Anyone have a GREAT meatloaf recipe to share?

I'm not much of a cook, but I'd like to try my hand at this . . .

I've made this recipe for years. My mom developed it when my ex-step-father was diagnosed with high cholesterol. I hope you enjoy it.








1 pound lean ground beef (15% or 7% fat is best)





1 pound package Jennie-O ground turkey





1 package Ritz crackers, crushed into tiny/fine pieces (you can use saltines if you prefer)





1 egg





1 Tablespoon black pepper (fresh ground is best. I use the McCormick grinder one)





1 Tablespoon garlic powder





1 teaspoon seasoned salt





(All spices can be eyeballed instead of exact measurements. Be careful with the seasoned salt or you can make the meat too salty)





1/2 onion (red, white or brown), peeled %26amp; chopped/diced small





1 can tomato sauce





3 Tablespoons catsup (this can be eyeballed too)








Preheat oven to 350 degrees








Mix almost all ingredients in a large bowl, using your hands or a large silicone or plastic spoon, reserving 1/2 the can of tomato sauce %26amp; 1 Tablespoon of catsup. Press meat mixture into an 8x8 or 9x9 baking pan. Pour remaining tomato sauce %26amp; catsup onto top, smoothing over to the edges.








Bake in the oven for 1 hour, 60 minutes. Check meatloaf for doneness by slicing a small piece at one end. If pink inside, cook for an additional 10-15 minutes. If brown inside, meatloaf is done.








Serve meatloaf with mashed potatoes, salad, mixed veggies or other favorite side dish. If you want baked potatoes, put them into the oven at the same time you put the meatloaf in.








Sometimes I put 3-5 slices of bacon on top of the catsup mixture. The grease from the bacon seeps into the meat %26amp; makes it taste great. The catsup forms a soft crust on top of the meatloaf.Anyone have a GREAT meatloaf recipe to share?

My meatloaf is simple yet amazing





you need:





2 pounds ground beef either 30/70 or 20/80 the higher the fat content the better





2 medium onions chopped





1 and 1/2 cups cracker crumbs- Ritz or clubhouse work the best. Just put the crackers in a good Ziploc storage bag and whack them with a rolling pin till they become crumbs





1 teaspoon garlic powder





2 eggs





1 tablespoon Worcestershire





enough ketchup to cover the loaf





preheat oven to 350





mix everything together- except the ketchup- form a loaf


place in large baking pan- cover with ketchup- bake for 35 to 40 minutes. remove from oven let rest for 10 minutes before serving- slice and enjoy








p.s. makes great sandwiches sliced cold
INGREDIENTS


1 1/2 pounds ground beef


1/2 cup crushed buttery round crackers


1 cup shredded Cheddar cheese


1 (1 ounce) package dry onion soup mix


3 eggs, beaten


1/4 cup ketchup


2 tablespoons steak sauce








DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C).


Stir the ground beef, crushed crackers, Cheddar cheese, and onion soup mix in a large bowl until well combined. Whisk the eggs, ketchup, and steak sauce in a separate bowl until smooth. Mix the eggs into the meat until evenly combined, if the mixture seems too dry, add a little water. Press into a 9x5 inch loaf pan.


Bake in preheated oven until the meatloaf reaches 160 degrees F (71 degrees C) and is no longer pink in the center, 45 to 60 minutes
1 c. quick oats


1 egg, slightly beaten


1/2 c. tomato paste


1/2 c. milk


2 tbsp. minced onion


1/2 tsp. onion salt


1 tbsp. Worcestershire sauce


1/2 tsp. celery seed


3/4 lb. lean ground beef


3/4 lb. lean ground turkey





SAUCE:


1/2 c. tomato paste


1/2 c. water


2 tbsp. vinegar


2 tbsp. brown sugar


1 tbsp. Dijon mustard


1/8 tsp. pepper





In large bowl, combine oats, eggs, tomato paste, milk, onion, Worcestershire sauce, celery seed and onion salt. Add meat and mix well. Pat mixture into 9 x 5 x 3 inch loaf pan.





In small bowl, combine all ingredients for sauce. Pour over meatloaf.





Bake in a 350 degree oven for 1 1/2 hours. Remove from oven; let stand 10 minutes before slicing. Serves 8.





Tips:


Mix the meatloaf with your very-clean hands. They're your best kitchen tool!


I usually add some fresh onion to this, to increase the moistness, maybe 1/4 to 1/2 cup, minced fine or grated.


I like to run the oats in the food processor for a few seconds, so they're not such large pieces.
Two lbs lean (7% or less) ground beef


One lb 15-20% (higher fat for moisture) ground beef.


One egg


1 small can evaporate milk (helps make it unbelievably moist)


plain bread crumbs


1/2 can or jar beef gravy (4 total, I use campbell's in the can, not the large can, the small one)


Salt and Pepper





Mix all ingredients together ( I use my hands, it's easier that way). You will know you have enough bread crumbs (don't add a ton right at the start) when the meat no longer sticks to your hands like cement)





Put mixture into baking pan and shape into a loaf. Bake for 1 hour at 350F. Remove from oven and remove fat from pan. Pour the leftover 1/2 can or jar of beef gravy and 3 more cans or jars into pan around the meatloaf (don't pour it on top of the meatloaf, just in the pan so it surrounds the meatloaf.)





Return to oven and bake an additional hour. The flavor and juices from the meatloaf cooking in the gravy add to the canned gravy to give it a homemade taste.





I made this for friends once, the husband is such a picky eater I figured meatloaf would be the way to go. He liked it so much he had his wife ask me for the recipe and she always makes it this way.
I thought Bat out of Hell was pretty good.
