What is a good, simple meatloaf recipe?

I'm not into spending lots of time in the kitchen, but I'd like a simple recipe for meatloaf and how to cook it. What is a good, simple meatloaf recipe?
Take about a pound and a half of ground beef. Add one envelope of dry onion soup mix and a couple of tablespoons of dry breadcrumbs and mix well. Put it into a loaf pan and add 3/4 cup of water, cover with foil and bake at 350 for 45 min.What is a good, simple meatloaf recipe?
2 pounds lean ground beef


陆 an onion, chopped


2 eggs


2 cups Progresso Bread Crumbs (you can use any brand, I like progresso brand)


陆 can corn, drained.





Put the ground beef in a bowl, crack two eggs over it, and throw in two cups bread crumbs, then use your hands to mix everything well together. You can use a mixing spoon but I prefer hands because it is easier. Then, add your chopped onion and half a can of corn (optional) and spread into a loaf pan. Bake on 375 for about 60 minutes, take out of the oven, spread a small amount of ketchup on the entire top of the loaf (as if it was frosting for a cake) and then place back and continue baking for 20 more minutes, so the ketchup on the top bakes in with the meatloaf.. This is my own recipe and everyone loves it. I serve it with mashed potatoes and corn bread.
Use simple ingredients you have on hand to suit your taste (season with salt %26amp; pepper, Mrs. Dash, Paprika, whatever spice you have that you like on your food; chop up %26amp; use whichever vegetables you like %26amp; have on hand (I use onion %26amp; green pepper, but you might like carrot %26amp; cucumber); use whatever filler you have in your cupboard (I use bread crumbs, but you might crumble up crackers, corn flakes, day old bread, or use a cup of dry oatmeal) - any of these ingredients can be switched to match what you like %26amp; have on hand.





Here's the basic recipe:





1.5 to 2 lbs. Ground Meat (beef, turkey, chicken, pork or combo)


1 cup Filler (see above)


1 egg (this holds it all together)


1/2 cup Chopped Vegetables (see above)


______ Seasoning to taste


1/4 cup Ketchup


1 Tbsp. Mustard





Pre-heat oven to 325F. Mix all ingredients with your hands being sure it is all combined. Shape into a loaf %26amp; surround with potatoes, carrots, or whatever other vegetables you like in a roast pan, or, put into a 5'; x 9'; loaf pan. Bake for 1.5 hours.





If you want to make a topping for the meatloaf, here is a simple glaze:





Combine equal parts ketchup %26amp; brown sugar to spread on top of loaf


Top with strips of bacon (To crisp bacon, put under broiler for a few minutes at end of cooking time.)

Pancetta and Turkey Meatloaf Sandwiches





1/2 cup plain dried bread crumbs


1/4 cup chopped flat-leaf parsley


2 large eggs, lightly beaten


2 tablespoons whole milk


1/2 cup grated Romano


1/4 cup chopped sun-dried tomatoes


3/4 teaspoon salt


3/4 teaspoon freshly ground black pepper


1 pound ground turkey, preferably dark meat


10 ounces sliced pancetta, about 10 slices


3 cups arugula, about 3 ounces


1 cup mayonnaise


4 to 6 Italian rolls





Preheat the oven to 375 degrees F.





In a large bowl, stir together the bread crumbs, parsley, eggs, milk, cheese, sun-dried tomatoes, salt, and pepper. Add the turkey and gently stir to combine, being careful not to overwork the meat.





On a baking sheet lined with parchment paper, lay out the pancetta, overlapping the slices, into a large rectangle shape. In the middle of the rectangle, place the turkey mixture, shaping into a loaf. Using the parchment paper, wrap the pancetta up and around the turkey loaf to cover completely. Squeeze the parchment-covered loaf with your hands to secure the pancetta and solidify the shape of the loaf. While still covered in parchment, bake the loaf until the internal temperature reaches 165 degrees F on an instant-read thermometer, about 45 minutes. Remove from the oven and let cool.





In a blender, combine the arugula and the mayonnaise and process until smooth. Store in the refrigerator until ready to serve.





To make the sandwiches, slice the rolls and spread with the arugula mayonnaise. Slice the turkey meatloaf and place on the rolls to make sandwiches.



Meatloaf


2 pounds ground round


1 cup oatmeal or cracker crumbs


1 cup evaporated milk or heavy cream


1 teaspoon salt


鈪?teaspoon black pepper


1 tablespoon onion flakes


2 tablespoons Worcestershire sauce


1 cup ketchup


2 tablespoons sugar


3 tablespoons vinegar


录 cup water


2 tablespoons Worcestershire sauce


Preheat oven to 350 degrees. Prepare 2 quart casserole with non stick spray.





In large mixing bowl, mix and combine well first 7 ingredients. Place mixture in casserole, packing down well. Form lip around the edges of meat mixture to hold in topping.





For topping, combine and mix well last 5 ingredients. Pour over top of meat mixture.





Bake in preheated oven for 1 1/2 hours. Remove from oven and let set for 5 - 10 minutes before slicing.
Here's what someone told me. I've tried it and it's great. The stuffing mix takes care of the seasoning and holds the meatloaf together nicely.





Ingredients:


1 box stuffing mix (Stove Top or store brand) I use chicken flavor


1 Cup hot water (tap hot - no boiling)


2 pounds ground beef or combination





Empty stuffing mix into the mixing bowl.


Add 1 cup of hot water. Mix it and let it sit for a few minutes so the stuffing cubes get soggy.


Add 2 pounds of ground beef, or a combination if you choose.


Mix and form into loaf or use loaf pan.





Cook for about 1 or 1 1/2 hours at 350.





You can serve this with gravy, or put BBQ sauce or some tomato based sauce on it during the cooking if that's what you like.
