is truly an enjoyable meal.





Ingredients


鈥?1 pound ground beef (leaner is better)


鈥?1 4 ounce can mushrooms (reserve juice)


鈥?1/2 cup dry bread crumbs


鈥?1 large egg


鈥?1/2 teaspoon garlic powder


鈥?1/2 teaspoon salt


鈥?4 center cut bacon strips


鈥?1 teaspoon dried parsley


鈥?1/2 teaspoon oregano


鈥?1/2 teaspoon basil


鈥?1/2 teaspoon thyme


鈥?2 tablespoons dry bread crumbs


鈥?1/2 onion, finely chopped


鈥?1 cup mozzarella cheese


鈥?1 8 ounce can tomato sauce











Directions





Preheat oven to 375 degrees. Add water to mushroom juice to make 1 cup. Fry bacon until crispy, drain and crumble. Set aside.





Combine beef, 1/2 cup breadcrumbs, egg, mushroom juice, garlic powder and salt in a large bowl. Mix well. On wax paper, form meat mixture into a 8x12 inch rectangle.





Sprinkle meat with parsley, oregano, basil, thyme and 2 tablespoons of breadcrumbs. Spread bacon, onion, mushrooms and cheese evenly over meat.





Roll meat into an 8 inch wide loaf. Place meatloaf into an 8 inch glass bread pan or glass baking dish.





Bake for 60 minutes. Pour tomato sauce over meatloaf, and cook for an additional 15 minutes.





Let meatloaf sit for 5 minutes before slicing and serving.Does anyone have a good meatloaf recipe?
Dad's Meatloaf with Tomato Relish





Tomato Relish:


Extra-virgin olive oil


1 onion, finely diced


2 garlic cloves, minced


2 bay leaves


2 red bell peppers, cored, seeded, and finely diced


2 tomatoes, halved, seeded, and finely diced


1/4 cup chopped fresh flat-leaf parsley


1 (12-ounce) bottle ketchup


1 tablespoon Worcestershire sauce


Sea salt and freshly ground black pepper


Meatloaf:


3 slices white bread, crusts removed, torn into chunks by hand


1/4 cup whole milk


1 1/2 pounds ground beef


1 pound ground pork


2 eggs


Leaves from 2 fresh thyme sprigs


Salt and freshly ground black pepper


3 to 4 bacon slices





Preheat the oven to 350 degrees F.


Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.





Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.





This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small ';hamburger'; patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.





Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.





Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!
Italian Meatloaf


Yield: 4 to 6 servings





2-1/2 pounds ground chuck (at least 85% lean)


1 large onion, chopped


2 large peppers, chopped





2 tablespoons garlic


1 16-ounce can diced tomatoes, drained


1 tablespoon Italian seasoning


1 teaspoon seasoned salt for meat


2 eggs


dash milk


salt and ground pepper to taste


Progresso Italian bread crumbs


16-ounce can tomato sauce (I add italian seasoning)





Preheat oven to 375 degrees.





In a bowl, combine meat, onions, and peppers.





Add next 8 ingredients and mix thoroughly. Add enough bread crumbs so meat mixture holds together nicely.





Form into a loaf shape and place in a large baking pan (I've used a roaster pan with rack, so the fat drains to the bottom pan).





Then cover with tomato sauce (mixed with italian seasoning).





Bake uncovered for 1-1/2 hours.
Meatloaf


Serves 5-6


Ingredients


750 g lean beef mince


1 red onion, peeled and finely chopped


1-2 tsp minced garlic


1 tbsp freshly chopped thyme


2 tbsp freshly chopped parsley


1 1/4 cup fresh white breadcrumbs


2 eggs, beaten


4 tbsp Lea and Perrin鈥檚 Worcestershire Sauce


400g can Wattie's Indian Style Tomatoes


1/2 cup beef stock, wine or water


Method


1. In a large bowl, combine beef mince, onion, garlic, thyme, parsley, breadcrumbs, eggs,3 Tbsp Lea and Perrin鈥檚 Worcestershire Sauce, and half a can Wattie鈥檚 Indian Style Tomatoes, season well with salt and pepper.


2. Using your hands or a wooden spoon, mix well. Shape the mixture into a loaf shape and place in a 7-8 cup capacity lasagne style dish.


3. Combine the remaining 1/2 can Wattie鈥檚 Indian Style Tomatoes with 1 Tbsp Lea and Perrin鈥檚 Worcestershire sauce and beef stock, mix well and pour over the loaf. Cook at 180掳C fan for 45 minutes, or until golden brown and cooked through. Rest the meatloaf for 5 minutes before carving thick slices.


Serve with mashed potatoes and steamed green vegetables.
Mom鈥檚 1940's Meatloaf





1 egg


2 tsp salt


3/4 cup chopped celery


1 finely chopped onion (I grate it)


1 tsp sage


1 pkg. dry onion soup mix


1 Tbsp chopped parsley (I used dried)


1/4 cup ketchup, plus more for top


1 can cream of mushroom or celery soup


2 lbs ground meat (1 1/2 lbs lean beef and 1/2 lb lean pork)


3 cups Bran Flakes cereal, slightly crushed





Blend all ingredients adding meat and cereal flakes last. Pack into a 9x5x3 loaf pan shaping into loaf. Spread top with ketchup. Bake at 375潞F for about an hour and a half. If top starts to get dark cover lightly with foil to prevent burning.

Mama's Cheesy Meatloaf





1 lb. ground chuck


1 egg, beaten


2 tbls. worcestershire sauce


1 cup ketchup


1/2 tsp. onion salt


3/4 stack Town House Crackers, crushed


2 cups grated cheese (I like sharp)





Mix all ingredients, except cheese. Press meat out onto plastic wrap about 1/2 inch thick. Sprinkle cheese over meat evenly. Roll up the meatloaf, jelly roll style. Tuck in the ends, and secure with LOTS of toothpicks. Bake at 350 degrees for about 45 min.





Sauce:


陆cup ketchup


录 cup mustard


录 cup brown sugar





Combine, and heat thoroughly. About 15 min. or 20 min. before meatloaf is done, pour on some of the sauce, and finish baking. Keep the rest to pour onto the meatloaf slices at the table.

Bacon-Wrapped Meat Loaf with Brown Sugar - Ketchup Glaze





If you like, you can omit the bacon topping from the loaf. In this case, brush on half the glaze before baking and the other half during the last fifteen minutes of baking. Serves 6 to 8





Brown Sugar - Ketchup Glaze


1/2 cup ketchup or chili sauce


4 Tbsp.s brown sugar


4 Tbsp.s cider vinegar or white vinegar





Meat Loaf


2 tsp. vegetable oil


1 medium onion , chopped medium


2 medium cloves of garlic , minced


2 large eggs


陆 tsp. dried thyme


1 tsp. table salt


陆 tsp. ground black pepper


2 tsp. Dijon mustard


2 tsp. Worcestershire sauce


1/4 tsp. hot pepper sauce


陆 cup whole milk or plain yogurt


1 pound ground chuck


陆 pound ground pork


陆 pound ground veal


2/3 cup Saltine crackers , crushed (about 16), or quick oatmeal, or 1 1/3 cups fresh bread crumbs


1/3 cup fresh parsley leaf , minced


8-12 slices bacon





1. For the glaze: Mix all ingredients in small saucepan; set aside.





2. For the meat loaf: Heat oven to 350 degrees. Heat oil in medium skillet. Add onion and garlic; saut茅 until softened, about 5 minutes. Set aside to cool while preparing remaining ingredients.





3. Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce, and milk or yogurt. Add egg mixture to meat in large bowl along with crackers, parsley, and cooked onion and garlic; mix with fork until evenly blended and meat mixture does not stick to bowl. (If mixture sticks, add additional milk or yogurt, a couple Tbsp.s at a time until mix no longer sticks.)





4. Turn meat mixture onto work surface. With wet hands, pat mixture into approximately 9-by-5-inch loaf shape. Place on foil-lined (for easy cleanup) shallow baking pan. Brush with half the glaze, then arrange bacon slices, crosswise, over loaf, overlapping slightly and tucking only bacon tip ends under loaf .





5. Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool at least 20 minutes. Simmer remaining glaze over medium heat until thickened slightly. Slice meat loaf and serve with extra glaze passed separately.

Cajun Style Meatloaf








Ingredients:





2 bay leaves


1 teaspoon salt


1 teaspoon ground cayenne pepper


1 teaspoon ground black pepper


1/2 teaspoon ground white pepper


1/2 teaspoon ground cumin


1/2 teaspoon ground nutmeg


4 tablespoons butter


3/4 cup chopped onion


1/2 cup chopped green bell pepper


1/4 cup chopped green onions


4 cloves garlic, minced


1 tablespoon hot pepper sauce


1 tablespoon Worcestershire sauce


1/2 cup evaporated milk


1/2 cup ketchup


1 1/2 pounds ground beef


1/2 pound andouille sausage, casings removed


2 eggs, beaten


1 cup dried bread crumbs








Directions:





1. In a small bowl, combine the bay leaves, salt, cayenne pepper, ground black pepper, ground white pepper, cumin, and nutmeg; set aside.


2. Melt the butter or margarine in a saucepan over medium heat. Add the onion, bell pepper, green onions, garlic, hot pepper sauce, Worcestershire sauce, and reserved seasoning mix. Saute until mixture starts sticking to the bottom of the pan, about 6 minutes. Stir in the milk and ketchup; continue cooking for 2 more minutes, stirring occasionally.


3. Remove vegetable mixture from heat, and allow to cool to room temperature. Place the beef and sausage in an ungreased 9x13 inch baking dish. Add the eggs, the vegetable mixture, and the bread crumbs. Remove the bay leaves. Mix well by hand, and form into a loaf about 1 1/2 inches high.


4. Bake uncovered at 350 degrees F (175 degrees C) for 25 minutes. Then raise heat to 400 degrees F (200 degrees C) and bake for another 35 minutes. Let stand for 5 minutes before serving.
My 3 favorite meatloaf recipes:





Stovetop meatloaf


2 pounds of hamburger


2 eggs


1 cup of water


1 box of stovetop stuffing


1 cup of bbq sauce


Do not prep the stovetop. Mix all ingredients into a bowl. Put in 9x9 pan. Cook on 375 degrees for 45 -60 minutes. It's very moist, and flavorful.





Cheddar Meatloaf


1 large egg


3/4 cup milk


4 ounces cheddar cheese, shredded


1/2 cup instant oatmeal


1/2 cup chopped onion


1 teaspoon salt


1 pound ground beef


1 1/2 cups ketchup, divided


1/2 cup brown sugar, packed


1 1/2 teaspoon prepared mustard





In a bowl, beat the egg and milk. Stir in 1/2 cup ketchup, cheese, oats, onion and salt. Add beef and mix well.


Get a muffin pan, and get a cookie or ice cream scooper and fill greased muffin cups. Combine ketchup, brown sugar and mustard (or just use bbq sauce). Spoon over meat. Bake, uncovered for 45 minutes at 350F or until meat is no longer pink. makes 12 patties.


Combine remaining ketchup, brown sugar and mustard; spoon over loaves.





Meatloaf with Brown Sugar-Ketchup Glaze


Glaze


1/2 c Ketchup or chili sauce


4 t Brown sugar


4 tsp Cider vinegar


Meatloaf


2 tsp Vegetable oil


1 Medium onion,chopped


2 Garlic cloves, minced


2 Large eggs


1 tsp Dried thyme leaves


1 tsp Salt


陆 tsp Ground black pepper


2 tsp Dijon mustard


2 tsp Worcestershire sauce


录 tsp Hot red pepper sauce


陆 c Milk, buttermilk or low-fat plain yogurt


2 lb Meat mix (50% ground beef; 25% ground pork, 25% ground veal) **when I made this I made 50% gr beef ; 50% sausage/ground pork..**


2/3 cup Crushed saline crackers or quick oatmeal (or 1 1/3 cup fresh bread crumbs)


1/3 cup Minced fresh parsley leaves


8oz thin -sliced bacon (8-12 slices, depending on loaf shape)





Preparation


1. Glaze: mix all ingredients in small bowel; set aside





2. Meatloaf: Preheat oven to 350掳F. Heat oil in medium skillet. add onion and garlic, suate until softened, about 5 minutes; set aside to cool.





3. Mix eggs with thyme, salt, pepper, mustard, Worcestershire, pepper sauce, and milk or yogurt. Add egg mixture to meat in a large bowl, along with cracker/bread selection, parsley and cooked onions and garlic; mix with fork until evenly blended and milk mixture does not stick to bowl. (If mixture does stick, add additional milk, a couple of tablespoons at a time, and continue stirring until mixture stops sticking.)








4. Turn meat mixture into a loaf pan (preferably one with a perforated bottom and drip pan). Use a fork to pull mixture away from pan sides. brush mixture with half the glaze, then arrange bacon slices, crosswise, over loaf, overlapping slightly %26amp; tucking only bacon tip ends under loaf. Bake until bacon is crispy %26amp; loaf registers 160 degrees (about 1 hour). Brush with remaining glaze and continue to bake until second coat has set, about 15 minutes longer.
EASY PLEASING MEATLOAF





2 eggs, beaten


2 lbs. ground beef


1 pkg. chicken stuffing mix


1 c. water


1/2 c. barbeque sauce,divided





Preheat oven to 35. Place ground beef, stuffing mix, water, beaten eggs and 1/4 c. barbeque sauce in lg. bowl. Mix all ingredients just until blended. Place ina loaf pan. Top meatloaf with remaining barbeque sauce. Bake 1 hr. or until cook through.





I usually divide my meatloaf into a muffin tin and they cook in 20 min. plus their perfect serving sizes.
I always take 2 pounds hamburger meat and 1 box stove top, any kind but the cornbread one. Actually not sure about cornbread one - haven't tried it yet. LOL





Cook at 350 or 375* for about 40 minutes. Top with ketchup and cook some more to heat.





It has all the spices and everything you need to make it (stove top)
This is the best meatloaf I've ever eaten or made. I always get compliments on it. Also, it's okay if you don't have every ingredient and you can use turkey or beef. The glaze is the best part:

I have a good meatloaf tip I saw on Paula Dean, she put slices of white bread on the bottom of the pan, and then puts the meatloaf on top of them to suck up the fat, it works well.
Just a basic meatloaf.....ground beef, onion, bread or cracker crumbs, pepper, 1-2 eggs, and some salsa for moisture and flavoring. YUMMY! Bake at 350 for about 1 hour.
I just made this the other night! It's the best!
