What is a really good Meatloaf recipe?

The simpler the better, but I really want an easy to make - and eat meal :) P.S. Ketchup is a must!!!What is a really good Meatloaf recipe?
I've got a couple simple family recipes for you.





Italian Stuffed Meatloaf:


2 pounds ground beef


2 eggs


1 cup bread crumbs (up to 1 1/2 cups)


1 cup grated Parmesan


1 tablespoon Italian seasoning


1 tablespoon black pepper


2 tablespoons fresh chopped parsley leaves


2 cloves garlic, minced or pressed


1 onion, diced


1/2 cup ketchup


1/4 cup Worcestershire sauce


1 cup milk


8 slices Cheddar


8 slices baked ham


8 slices bacon





Preheat oven to 350 degrees F.


In a large mixing bowl, combine ground beef, eggs, breadcrumbs, Parmesan, herbs, garlic, onion, ketchup and Worcestershire. Mix well, gradually adding the milk (if it seems too moist, add bread crumbs until it is a consistency that will form a loaf without flattening. Spray a large baking or roasting pan with a nonstick spray and press the meatloaf out. Layer cheese slices and ham, covering the center line of the meatloaf, then close it together and tuck in the ends, forming a loaf which is oblong. Criss-cross the bacon strips to cover the loaf. Bake for 35 to 45 minutes or until an instant-read thermometer registers 160 degrees F.














Classic Meatloaf:


6 ounces garlic-flavored croutons


1/2 teaspoon ground black pepper


1/2 teaspoon cayenne pepper


1 teaspoon chili powder


1 teaspoon dried thyme


1/2 onion, roughly chopped


1 carrot, peeled and broken


3 whole cloves garlic


1/2 red bell pepper


18 ounces ground chuck


18 ounces ground sirloin


1 1/2 teaspoons kosher salt


1 egg


For the glaze:


1/2 cup catsup


1 tablespoon ground cumin


Dash Worcestershire sauce


Dash hot pepper sauce


1 tablespoon honey





Heat oven to 325 degrees F.


In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.


Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.


Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.What is a really good Meatloaf recipe?
The easiest meatloaf I know. This is the only recipe I use.


1lb. ground chuck or ground beef


1 can Spanish Rice(contains peppers, onions, tomatoes and rice)


1 egg


salt and pepper to taste


minute rice


ketchup


In a large bowl combine first 4 ingredients. If mixture is a little runny add a little of minute rice. During the cooking process the minute rice will absorb the liquid. Shape into a loaf and place in a dish that has been sprayed with Pam. Bake for about 1 hour at 350 degrees. About 10 minutes before end of baking time cover with ketchup.





Make a few mashed potatoes, a green salad or green beans and corn, rolls and you've got a good dinner.
hb and ground pork, equal amounts to 1lb (works with one or the other instead)


1/2 C cracker or bread crumb


2 egg


s/p spices, garlic, diced onion if you like it 1/4 c


1/4 c ketchup


1tlbsp soy


mix it all up and bake in loaf pan 350 45 min... till done
I crumble my ground beef in a large bowl. In a smaller bowl I combine my liquid ingredients; i.e. eggs,(11 per pound of meat0 milk,(1/4- 1/2 cup per pound of meat) and kectchup, worcestershire sauce, and/or steak sauce to taste) whatever I happen to have on hand.I beat well, if I use any seasonings I add now.(oregano, basil, parsley, paprika) I pour over the meat and mix until the meat absorbs the liquid. If I am using chopped veggies (onions, peppers, etc.) and/or onion soup mix I add now and mix again. I then add my crumbs, - enough for mixture to reach desired consistency (bread, cracker, oatmeal, and/or cornflake) and mix again. I then put in a loaf pan, and top with tomato soup, or sauce, or ketchup mixed w/water. I then bake it for 1/2 an hour at 400 degrees, then lower to 350 and continue baking for an hour.





Mixing the meatloaf in steps ensures a more evenly seasoned and textured loaf.
Long Time Family Meatloaf Recipe





1 lb. ground beef


1 egg


1 pkg. crackers, crushed or 1 c. bread crumbs, plain or flavored


1 med. onion, chopped


1 med. green pepper, chopped


1/2 c. chopped celery(optional)


1 med. apple or pear, chopped


1 tsp. pepper, black or red


1 tsp. low sodium salt


Ketchup or barbecue sauce


Your favorite cheese


3 slices bacon


Place all of the ingredients in a large bowl, except for the bacon. Now, here comes to fun part. Pretend you're a little kid again and squish everything together. It fells real gooey between your fingers. After you have had enough fun place half the mixture in a small rectangular baking dish. Place the slices of cheese on to the mixture and then place the rest of the mixture on top of the cheese.


If you choose you can place the bacon on top of the meatloaf. Preheat the oven to 350 degrees. Place the mixture in the oven and bake for about 1 hour.


Remove from oven and allow to cool for a couple of minutes.
There is no such thing
1 lb /burger, 3 slices bacon chopped, 1 cup celery, 1 egg, 1/4 tsp garlic, 1 cup saltine crackers course ground, 1 cup bread crumbs ground, 1 med can tomato paste. mix all ingredients with 1/2 can of tomato paste. put in deep pan or casserole dish, put the other 1/2 can of tomato paste on top. bake 350 degrees.
1 lb ground round


1 small white onion- chopped


1 small bell pepper- chopped


1 package Lipton Onion Soup Mix


1 teaspoon garlic


1/2 teaspoon parsley


1/4 cup parmesan cheese


1/2 cup breadcrumbs


1 beaten egg


1/2 cup tomato sauce


salt and pepper








Mix above ingredients.


Put into loaf pan.


Bake for 1 hour in a preheated 350F degree oven.


Enjoy!


I put ketchup on top 15 minutes before I take it out of the oven.


I only add the chopped onion and bell pepper to half of the meatloaf. My husband and I are the only ones that like it.
1lb lean ground chuck


1lb Italian sausage mild or spicy


4 eggs


Italian bread crumbs ( start with about a 1c add more if necessary)


3 tsp ketchup


6 cloves crushed garlic


1 tsp dry mustard


2 shallots finely chopped


1/2 a cup fresh basil leaves chiffon-ed


1 tsp crushed red pepper flakes


salt and pepper to taste





Combine all ingredients in bowl and mix with hands until all ingredients are combined. Shape into a loaf and bake in a 325 degree oven for 1 hour.





Optional glaze as follows:





1/2 c mustard


1/2 c brown sugar


1 tsp apple cider vinegar





Mix all ingredients well. Brush on meatloaf during the last 15 minutes of cooking, Enjoy
Easiest: Envelope of onion soup/dip mix; an egg, 1/2 C water, 1 lb. ground beef; breadcrumbs till it forms but isn't dry; bake it; put slices of mozzalla cheese, then slices of tomatoes topped with parmesean cheese. Looks fancy but its not.
I make it different every time.sometimes I mix in brown gravy mix %26amp; fine diced onion.Then serve it with gravy...Gets away from the tomato-wy thing.I also put in corn flakes ground to a dust with the processor,or just beat them up,or grind them with a cup while they are in a bowl.I also add an egg or 2..serve with mashed taters or rice,ya know,something for extra gravy to be on..cover with foil while cooking.then uncover in last 15 minutes...bake about 350 or 400 till done....I use thermometers or just look at it...ok,just saw the ketchup thing...try garlic bbq sauce,onions,chunk tomatos on top.Still do the corn flakes thing.a little extra nutrition...hope I helped a little
2 lbs ground beef( or 1 1/2 beef and 1/2 pork)


Package of Lipton Onion soup mix


1/2 cup of Ketchup


2 Eggs


1 Green pepper(diced) Optional


1 Cup of Seasoned Bread crumbs





Mix all ingredients together and use either a Rectangular pan and form it like a football in the middle. Or use a Loaf Pan.








Cook @350 for approx 1 and a half hours.





10 minutes before it is finished Cover with tomato sauce or Ketchup and put back in the oven to heat sauce.
