Salad oil

1 carrot, small to medium dice

2 stalks celery, small to medium dice

1 medium onion, small to medium dice

2 pounds ground beef

2 eggs

Salt and freshly ground black pepper

Dash hot sauce (recommended: Tabasco)

Dash Worcestershire sauce

3 slices bread

1/2 cup seasoned Italian bread crumbs

Ketchup

Preheat oven at 375 degrees F.

In a medium-sized saute pan, put 2 dribbles of salad oil and heat over medium-high heat.

Add the carrots, celery, and onions and saute, about 5 minutes. Put aside and let cool.

In large bowl put the carrot mixture, ground beef and remaining ingredients, except for the bread, the bread crumbs and ketchup. Soak the bread in cold water, then squeeze water out (like a sponge) and drain it. Add to the ground beef and mix. (A stand mixer is may help make it easier). Add the bread crumbs and mix. Roll into firm loaf, spread ketchup over the top, and place into preheated oven for approximately 45 to 55 minutes, or until cooked through. Take out and serve hot.
Some of these are over the top, this is tried and true and I actually make it...

That is the best meatloaf I ever had and it is easy.

I hope you like it!
Ingredients

1 1/2-2 pounds Ground Beef

1c of cooked white( to stretch for a big family, I know it

sounds wierd but it's really good.)

3/4c shredded carrots(most stores sell them pre shredded)

1 packet of beefy onion soup mix

1c of bread crumbs ( desireable)

1 egg for every pound of meat

2-3 more seasons of your choice( not alot 'cause you already have the soup mix). Suggestions: Mrs. Dash, Reg. Season Salt, or something with a little kick.\

1-1 1/2 can of tamatoe sauce or enough to fit over the loaf.

Directions

1. Pre-heat oven to 350.

2.Mix everything except for the Tam.Sauce together making sure everythnig is evenly distributed. You may want to mix with your hands easier but it might be a little cold. Shape meat into a loaf or whatever you like but make sure it's leveled.

3. Line a big enough pan, to fit the loaf in with foil, place meat in pan and then cover with foil.

4. Place in oven then cook for about 2 hours depending on your oven.

5. 3 quarters of the way done take the foil off the meatloaf and spread the sauce on it cook the rest off the time until sauce thickens or sticks on top.

Also if your no sure its done cut a small piece from the middle to make sure theirs no redness.

Then let cool down 10 min and enjoy.

* If you want you can add or replace shredded cheese with the tomatoe sauce for a cheesey delight.

* You can also add chopped peppers and onions to the loaf shaping them into small loafs for Salisbury Steaks.

I REALLY hope you try this one day it is delicous I have been eating it like this since I was younger. Please contact me and tell me what you think.
This even fooled my mom!

1 can of Hunt's meatloaf sauce (recipe on back of can)

2 pounds ground chuck

2 eggs

1 cup quick oats

3/4 of the meatloaf sauce

instead of using half the sauce I use 3/4 cup of the sauce in the meat.

For the topping I use a 1/2 cup of brown sugar and add Heinz 57 sauce to moisten brown sugar. A good sweet and spicy topping. Pour on top of meatloaf in the last 5 to 7 minutes of cooking the meatloaf.

Easy, Fast and Just as good as those long recipes.
