Easy, delicious Mom's meatloaf. 2 pounds of ground beef, 1 egg, 1 or 2 packet of Lipton's french onion soup (dry, powder packets), about 8 saltine crackers crushe up.(you can add anything else, like vegetables to this basic mixture but I don't- it's good like it is.) Mix all of the ingredients together, I do it by hand in a bowl, then mold into a square onto a baking sheet or put in a casserole dish and pat it together. Then I pour 1 small bottle of ketchup on the top (sorta like a frosting) and place 3-4 slices of uncooked bacon on top of the ketchup. I pop it into 350 degree oven until it looks cooked ( I don't have a formal recipe, I just eyeball it and check it every 10 minutes- it may take 30-40 minutes or so)Super quick %26amp; easy and tastes and looks wonderful!Do you have an easy, thick meatloaf recipe to share???
I make my meatloaf off the cuff. I usually put in 1 or 2 eggs depending on how much hamburg, some bread crumbs and salsa. Mix it all together with my hands and add any extra of the ingredients if I don't think it is sticking together well enough. Then put in loaf pan and bake at 350 degrees F for about 45-55 min.. I also let it rest for 10 min or so before serving so that it holds together when I cut into it.

Sprinkle with remaining cheese; let stand until melted.
I use 2 pounds hamburger or turkey, 1 sleeve crushed saltine crackers, 2 eggs, 3/4 cup milk, 1/2 teaspoon dry mustard, 1/2 teaspoon garlic powder, 1/2 Tablespoon dry onion flakes, 1 Tablespoon Worcestershire sauce, 1/2 cup chili sauce. Mix well and place in a loaf pan. Top with another 1/2 cup chili sauce and bake at 350 degrees for 45-60 minutes.
