Meatloaf Recipes anyone?

Wondering if anyone has some good meatloaf recipes to share? Thanks a bunch!!!Meatloaf Recipes anyone?
1 1/2 pounds ground beef


1 egg


1 onion, chopped


1 cup milk


1 cup dried bread crumbs


salt and pepper to taste


2 tablespoons brown sugar


2 tablespoons prepared mustard


1/3 cup ketchup





Preheat oven to 350 degrees F (175 degrees C).


In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish.


In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.


Bake at 350 degrees F (175 degrees C) for 1 hour.

1 egg


3/4 cup milk


1 cup (4 ounces) shredded cheddar cheese


1/2 cup quick-cooking oats

1 teaspoon salt


1 pound lean ground beef


2/3 cup ketchup


1/2 cup packed brown sugar


1-1/2 teaspoons prepared mustard





SERVINGS 8





DIRECTIONS


In a bowl, beat the egg and milk. Stir in cheese, oats, onion and salt. Add beef and mix well. Shape into eight loaves; place in a greased 13-in. x 9-in. x 2-in. baking dish. Combine ketchup, brown sugar and mustard; spoon over loaves.





Bake, uncovered, at 350掳 for 45 minutes or until the meat is no longer pink and a meat thermometer reads 160掳.

Barbecue Meat Loaf





Serves/Makes: 8





1 1/2 pound ground beef


1 cup bread crumbs


OR


1 cup oatmeal


1 chopped onion


1 egg


1 1/2 teaspoon salt

Mix all ingredients and shape into loaf. Pour extra sauce on top. Bake at 350 degrees for 1 hour and 15 minutes.

Ingredients:


Meatloaf


1 cup Pace庐 Picante Sauce


1 1/2 lb. ground beef


1 cup fresh bread crumbs


1 egg, beaten


2 tbsp. chopped fresh parsley OR 2 tsp. dried parsley flakes


1 tbsp. Worcestershire sauce


2 cloves garlic, minced OR 录 tsp. garlic powder





Potatoes


录 tsp. garlic powder


2 tbsp. vegetable oil


4 medium potatoes (about 1 1/4 lb.), each cut into 8 wedges


Paprika





Directions:





MIX thoroughly 1/2 cup picante sauce, beef, bread crumbs, egg, parsley, Worcestershire and garlic. Shape firmly into 8';x4'; loaf in baking pan.





MIX oil and garlic powder. Toss potatoes with oil mixture until evenly coated. Sprinkle with paprika. Arrange potatoes around meat loaf.





BAKE at 350掳F. for 1 hr. or until meat loaf is done. Pour remaining picante sauce over meat loaf before serving.

Mighty Meaty Meatloaf

2 tablespoons vegetable oil


1 cup chopped yellow onion


1/2 cup chopped celery


1/2 cup chopped green bell pepper


1 tablespoon minced garlic


1 1/2 teaspoons salt


1/2 teaspoon dried basil


1/2 teaspoon dried thyme


1/2 teaspoon ground black pepper


1 1/2 pounds ground beef


1/2 pound ground pork


1/2 pound ground veal


2 eggs


1/2 cup heavy cream


1/4 cup ketchup


2 teaspoons Baby Bam, recipe follows


1 1/2 teaspoons Dijon mustard


1 teaspoon Worcestershire sauce


2/3 cup fine dried bread crumbs





Glaze:


1/2 cup ketchup


2 tablespoons light brown sugar


1 teaspoon Worcestershire sauce


1/4 teaspoon Emeril's Hot Sauce or other red hot sauce, optional





Position rack in center of oven and preheat the oven to 350 degrees F.





Heat the vegetable oil in a skillet over medium heat. Add the onion, celery, bell pepper, garlic, salt, basil, thyme, and black pepper. Cook, stirring, until the onions are soft and lightly golden, about 6 minutes. Remove from the heat and set aside to cool.





In a large mixing bowl, combine the ground beef, pork, and veal with a wooden spoon or with clean hands. Be sure to wash up afterward.





In a medium mixing bowl, combine the eggs, heavy cream, ketchup, Baby Bam, Dijon mustard, and Worcestershire sauce, and whisk to combine. Add the egg mixture to the meat mixture along with the cooled vegetables and bread crumbs. Mix with your hands or a wooden spoon until thoroughly combined.





Transfer the mixture to a 9 by 5 by 3-inch loaf pan. Using your fingers or the back of the wooden spoon, smooth the top into a rounded loaf shape.





To make the glaze, combine the ketchup, brown sugar, Worcestershire, and hot sauce, if desired, in a small bowl. Stir to blend. Spread the mixture evenly over the top of the meatloaf. Bake the meatloaf for 1 hour and 15 minutes.





Using oven mitts or pot holders, carefully tilt the pan away from you and drain off the excess grease from the pan. Slice to serve.





Baby Bam:


3 tablespoons paprika


2 tablespoons salt


2 tablespoons dried parsley


2 teaspoons onion powder


2 teaspoons garlic powder


1 teaspoon ground black pepper


1 teaspoon dried oregano


1 teaspoon dried basil


1 teaspoon dried thyme


1/2 teaspoon celery salt





Place all the ingredients in a mixing bowl. Stir well to combine, using a wooden spoon.


Store in an airtight container for up to 3 months.


Yield: about 3/4 cup



Here is my favorite everyday kind of meatloaf recipe





1 1/2 pounds lean ground beef


1 cup tomato juice or tomato sauce


3/4 cup Quaker庐 Oats (Quick or Old Fashioned, uncooked)


1 egg, lightly beaten


1/4 cup chopped onion


1/4 teaspoon salt (optional)


1/4 teaspoon black pepper





DIRECTIONS


Heat oven to 350 degrees F. In large bowl, combine all ingredients, mixing lightly but thoroughly. Press into 8 x 4-inch loaf pan.


Bake 1 hour to medium (160 degrees F) doneness until not pink in center and juices show no pink color. Let stand 5 minutes; drain off any juices before slicing.





BUT if you want to impress people, serve this one from Rachel Ray's kitchen





Sicilian Meatloaf Roll





1 1/2 pounds ground beef, pork and veal mix from the butcher's counter (meatloaf mix) (I USE 1/2 beef and 1/2 pork)


Salt and pepper


1/2 cup Italian bread crumbs


1 egg


2 cloves garlic, minced


1/4 small white onion, grated


2 tablespoons golden or dark raisins, chopped


3 tablespoons pine nuts, chopped


3 tablespoons grated cheese, Parmigiano or Romano


2 tablespoons chopped flat-leaf parsley


1 cup arugula leaves or baby spinach


6 slices prosciutto di Parma


6 slices deli sliced provolone


Extra-virgin olive oil, for drizzling





Mix meat and next 10 ingredients as if you were making meatloaf. Flatten meat out on a waxed paper lined cookie sheet into a thin layer: 1/2-inch thick, 12 inches long by 6 to 8 inches wide. Cover meat with arugula or spinach, prosciutto and cheese then roll the meat, using the waxed paper to help roll up into a large log, , working across the 6 to 8-inch side, resulting in a 12-inch long log. Drizzle the log with extra-virgin olive oil to coat lightly.





Bake at 450 for 20 minutes. DO NOT OVER BAKE. It will look a little pink but that is from the prosciutto. Serve with pasta and marinara sauce.

Moms Sweet %26amp; Sour Meatloaf





Sauce:


2 small cans tomato sauce


1/4 cup Worcestershire sauce


1/2 onion chopped


1 tablespoon dried parsley


1/2 cup brown sugar





Mix all sauce ingredients together in bowl, set aside.








Ingredients (Meatloaf):


2 pounds ground beef


1/2 chopped onion


1 egg, beaten


1/2 cup or more if needed, quick oatmeal (not instant)


1 teaspoon garlic salt





In another bowl add ground beef, 1/2 chopped onion, egg, oatmeal, garlic salt, pepper, and 1/3 of the sauce mixture. Mix together well.





Place in pan, making space between meat and pan around edges with fingers. Flatten top, spread more sauce over top and cook 1 hour, at 350F. Drain off grease half way (30 min) and add more sauce. Reserve some sauce for adding when served. The oatmeal disappears, is healthy and you can't taste it. It just holds it together better. Add more if you need it.

I have to make meatloaf tomorrow. Have about 4 lbs. of regular ol' ground beef, and we make meatloaf in large batches, then freeze extras. I am SO tired of the usual, which is so dull I can't even describe it. Please help! I have pretty much anything you could imagine to add to it.What's your favorite meatloaf recipe?
What about Cheeseburger meatloaf.. I have made this for my husband before and he fell in love with it.





1 pound ground beef


1 teaspoon House Seasoning (garlic powder, black pepper, and salt mix)


1 medium onion, chopped


1 medium bell pepper, chopped


1 cup grated Cheddar


2 tablespoons Worcestershire sauce


1/2 cup sour cream


1 cup crushed crackers (recommended: Ritz)


1 teaspoon seasoned salt (recommended: Lawry's)


2 slices white bread


Sauce, recipe follows





Preheat oven to 350 degrees F.


Mix all ingredients together, except the bread slices and Sauce. Shape into a loaf. Line a 1 1/2-quart loaf pan with the bread slices. Place meatloaf on top. Bake loaf for 45 minutes. The bread absorbs the grease and should be discarded after loaf is removed from oven.








Sauce:


1 (10 3/4-ounce) can condensed cream of mushroom soup


1 cup milk


1 1/2 cups grated Cheddar


Chopped onions, optional


1 bunch fresh parsley leaves, chopped, optional


Heat the soup and milk over medium heat; add the cheese. Add the chopped onions and parsley to the sauce, if desired. Pour Sauce over the meatloaf or pass at the table.

3 whole cloves garlic


1/2 red bell pepper


18 ounces ground chuck


18 ounces ground sirloin


1 1/2 teaspoon kosher salt


1 egg


For the glaze:


1/2 cup catsup


1 teaspoon ground cumin


Dash Worcestershire sauce


Dash hot pepper sauce


1 tablespoon honey





Heat oven to 325 degrees F.


In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.





Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.





Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.

This is very labor intensive. I usually triple the batch and freeze it as it freezes well. Darn this is GOOD stuff! I use both the pork and beef as suggested.

SEASONING MIX


2 whole bay leaves


1 teaspoon salt


1 teaspoon ground cayenne pepper


1 teaspoon black pepper


1/2 teaspoon white pepper


1/2 teaspoon ground cumin


1/2 teaspoon ground nutmeg





MAIN INGREDIENTS


4 tablespoons unsalted butter


3/4 cup finely chopped onions


1/2 cup red or green bell peppers (or a mixture), chopped


1/4 cup green onions, finely chopped


2 teaspoons minced garlic


1 tablespoon Tabasco sauce


1 tablespoon Worcestershire sauce


1/2 cup half-and-half or evaporated milk


1/2 cup catsup


1 1/2 pounds ground beef


1/2 pound ground pork


2 eggs -- lightly beaten


1 cup very fine bread crumbs





Combine the seasoning mix ingredients in a small bowl and set aside. Melt the butter in a 1-quart saucepan over medium heat. Add the onions, celery, bell peppers, green onions, garlic, Tabasco, Worcestershire and seasoning mix. Saute until mixture starts sticking excessively, about 6 minutes, stirring occasionally and scraping the pan bottom well. Stir in the milk and catsup. Continue cooking for about 2 minutes, stirring occasionally. Remove from heat and allow mixture to cool to room temperature.





Place the ground beef and pork in an ungreased 13x9-inch baking pan. Add the eggs, the cooked vegetable mixture and the breadcrumbs, remove the bay leaves. Mix by hand until thoroughly combined. In the center of the pan, shape the mixture into a loaf that is about 1-1/2 inches high, 6 inches wide and 12 inches long. Bake uncovered at 350F for 25 minutes, then raise heat to 400F and continue cooking until done, about 35 minutes longer.





This is best using both ground pork and ground beef, as the pork gives more flavor diversity. However, you can make it with ground beef only.
Preparation of the meat should be a day in advance.





I make a free form meatloaf (not in a pan) first take two onions and saut茅 them along with a clove or so of garlic, also a green pepper and carrots are nice and shallots work well too. Season everything as you go with salt, pepper. Take a can of Italian chopped tomatoes and add. If you want a smokey flavor get a few strips of bacon going in your saut茅. Put everything in a blender and pulse just a little. This mixture should be the consistency of thick apple sauce; it is all flavor enhancers to the meat. More seasoning that works here and can be added to your taste, parsley, thyme, onion powder, garlic powder and sage. Let cool down ~ this part can even be done two days early.





Take your favorite ground meats selections of beef, turkey, and pork, the proportions should be 3 beef to the other 1 of your choice. I usually like to make a 3-4 lbs meatloaf





Mix the meat with the saut茅 vegetables at least a day before you bake your meatloaf.





Mix in with your meatloaf mixture the following other ingredients. 2 eggs, 1 cup of oatmeal put in to food processor to make finer, quarter cup of Italian breadcrumbs, 3 tablespoons of butter chopped in to tine pieces or mixed through with a fork, salt %26amp; pepper and a half cup of ketchup. Mix together with meat and let the harmony begin.





Form on a baking sheet line with parchment paper lightly greased a top of foil that is crimped to keep the juices from burning on hot pan.





A top your meatloaf you will need a ketchup mixture of 3/4 cup ketchup, half cup tomatoe paste, 3 tablespoons brown sugar, a few dashes of Worchester sauce, pepper %26amp; salt, garlic powder, pinch of cumin and some a couple squirts of maple syrup mix together and generously apply.





Cook thoroughly! Start your oven at about 425 to form a nice crust about twenty min. but do not burn your ketchup, bring down to 350 and cook for at least an hour.





Check for doneness but do not slice into.





Let rest to give the juices a chance to thicken through.


Serve with mash potatoes and vegetables.

Combine all ingredients in a bowl; pack into a meatloaf pan or large (9x5x3-inch) loaf pan. Bake at 350掳 for about 1 hour and 15 minutes. Let rest a few minutes before slicing.
Its not my really my favorite, but it is a meat loaf recipe. Hope you like it.

My recipe is for one loaf:





I lb ground beef (I use plain lean)


1/2 green bell pepper (very finly chopped because i don't like chuncks, but it gives good flavor)


1 medium onion chopped


About 2 cups Hienz ketchup


I 1/2 package Ritz crackers (crumbled, but not into powder -- and I mean the packages within the box, not a whole box, haha.)


Season Salt


pepper


Garlic Powder


Salt (but not too much because of the Season Salt)


1/4 cup Worchest. Sauce (I can't spell it :-))


1 egg





I mash it all together real good and get everything covered.





Then I make a topping that I pour on top of the meatloaf (once it is in the pan, but before actually cooking):





1 Tbs Worch. Sauce


1 Tbs Honey


2 Tbs ketchup


Mix it all together.





Then with the meatloaf in the pan, the topping on it, bake it about 1 hour at 375.

I use





- 1 lb. of the leanest ground beef I can find (recently I've been finding 97/100).


- pack of lipton onion soup mix


- salt


- pepper


- 1 egg


- worcestershire sauce


- adobo seasoning


- little bit of bbq sauce





Preheat oven to 350 and combine ingredients. It's easiest to mush it all together with your hands. I spray deep muffin pans with Pam and form individual meatloaf muffins. Once all your cups are filled spread a little extra bbq sauce on top and cook it in the oven for about 30 min. Since they're individual muffins instead of one large loaf it cooks faster and the juices stay sealed because of it being in a little space.

I use the one on the box of oatmeal and that is pretty darn good. My son-in-law uses that recipe too but he uses crushed potato chips instead of oatmeal and that is really good too.


Any veg goes well but you gotta have mashed and gravy to go with meatloaf. I think its the law......LOL

    1 pound ground round


    1 medium onion, diced small


    1.5 cups italian bread crumbs


    1 egg


    1 half a can of tomato paste, reserve the rest


    salt and pepper


    pinch of garlic powder





    2 cans tomato soup plus 2 cans water





    Mix first 8 ingredients. Form a loaf and place in a small roating pan. Cover the loaf with remaining paste. Mix the soups and water and pour over.





    Bake at 350 for 30 minutes, then 250 for about 45, this will make it nice and tender.





    The soup will make a gravy to add over the mashed potatos you have to serve with this.

    Creole Meatloaf





    Ingredients:


    1 1/2 lb Lean ground beef


    1/2 c Cooked white rice


    1/2 c Chopped onion


    1/2 c Chopped bell pepper


    1 ts Salt


    1/2 ts Crushed thyme (to taste)


    1 Egg


    2 cn Tomato sauce (8 oz size)


    1 tb Cooking oil


    1/2 c Chopped celery


    1 tb Finely chopped parsley





    Prep. Time:


    Preheat oven to 350 degrees. In a large bowl mix ground beef, rice, onion, bell pepper, salt, thyme and eggs. Add 1/2 8-oz can tomato sauce. Blend and shape into loaf; place in shallow pan. Bake one hour, pour off fat.


    Meanwhile, in a medium saucepan, heat oil and cook sauce over medium heat until tender. Stir in remaining 1 1/2 cans tomato sauce and add parsley. Simmer over low heat while meatloaf is cooking. After pouring off the fat from the meatloaf, top with tomato sauce mixture. Return to oven and cook 10 minutes more.

    Great Meatloaf





    1 lb. ground beef


    1 egg


    chopped or minced onion


    chopped or minced garlic


    salt


    pepper


    quick oatmeal


    Heinz 57 Sauce





    Mix all ingredients with your hands. Add more or less oatmeal, depending on the consistancy. Place in a loaf pan or casarole dish and bake at 325 degrees for about an hour. I usually have baked potatoes with mine. Might as well, since the ovens hot!

    Everyone that has tried this meatloaf loves it. I use oats, but you can probably use crackers instead.





    I don't measure my ingredients. I just get a pound of ground beef and put in a large mixing bowl, sprinkle with salt, pepper, and seasoning salt. I then add a fair amount of ketchup.


    Dice up 1/2 or 1 whole green bell pepper, red bell pepper, and onion (depending on how much you like). Add these to the meat mixture and add oats (or crackers in your case).


    I do not make a loaf, I shape the meat with my hands into individual ';mounds'; and place in a glass baking dish. Bake at 450 for about 50-60 minutes.





    I make this meal with garlic mashed potatoes (I used red potatoes and leave the skins on). Sorry I could not provide more specific measurements, hope this helps!

    Preheat oven to 450 degrees F.


    Put ground beef into a big bowl. Put onion and celery into a food processor. Cut the bell pepper in half, rip out the seeds and throw them into your garbage bowl. Cut the pepper into a few pieces and add to the food processor. Pulse the processor blades to finely chop the vegetables into very small pieces then add them to the meat bowl. Add egg, beaten with milk, bread crumbs and grill seasoning to the bowl. Next, mix together the smoky barbecue sauce, the salsa and the Worcestershire sauce. Pour half the sauce mixture into the bowl with the meatloaf mix. Mix the meatloaf together with your hands. Wash up. Brush a 12-muffin tin (1/2-cup each) with vegetable oil or extra-virgin olive oil. Use an ice cream scoop to help you fill meat into a each tin. Top each meat loaf with a spoonful of extra sauce. Bake about 20 minutes. Cut open 1 muffin to test that the middle is cooked through.     Smashed Potatoes and Cream Cheese:


    2 1/2 pounds small red potatoes or baby Yukon gold potatoes


    1/2 cup half-and-half or whole milk


    8 ounces plain cream cheese or veggie cream cheese, cut into pieces


    10 chives or 2 scallions, chopped or snipped with kitchen scissors


    Salt and pepper


    Boil potatoes until tender, 15 minutes. While the water boils and when the potatoes are cooking, you can be working on the meatloaf recipe.





    When the potatoes are tender, drain them and return them to the hot pot to let them dry out a bit. Mash potatoes with half-and-half or milk using a potato masher.     I take fresh green beans and clean them. Then I heat up olive oil saute some diced onion and mushrooms until it just starts to turn golden brown. Then I add garlic and green beans ...add a touch of soy sauce and toss in green beans and saute until crisp tender...about 10 minutes.

    Saute onion in olive oil until onion is just starting to turn golden brown...add garlic and basil ..stir for about 2 minutes. Add green beans (if you use canned use two cans and drain them) and then one can of diced tomatoes. Cook til heated through.     Creamy Macaroni and Cheese

    2 cups uncooked elbow macaroni (an 8-ounce box isn't quite 2 cups)


    4 tablespoons (1/2 stuck) butter, cut into pieces


    2 1/2 cups (about 10 ounces) grated sharp Cheddar cheese


    3 eggs, beaten


    1/2 cup sour cream


    1 (10 3/4-ounce) can condensed Cheddar cheese soup


    1/2 teaspoon salt


    1 cup whole milk


    1/2 teaspoon dry mustard


    1/2 teaspoon black pepper





    Boil the macaroni in a 2 quart saucepan in plenty of water until tender, about 7 minutes. Drain. In a medium saucepan, mix butter and cheese. Stir until the cheese melts. In a slow cooker, combine cheese/butter mixture and add the eggs, sour cream, soup, salt, milk, mustard and pepper and stir well. Then add drained macaroni and stir again. Set the slow cooker on low setting and cook for 3 hours, stirring occasionally.

    I love little boiled red potatoes. Gently boil until almost done, drain hold a clean kitchen towel in one hand, place a potato in the towel and gently press to flatten slightly. (Don't smoosh just flatten until they split a little ). Continue to do this to all the potatoes. Season with some salt and pepper. Heat some olive oil in a non stick fry pan, add some garlic if you wish, place the potatoes in the pan and fry until golden turn each potato once.

    If you have some nice ripe tomatoes just slice and serve with some olive oil and some balsamic vinegar drizzled over them, sprinkle a little parm cheese..

    HEAVENLY TWICE BAKED POTATOES





    1 small yellow onion diced


    olive oil


    5 baking potatoes


    3/4c milk


    2tbsp. butter


    1 tsp pepper


    4oz(1/2 bag) kraft shredded cheddar cheese





    Pre-heat oven to 350 place baking potatoes directly on oven rack and bake for 1hour 20minutes.


    Meanwhile, cover the bottom of a skillet or frying pan with olive oil add onions to oil and sautee until tender (About 5 minutes) Remove onions from heat; drain excess oil. Add onions to medium mixing bowl.





    When potatoes are done, take out of the oven and cut the top 1/4 off of each potato (the long way) Scoop potato out of the shell and into mixing bowl with the onions. Add milk, butter, and pepper to mixture. With mixer, combine ingredients until well blended. Add cheese and mix with spoon.





    Place potato mixture into a medium sized plastic bag. Twist bag (bag should appear as a pastry bag) with scissors, clip the corner off the end of the bag. Squeeze the potato into each shell. place on cookie sheet and bake another 20 minutes, or until cheese is melted and light brown crust forms on top of potatoes.

    i usually cook french cut green beans with garlic and almonds.





    1 package (equivalent to 1 can) french cut green beans


    about 1 garlic clove, minced


    1-2 tablespoons butter


    1/3 cup slivered almonds





    also, sometimes i make potatoes, just diced into cubes and seasoned. I pan fry them with olive oil on medium heat, covered so they get soft and cook

    3/4 c. evaporated milk


    5T butter


    1 1/4 t. salt


    3 1/4 c. instant potatoes

    1 teaspoon black pepper

    for the cheese sauce


    1 (10 ounce) can cream of mushroom soup


    1 cup milk (or 1/2 milk and 1/2 whipping cream)


    1 1/2 cups shredded cheddar cheese


    green onion, chopped (optional)


    fresh parsley, chopped (optional)


    Directions


    1Preheat oven to 350'.


    2Grease a deep dish meatloaf pan with pam.


    3Place 2 slices of bread on bottom of dish (this will catch the grease from the meatloaf).


    4Mix together, ground beef,house seasoning,chopped onion and green pepper,1c shredded cheese, worcestershire sauce,sour cream,ritz crackers and black pepper.


    5Place in meatloaf dish and bake 45 minutes.


    6Discard bread pieces after baking. Place meatloaf on a large plate.


    7For the cheese sauce --.


    8Place soup, milk (whipping cream if using)in a sauce pan and heat on medium heat.


    9Add 1 1/2c. cheddar cheese and stir to combine.


    10When cheese is melted add, green onion and parsley if desired.

    2 lbs. ground chuck


    1 lb. ground pork


    1 1/2 cups tomato puree


    Olive oil as needed


    8 oz. diced onion


    2 oz. minced garlic


    8 oz. sliced mushrooms


    4 eggs


    8 oz. breadcrumbs


    2 1/2 tbsp. salt and pepper mix or salt and pepper individually to taste





    In a skillet over medium heat, saute the onions, garlic and mushrooms until soft. Remove from heat.


    Place ground chuck and pork in a mixer bowl with paddle attachment. On low speed, add vegetable mixture, tomato puree and eggs. When liquids are incorporated add breadcrumbs and salt and pepper mix. Run machine until mixture comes completely together.


    Place mixture into greased loaf pans, filling halfway. Bake in preheated 350-degree oven for about 35 minutes to an internal temperature of 150 to 160 degrees. Let cool slightly and remove meatloaves from pans. Slice to serve.

    For every 1lb of lean ground meat use:





    1 egg


    1/3 cup liquid (milk, broth, V-8 juice etc)


    1/3 cup starchy filler (cooked rice, bread crumbs, cracker crumbs etc)


    1/3 cup chopped vegetables (drained salsa, chopped celery, onions etc)


    3/4 tsp salt


    1/4 tsp pepper








    So a mexican meatloaf could be


    2lb ground beef


    2 eggs


    2/3 cup spicy V-8


    2/3 cup drained salsa (can drain liquid into cup before adding V-8 and top off with V-8)


    2/3 cup tortilla chip crumbs





    Soak crumbs in V-8 add beaten egg and salsa. gently mix in meat. Top with pepper jack cheese the last 5 min of baking.

    Ingredients:





    * 1 lb ground chuck


    * 10 slices bacon, cooked and crumbled


    * 1 (8 ounce) package sharp Cheddar, grated

    * 1/4 cup mayonnaise


    * 1 tablespoon Worcestershire sauce

    Combine all ingredients and mix well.


    Line a sheet of waxed paper with 6-8 slices of bacon, slightly overlapping. Place meat mixture on top and spread to cover. Top with grated Old cheddar cheese leaving a 1 inch border around edges. Roll up starting with side that has bacon ends, being sure to pull waxed paper out as you roll. Place on baking sheet with high sides or in centre of 9x13 baking dish. Pinch ends to seal in cheese well or it will all ooze out during cooking.

    2 pounds ground chuck


    1/2 teaspoon garlic powder or salt or 2 chopped cloves garlic


    1 envelope Liptons onion soup - instead just some othe soup mix


    1 teaspoon oregano

    1 cup Parmesan cheese (you can use the kind that is dried in the shaker can)


    a few fennel seeds if you have them


    Salt %26amp; Pepper


    2 eggs


    3/4 cup bread crumbs or cracker crumbs soaked in 2 eggs and half a cup of milk or water or stock.


    1/2 cup tomatoe sauce or ready made spaghetti sauce.





    Mix with hands put in a loaf pan or form a loaf on a baking sheet. Use foil to catch the drippings.





    Cook on low heat about 300 degrees for about an hour and 15 minutes or cook at 325 for about an hour.





    At the end of the cooking about 10 minutes before removing the meatloaf from the oven cover it in 1/2 cup tomato sauce or spaghetti sauce.

    1 16 oz can diced tomatoes


    1 large sweet onion, chopped


    4 slices bacon


    1 1/2 cups Italian breadcrumbs


    1/4 cup grated Parmesan cheese


    2 tablespoons minced or pressed garlic


    1/2 teaspoon basil


    1/3 teaspoon oregano


    1/3 cup chopped fresh parsley (do not substitute)


    1 teaspoon seasoned salt or beef bouillon powder


    2 eggs


    1/3 teaspoon ground black pepper


    1/3 cup ketchup (or more as needed)


    onion and garlic powder to taste





    Preheat oven to 375掳F.


    In a large bowl, combine meat, eggs, seasonings and remaining ingredients except ketchup and bacon, adding breadcrumbs to mixture last. If meat is low in fat, add up to 1 tablespoon olive oil. Mix well.





    Press meat into a loaf shaped pan, forming a dome shape. Brush top with ketchup and sprinkle with onion and garlic powder, salt and pepper. Cover with bacon slices. Baste occasionally with additional ketchup during cooking, being careful not to allow oven to get cold or additional cooking time will be required. If desired, cover with thinly sliced onions.





    Bake uncovered 1 1/2 hours.





    Variation: Substitute your favorite barbeque sauce for basting
    Hmm, if you want a really simple recipe, but don't want it to taste good, you're out of luck. Though, there is some recipes that don't take a ton. :)

    In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.

    OLD-FASHIONED GLAZED MEATLOAF





    1 lb. lean ground beef


    1 pkg. saltine crackers, crushed fine (One ROW, not the entire box!)


    1 egg


    1 cup ketchup


    1/4 cup milk (this will keep it very moist!)


    1 tsp. Worchestershire sauce





    COMBINE: All ingredients thoroughly. (YES!! You might need to use your hands!) Form into loaf and place in loaf pan sprayed lightly with cooking oil.





    GLAZE: Combine 1/2 cup ketchup with 1/2 cup brown sugar. Stir until brown sugar dissolves and spread evenly over meatloaf.





    BAKE: Uncovered, at 350* for 50-60 minutes.





    SERVE: With Baked Potatoes and Sour Cream.

    1-1/2 pounds ground beef


    1/2 pound lean ground pork


    2 tablespoons all purpose flour


    2 cups beef stock





    Preheat oven to 375掳F. Combine first 7 ingredients and pepper to taste in a medium bowl. Stir with a fork to mix. Add ground beef and ground pork and blend well. Rinse an 8x4 inch loaf pan with cold water. Shake out excess water but do not dry. Pack meat mixture into rinsed pan. Invert and unmold meatloaf onto a lightly oiled baking sheet. Bake about 1 hour or until a meat thermometer inserted into center of loaf reads 160掳F. Let stand 5 minutes. Drain off excess fat into a small bowl. Measure out 2 tablespoons fat and discard the remainder. Cover meatloaf with foil to keep warm. Heat reserved fat in a medium saucepan over medium heat. Sprinkle in flour and cook about 2 minutes, whisking constantly, until flour is lightly browned.





    Whisk in beef stock and bring to a boil, whisking until thick and smooth. Reduce heat to medium low and simmer 5 minutes, stirring often. Season with salt and pepper to taste. Slice meatloaf and pass a sauceboat of gravy on the side. The recommended wines are: Merlot, Beaujolais, or White Zinfandel.

    3 (4 ounce) cans sliced black olives, drained


    3 cups pistachio nuts, chopped


    1 cup ketchup


    3 eggs


    1 (1.25 ounce) packet meatloaf seasoning mix


    1 pound pepper jack cheese, cubed


    1/2 cup ketchup, or as needed





    Preheat the oven to 350 degrees F (175 degrees C). Place bacon in a large deep skillet over medium-high heat. Add onions, and cook, stirring frequently, until bacon is crisp and onions are transparent. Drain off excess grease, and set aside to cool. In a large bowl, mix together the ground beef, pork sausage, bacon and onions, spinach, olives, pistachio nuts, 1 cup of ketchup, eggs, and meatloaf seasoning until well blended. Pat meat into a loaf shape, and place in a large baking pan. A roasting pan will work well. Poke cheese cubes into the top of the loaf so they are completely covered. Brush remaining ketchup generously over the top. Bake for 1 1/2 hours in the preheated oven.

    This is my own recipe for meatloaf. However, I usually use two pounds so I will cut it in half for you. :)





    Ingredients:


    1 lb raw ground beef


    1 can tomato sauce, divided in half


    1 packet onion soup mix


    1 packet meatloaf seasoning


    2 eggs


    Half a package of saltine crackers, crushed


    2 tbs steak sauce





    Directions:


    Preheat oven to 350.


    Combine all ingredients, leaving one half of the tomato sauce aside. It's best to mix these by hand to ensure a really good mix.


    Form the mixture into a loaf on a rimmed baking sheet. ( I don't use loaf pans because the grease just goes right back into the meat). Bake for 45 minutes. Pour the remaining sauce on top of the meatloaf, bake an additional ten minutes. Check for an internal temperature of 165 or more.

    1/2 lb. lean ground sirloin


    1 C. mild tomato salsa


    1/2 C. each, frozen: corn and diced green peppers


    1 t. ground cumin


    1/2 C. plain bread crumbs


    salt and freshly ground black pepper





    Preheat oven to 450掳F. Line a baking sheet with foil. Mix beef, salsa, corn, green peppers, cumin and bread crumbs together. Add salt and pepper to taste.





    Divide mixture in half and place each half on baking sheet. Shape into 2 loaves about 6 inches by 3 inches.





    Bake 20 minutes. Remove meatloaf from oven and serve.

    5 oz grated parmesan cheese

    I like to use 3/4 ground beef and 1/4 ground sausage, 1 medium chopped onion, 1tbs of parsley flakes salt %26amp; pepper. Mix together with 1 egg. If you want to jazz it up cube your favorite cheese and try to center the pieces in the middle length wise.





    Pre heat oven to 350 and cook for about 30-45 minutes depending on size. I didnt give too many exact measurements cause you can add or use less depending n how many people your feeding. Its god to get an idea I like to cook with out measurements.

    You can buy pre-cooked meatloaf at your grocery store. I'm not sure, but I think it is Hormel or Armour. One of the top brands. It is in the cold section, not in the freezer section. Ask a clerk to show you where it is. We buy it and cut into slices for our sandwiches. It can also be heated in its contain in the microwave if you wish. And it can be frozen if you want to keep more on hand.





    You might want to give the other pre-cooked meats a try. They are all delicious.....pot roast, ham, pork chops, chicken, pork roast, etc. Smithfield is our favorite brand if you can find it.
    I always make my meatloaf using the recipe from Martha Stewart. It tastes great and serves up cold very well. I would say to use firm bread slices such as sourdough to help hold your meatloaf. But do try the recipe, it is on Martha's website. Enjoy

    I have been doing it with the salsa recently and also add some cumin. It gives it a Mexican flavour and the salsa keeps it really moist. I do it a lot of other ways too but right now this is my fave.
    I like to take 2lbs hamburger %26amp; break up into large mixing bowl. Add 1 egg, 1 cup crushed Lay's potato chips, 1 teaspoon garlic powder, 1 pkg Lipton onion soup mix %26amp; 1/2 can Campbell's tomato soup....Mix together by hand %26amp; place in loaf baking dish.     Change to: servings US Metric


    1 1/2 lbs lean ground beef


    1 egg


    1 (1 1/4 ounce) package Lipton Onion Soup Mix


    1/4 cup A-1 Steak Sauce


    1-2 broccoli floret, but you must defrost first (depends how much you like) or frozen broccoli, but you must defrost first


    8 ounces grated cheddar cheese





    Preheat oven to 350掳F.


    Cook, steam broccoli, crumble up and set aside to cool.


    In a large mixing bowl combine ground beef, egg, soup mix and A1 sauce.


    On a large flat surface (bread board etc.) place the foil.


    Spread meatloaf mixture into a rectangle, about 1/2 inch thick.


    You want it as thin as possible because you are going to roll it like a jelly roll sprinkle broccoli then cheese over surface of meat.


    Roll up, starting at the small end of the loaf roll.


    It helps to roll with the foil under, it kinda holds it together as you roll.


    Pinch/close the small ends of the loaf.


    Bake about 1 hour.


    I like to pour more A1 over the top and right before pulling it out of the oven sprinkle a little more cheese on top.

    2 rings of bell pepper and onion





    Mix everything together in a large bowl.


    Form into a loaf shape in a casserole or loaf pan. Cover the entire top of the loaf with ketchup.





    Place the rings of bell pepper and onion on top of the loaf.





    Make a foil bubble to go over the loaf (foil must not touch loaf).





    Bake at 350-400 degrees for 80-90 minutes. During the last five minutes of cooking, remove foil from top.

    Directions





    Preheat oven to 350 degrees F.





    In a large bowl, combine the ground chuck and next 8 ingredients, mixing well.





    In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.





    Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake another 10 to 15 minutes, or until meat is no longer pink.

    Meat


    1 Egg


    1/2 cup to 1 cup Bread Crumbs depending on how much meat used


    Garlic Powder to taste


    Italian Seasoning to taste


    1/2 cup Onions chopped (optional)


    Ketchup or a small can of tomato sauce any flavor


    Russian dressing





    Mix all together with the meat and put in a loaf pan sprayed with cooking spray.





    Cook covered.





    When almost done, add fried onion rings on top and continue cooking.

    yes and you should add a bit more of a substitute liquid or another egg.


    Actually, I often use paste in my meatloaf.
    It won't be exactly right. What is the tomato sauce used for? Is it in the loaf itself, or is it a glaze? If it's the glaze, try substituting ketchup.





    Secret ingredients: Use a mixture of ground beef, pork and veal. Plain yogurt instead of milk is interesting. Wrap the loaf in thin sliced bacon (just the top and sides, and tuck the ends slightly under) before you cook it. Don't put it in a loaf pan - make a loaf shape on a wider pan with sides. This way it won't sit in the grease as badly.
    That should work for meatloaf.
    It will make it taste quite a bit different.

    # Crush the crackers and gingerly beat the eggs.

    1 (14.5 ounce) can diced tomatoes, drained


    1 1/2 cups shredded mozzarella cheese

    Preheat oven to 350 degrees F (175 degrees C).

    Mine is pretty simple. In a large bowl combine hamburger meat, salt pepper, bell pepper, onion, oatmeal, and one egg. Work with hands, put into meatloaf pan (mine is rectanglular glass pan) put ketchup on top--Bake @ 400 degrees for about 30 - 45 minutes.     combine bread crumbs, eggs, onion, salt and pepper, brown sugar and 1/2 cup cup picante sauce. Once well blended, add beef. form into loaf and bake in 350 degree oven for 1 hour. Meatloaf can be topped with more picante sauce, if desired.





    This recipe can be transformed to your liking. You can mix the ground beef with sausage; leave off the brown sugar; use oatmeal or crushed crackers instead of bread; add other spices. That is the fun of meatloaf, you can make it with what you have and it will almost always be good.
    I'm not a big meatloaf fan, but I finally found a recipe for it I like--you do the basic meatloaf thing (1.5 lbs ground beef, 1/2 cup breadcrumbs, (maybe 1/2 wheat germ, 1/2 bread crums), 1 egg, salt and pepper) and 1/4 cup milk:





    Then I add 4 slices of cooked bacon, crumbled, 1/2 cup sauteed sliced mushrooms and 1/2 cup sauteed diced onions, and a cup of Swiss cheese. Mix it all together, form a loaf and bake for about an hour at 350 degrees.

    1 small ohio chopped


    1 green pepper chopped


    1 small can sliced mushrooms


    1.5 pounds ground chuck


    1 egg


    1/2 cup rice


    2 table spoons ketchup


    2 cloves garlic chopped





    Mix and form into loaf





    heat 1 cup ketchup with


    4 tablespoons brown sugar until ';creamy';





    pour mixture over meatloaf and bake at 350 for an hour

    In a Sm Bowl put ketchup, worchestershire and Brown sugar.





    Put glaze on loaf and bake aprox 1 hr.

    1 1/2 lbs lean ground beef


    1 cup tomato juice


    3/4 cup oats, uncooked (quick or oldfashioned)


    1 egg, slightly beaten


    1/4 cup chopped onions


    1/2 teaspoon salt


    1/4 teaspoon pepper


    1 cup Heinz Chili Sauce, for top





    Heat oven to 350 degrees.


    Combine all ingredients except chili sauce. Mix lightly but thoroughly.


    Press into an 8X4 inch loaf pan.


    Zigzag top of meatloaf with chili sauce.


    Bake for 1 hour or until meat is no longer pink and juices run clear.


    Drain and let stand 5 minutes before serving with more chili sauce on the side.
    Meatloaf With Green Chile-Tomato Gravy:





    Prep: 15 min., Bake: 45 min.





    1 1/2 pounds ground chuck


    1/2 cup soft breadcrumbs


    1 small onion, minced


    1/4 cup ketchup


    1 large egg, lightly beaten


    2 tablespoons Worcestershire sauce


    1 1/2 teaspoons salt


    1/2 teaspoon pepper


    Green Chile-Tomato Gravy





    Stir together first 8 ingredients in a large bowl just until combined. Shape into 4 (4-inch) loaves, and place in a lightly greased 13- x 9-inch baking dish.





    Bake at 350掳 for 45 minutes or until meat is no longer pink in center. Serve with Green Chile-Tomato Gravy.





    Yield: Makes 4 servings
    This is the Good Eats Meatloaf recipe from Alton Brown of the Food Network. It is a little more labor intensive than the run-of-the-mill meatloaf recipe but well worth the extra effort.

    6 ounces garlic-flavored croutons


    1/2 teaspoon ground black pepper


    1/2 teaspoon cayenne pepper


    1 teaspoon chili powder


    1 teaspoon dried thyme


    1/2 onion, roughly chopped


    1 carrot, peeled and broken


    3 whole cloves garlic


    1/2 red bell pepper


    18 ounces ground chuck


    18 ounces ground sirloin


    1 1/2 teaspoons kosher salt


    1 egg





    For the glaze:


    1/2 cup catsup


    1 tablespoon ground cumin


    Dash Worcestershire sauce


    Dash hot pepper sauce


    1 tablespoon honey








    Heat oven to 325 degrees F.





    In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.








    Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.





    Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.

    1 1/2 lb Chopped meat


    1 box stuffing mix (Stove Top etc.)


    2 tbsp. Steak sauce


    1 Egg


    1 medium onion, chopped





    Preheat oven 400 degrees.


    Prepare stuffing according to box directions then let cool to where you can handle it.





    In a large bowl, combine meat, stuffing, chopped onion, egg and steak sauce. Ok to use hands to blend.


    Put into a loaf pan or on a roasting pan and form a loaf with your hands.


    Place in preheated oven, Check temperature after 1/2 hour. you want internal temperature to reach 160 degrees. when at 160 remove from ovven let sit 5 minutes. Slice serve and enjoy!

    1/2 cup finely chopped onion
