Some type of salad? Or some kind of potato? Give me some good ideas. What should I serve with this Italian Meatloaf recipe?
How about Italian green beans or garlicky green beans.

I take fresh green beans and clean them. Then I heat up olive oil saute some diced onion and mushrooms until it just starts to turn golden brown. Then I add garlic and green beans ...add a touch of soy sauce and toss in green beans and saute until crisp tender...about 10 minutes.

Or

Saute onion in olive oil until onion is just starting to turn golden brown...add garlic and basil ..stir for about 2 minutes. Add green beans (if you use canned use two cans and drain them) and then one can of diced tomatoes. Cook til heated through. I made these for the chef event this weekend....for three days and I couldn't make them fast enough...they were eating them up like crazy! What should I serve with this Italian Meatloaf recipe?

Creamy Macaroni and Cheese

Recipe courtesy Paula Deen

2 cups uncooked elbow macaroni (an 8-ounce box isn't quite 2 cups)

4 tablespoons (1/2 stuck) butter, cut into pieces

2 1/2 cups (about 10 ounces) grated sharp Cheddar cheese

3 eggs, beaten

1/2 cup sour cream

1 (10 3/4-ounce) can condensed Cheddar cheese soup

1/2 teaspoon salt

1 cup whole milk

1/2 teaspoon dry mustard

1/2 teaspoon black pepper

Boil the macaroni in a 2 quart saucepan in plenty of water until tender, about 7 minutes. Drain. In a medium saucepan, mix butter and cheese. Stir until the cheese melts. In a slow cooker, combine cheese/butter mixture and add the eggs, sour cream, soup, salt, milk, mustard and pepper and stir well. Then add drained macaroni and stir again. Set the slow cooker on low setting and cook for 3 hours, stirring occasionally.

I love little boiled red potatoes. Gently boil until almost done, drain hold a clean kitchen towel in one hand, place a potato in the towel and gently press to flatten slightly. (Don't smoosh just flatten until they split a little ). Continue to do this to all the potatoes. Season with some salt and pepper. Heat some olive oil in a non stick fry pan, add some garlic if you wish, place the potatoes in the pan and fry until golden turn each potato once.

OR

If you have some nice ripe tomatoes just slice and serve with some olive oil and some balsamic vinegar drizzled over them, sprinkle a little parm cheese..

Baked potato....do it while baking meat loaf and save time/energy. Some kind of vegetable....I would do either corn or glazed carrots. Maybe a salad, but not really necessary. You could also serve hot rolls.
You can serve it with mashed potatoes, any pasta or steamed rice.
Scalloped potatoes and broccoli/cauliflower cheese.
fettucini with extra virgin olive oil, garlic and Reggiano Parmesan cheese.

Chips and salad.
