Is there a meatloaf recipe with lots of flavor and not dry?

Does anyone have a really good meatloaf recipe that has flavor (not bland) and is not dry that you would like to share?

Best-Ever Meat Loaf


* 2 eggs


* 2/3 cup milk


* 3 slices bread, torn


* 1/2 cup chopped onion


* 1/2 cup grated carrot


* 1 cup shredded Cheddar or mozzarella cheese


* 1 tablespoon minced fresh parsley


* 1 teaspoon dried basil, thyme or sage (optional)


* 1 teaspoon salt


* 1/4 teaspoon pepper


* 1 1/2 pounds lean ground beef


* TOPPING:


* 1/2 cup tomato sauce


* 1/2 cup packed brown sugar


* 1 teaspoon prepared mustard


1. In a large bowl, beat eggs. Add milk and bread; let stand until liquid is absorbed. Stir in the onion, carrot, cheese and seasonings. Crumble beef over mixture and mix well.


2. Shape into a 7-1/2-in. x 3-1/2-in. x 2-1/2-in. loaf in a shallow baking pan. Bake, uncovered, at 350 degrees F for 45 minutes.


3. Combine the topping ingredients; spoon half of the mixture over meat loaf. Bake 30 minutes longer or until meat is no longer pink and a meat thermometer reads 160 degrees F, occasionally spooning remaining topping over loaf. Let stand 10 minutes before serving.

Sunday Meat Loaf


* 1 cup stewed tomatoes, chopped


* 1 egg, beaten


* 3/4 cup quick-cooking oats


* 1 medium carrot, grated


* 1 celery rib, diced


* 2 bacon strips, cooked and crumbled


* 1 envelope onion soup mix


* 2 1/2 pounds lean ground beef


* Ketchup


1. In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well. Shape into a loaf in a greased 13-in. x 9-in. x 2-in. baking dish. Drizzle with ketchup. Bake, uncovered, at 350 degrees F for 1-1/2 hours or until meat is no longer pink and a meat thermometer reads 160 degrees F. Using two large spatulas, carefully transfer meat loaf to a serving platter.

Traditional Mashed Potatoes


* 6 medium russet potatoes, peeled and cubed


* 1/2 cup warm milk


* 1/4 cup butter or margarine


* 3/4 teaspoon salt


* Dash pepper


1. Place potatoes in a saucepan and cover with water. Cover and bring to a boil; cook for 20-25 minutes or until very tender. Drain well. Add milk, butter, salt and pepper; mash until light and fluffy.

Bacon Scalloped Potatoes


* 2 tablespoons butter


* 2 tablespoons all-purpose flour


* 1/4 teaspoon salt


* 3/4 cup milk


* 2 medium potatoes, peeled and sliced


* 2 small onions, sliced


* 3 bacon strips, cooked and crumbled


1. In a saucepan, melt butter. Stir in flour and salt until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened.


2. In a greased 1-qt. baking dish, layer the potatoes and onions. Pour white sauce over the top. Cover and bake at 350 degrees F for 65-75 minutes or until potatoes are tender. Sprinkle with bacon.

Preheat oven to about 350-375, making sure rack is in the middle.





Using two or three lbs of ground meat(I cook so there is leftovers for meatloaf sammiches), in a large bowl, crack two large eggs, measure out about 1/2 a cup of ketchup or bbq sauce, 1 large diced onion(optional),1 tbsp garlic powder, 1/4 tsp ground black pepper, 1/2 tbsp dry sweet basil, 1 tsp ground cumin, 1 tsp ground chilli powder, and for a kick, 1/2 tsp ground chipoltle powder. 1/4 cup of sugar. Add in about 1.5 cups of crushed crackers or oatmeal to soak up wet ingredients. Mix together well with CLEAN hands(duh. Like you didn't know that.) And shape into a loaf. You may want to spray your pan w/ non-stick spray,because of the ketchup and sugar.


When the meat loaf is about half way cooked, in a small sauce pan, put together a glaze with 1 cup of ketchup, 1/4 cup of honey, 1/4 cup brown sugar, 3 tbsp cayenne pepper sauce. Cook and stir until it comes to a boil, and then distribute evenly as possible over the meat loaf.

Meatloaf Muffins





鈥?1/4 cup(s) brown sugar


鈥?1/4 cup(s) yellow mustard


鈥?1/4 cup(s) ketchup, low sod.


鈥?3 slice(s) white bread, torn


鈥?3/4 cup(s) milk


鈥?2 medium egg(s), beaten lightly


鈥?2 lb ground beef


鈥?1/2 cup(s) yellow onion, finely chopped


鈥?2 tbsp Worcestershire sauce


鈥?1 tbsp garlic, minced





1. Preheat oven to 400 degrees. Combine brown sugar, mustard, and ketchup and set aside. (This is your topping sauce.)


2. Combine bread, milk and eggs in a large bowl and mash it.


3. Add remaining ingredients and mix until blended. Season with salt and pepper. Spoon mixture into muffin tin lightly coated with cooking spray(approx 1/2 cup portions).


4. Spoon 1 teaspoon of topping mixture on top of each meatloaf muffin.


5. Cook 25-30 minutes or until done.
when i make meatloaf i put just about everything but the kitchen sink in it, all kinds of spices,ketchup, steak sauce, etc. just let your mind go wild( you could come up with a real winner). Good luck!
My basic recipe is for every 1lb ground meat you need:


1 egg





1/3 cup liquid





1Tb liquid (the 1Tb typically being stronger flavors than the base liquid, ie mustard, Worcestershire sauce etc)





1/3 cup finely chopped vegetables(onion, celery, carrots etc. Salsa is really good)





1/3 cup binder (bread crumbs, cracker crumbs, stuffing mix etc)





1/2 tsp salt





1/2 tsp pepper





Directions:


Soak the binder in the liquid for 10-15 min. Add everything except the ground meat and mix well. Add meat and mix well.





Instead of baking mine in a loaf pan I like to bake it in 9in square baking dish (using a double recipe of the above)








You can leave the top alone, but traditionally it is topped with ketchup. Some use bacon. I usually use a combination of the liquids that went into the meatloaf.





Bake 375 degrees F for about 45-50 min or until top and sides are well browned and it has shrunk away from the sides of the pan.

some fun combinations are


Bread crumbs,spicy V-8 Juice, Worcestershire sauce, hot sauce and salsa


Top with salsa for the lst 15 min of cooking.

I recently made my first attempt at a meatloaf and this is what I did. Four out of the five people in my house loved it and we had very little leftovers. My only recommendation is doubling the sauce and only pouring half of it over the meatloaf before baking. Then you can heat up the other half and people can use it if they would like (my husband is a sauce lover)








1 1/2 lbs lean ground beef


1 cup cracker crumbs crushed


1 packet of Lipton onion soup mix


1 egg


1 1/2 teaspoon salt


1/4 teaspoon lemon pepper


6 tablespoon ketchup


1/2 cup of milk


mix and make a log .


put on cooking tray ( I use a 13x9 pyrex dish)





Sauce for the top


4 tablespoon brown sugar


2 tablespoon worcestershire sauce


1/2 cup ketchup


pour over meatloaf





cover and bake at 350 for 1 hour.
I just use a can of tomatoes and chilies, not drained with the hamburger and an egg and my meatloaf comes out moist and perfect everytime.
MIX YOUR GROUND BEEF (1 POUND) WITH ONE EGG, I CAN OF DICED TOMATOES (LIQUID AND ALL), 1 CUP OF ITALIAN BREAD CRUMBS AND 1 CHOPPED ONION. SALT AND PEPPER TO TASTE. MIX WELL TO DISTRIBUTE ALL THE INGREDIENTS IN THE HAMBURGER MEAT.





FORM THIS IS A LOAF AND PLACE IN A BAKING DISH.





FOR THE TOPPING MIX BROWN SUGAR, KETCHUP AND MUSTARD. POUR OVER THE TOP HALFWAY THROUGH COOKING.





BAKE @ 375 FOR ABOUT 45 MINUTES TO AN HOUR DEPENDING ON HOW MUCH HAMBURGER MEAT YOU USE.
I use 1 pound of ground deer or Ground chuck


1 lb of sausage


1/2 onion chopped


1/2 package of crackers crushed


2 eggs


about 1 cup of ketchup with brown sugar mixed in. Use 3/4 in the mixture and reserve some for the top to glaze. You can add more ketchup mixture if it seems not moist enough. Bake at 350 for about an hour and 1/2. I bake it in an oval shaped casserole dish. My family loves it. I've also finely diced potatoes and carrots and thrown in there too. It adds moisture and flavor.
If you cook it in a crock pot instead of the oven it wont be dry

Rempel Family Meatloaf --











INGREDIENTS


1 1/2 pounds lean ground beef


1/2 cup crushed buttery round crackers (cheese flavored ritz)


3/4 cup shredded Cheddar cheese


1 (1 ounce) package dry onion soup mix (using the onions only)


2 eggs, beaten


1/4 cup ketchup


2 tablespoons steak sauce











DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C).





Stir the ground beef, crushed crackers, Cheddar cheese, and onion soup mix in a large bowl until well combined. Whisk the eggs, ketchup, and steak sauce in a separate bowl until smooth. Mix the eggs into the meat until evenly combined, if the mixture seems too dry, add a little water. Press into a 9x5 inch loaf pan.





Bake in preheated oven until the meatloaf reaches 160 degrees F (71 degrees C) and is no longer pink in the center, 45 to 60 minutes.

Guy Approved Meatloaf --











INGREDIENTS


1 1/2 pounds ground beef


2 eggs


1 onion, chopped


1/2 cup barbecue sauce


3/4 cup crushed crackers


1 cup crushed potato chips


3/4 teaspoon liquid smoke flavoring


3/4 teaspoon ground black pepper


1 teaspoon salt


1/2 teaspoon garlic powder


1 pinch cayenne pepper


6 slices bacon











DIRECTIONS


Preheat oven to 375 degrees F (190 degrees C).





In a large bowl, combine the beef, eggs, onion, barbecue sauce, cracker crumbs, potato chips, liquid smoke, ground black pepper, salt, garlic powder and cayenne pepper and mix well.





On a lightly greased cookie sheet, shape the mixture into a loaf. Lay the bacon slices across the width of the loaf so that the entire surface is covered. Cover the loaf loosely with foil.





Bake at 375 degrees F (190 degrees C) for 1 1/2 hours.
