Swedish Meat Loaf Supper





Meat Loaf





1 can (4 oz0 mushrooms (pieces and stems ), drained and finely chopped


½ cup onion, finely chopped


¼ cup fresh parsley, snipped


1 cup fresh rye or white bread crumbs (about 2 slices of bread)


2⁄3 cup milk


1 egg


1 ¼ teaspoon salt


¼ tsp ground black pepper


¼ tsp ground allspice or nutmeg


1 lb (90%) ground beef


1 lb lean ground pork





Noodles and Creamy Gravy





1 package (12 oz) uncooked egg noodles


1 jar (12 oz) mushroom or beef gravy


2 Tbsp milk


¼ cup sour cream





1.Preheat oven to 350ºF. For meatloaf, finely chop mushrooms and onion using food chopper. Transfer to Classic Batter Bowl using Kitchen Scraper. Snip parsley using Kitchen Shears. Add parsley, bread crumbs, milk, egg and seasoning to Batter Bowl; mix well.


2.Crumble beef and ground pork into batter bowl; mix lightly but thoroughly. Shape meat into loaf in Stoneware Loaf Pan.


3.Bake 1 hour and 15 minutes to 1 hour 20 minutes or until meat is no longer pink in center and internal temp reaches 160ºF using Pocket Thermometer. Remove meat loaf to serving plate; let stand for 10 minutes.


4.Meanwhile, cook noodles in Professional 4 Qt Casserole according to package directions; Drain. For creamy gravy, heat gravy with milk in Professional 1 qt Saucepan over medium heat, stirring occasionally with Nylon Spiral Whisk. Whisk in sour cream; remove from heat.


5.Cut meat loaf crosswise in half. Cut one half into 8 slices and serve with noodles and creamy gravy. You can tightly wrap remaining half and refrigerate for up to 4 days if desired.








Family Sized Italian Meatloaf





½ cup chopped onion


1 ½ lb lean ground beef


1/3 cup unseasoned dry breadcrumbs


2 garlic cloves, pressed


1 egg


1 ½ tsp Pantry Italian Seasoning Mix


¾ tsp salt


¼ tsp black pepper


15 oz jar of refrigerated marinara sauce, divided


½ cup Shredded Italian Cheese blend





1.Preheat oven to 375º. Lightly spray loaf pan with nonstick cooking spray. Chop onion using food chopper. In stainless (4 qt) mixing bowl, combine onion, ground beef, bread crumbs, garlic pressed with garlic press, seasoning mix, salt and black pepper. Add ½ of the jar of marinara sauce; lightly mix, but be thorough.


2.Shape meat mixture into loaf in pan. Top with remaining sauce. Bake 55-60 minutes or until meat is no longer pink in center of loaf and internal temperature reaches 160ºF.


3.Sprinkle with ½ cup of cheese; bake 3 minutes or just until cheese begins to melt. Remove meat loaf to serving platter.





Italian seasoning can be substituted for the Italian Seasoning Mix, if desired.


Italian cheese blend is a mixture of up to 6 different cheeses. These include mozzarella, provolone, Parmesan, Romano, fontina and or Asiago. Italian cheese blend is a quick way to add flavor to pizzas, sandwiches and pasta dishes.





BBQ Meat Loaf


Ingredients:


1 1/2 pounds lean (90%) ground beef


3/4 cup quick or old-fashioned oats


1/2 cup finely chopped green bell pepper


1/2 cup finely chopped onion


1/2 cup barbecue sauce, divided


1 egg


1 teaspoon dried thyme leaves


1 teaspoon salt


1/4 teaspoon ground black pepper








Directions:


1.Preheat oven to 350°F. Combine ground beef, oats, bell pepper, onion, 1/4 cup barbecue sauce, egg, thyme, salt and black pepper in Classic Batter Bowl; mix lightly but thoroughly.


2.Shape meat mixture into loaf in Stoneware Loaf Pan. Insert Digital Thermometer into center of meat loaf. Bake 50 minutes.


3.Spread remaining 1/4 cup barbecue sauce over meat loaf. Bake an additional 10 minutes or until meat is no longer pink in center of meat loaf and internal temperature reaches 160°F using Digital Thermometer. Remove from oven. Let stand 10 minutes before slicing.Any unusual meatloaf recipes?
I don't know what you would consider unusual, but here are 2 that are different.





Applesauce Meatloaf





1 1/2 lb. hamburger


3/4 c. applesauce


chopped onion


salt and pepper to taste


2 slices dried and crumbled bread or 1/4 c. oatmeal





Mix together. Put in Square Baking dish. Top with mixture of


4 T Ketchup and 4 T Brown Sugar.


Bake at 350 degrees for 35-40 minutes.











Mother-In-Law Meatloaf


1 can condensed tomato soup


2 lb. hamburger


1/2 c. dry bread crumbs or crackers


1 egg


onion


1 tsp. salt and pepper


Mix, shape to loaf, lay strips of bacon on top, bake 350 degrees for 1 1/2 hours.Any unusual meatloaf recipes?
2 eggs, beaten


2lbs lean ground beef OR turkey


1 pkg Stove Top stuffing mix for Turkey or chicken


1 cup water


1/2 cup barbeque sauce (divided in half)





place all ingredients, and HALF of barbeque sauce into a bowl, mix until JUST blended (do not overmix) shape meat into an oval loaf pan, top with remaining barbeque sauce, bake.





I also have made it into patties and used beef or mushroom gravy instead of BBQ sauce.
I remember a presentation trick from a Betty Crocker cookbook for kids that I got as a kid. My son loves it now. Press your meatloaf into a pie pan, and serve it ';a la mode'; with mashed potatoes on top--same way you would put ice creame on a pie.

Chinese Sweet and Sour Meatloaf recipe





Sauce


2/3 cup ketchup


1 1/2 cups granulated sugar


1 cup vinegar


2 tablespoons FINELY minced ginger


4 teaspoons minced garlic


1 teaspoon Dijon mustard*


1 teaspoon regular mustard





*Optional (I used it just to see what happened. Regular mustard to taste would work just as well).





Meat Loaf


1 pound ground beef


3/4 pound ground pork (approximation)


1/3 cup finely chopped green onion


(white and green parts)


3/4 cup bread crumbs


2 eggs


2 tablespoons rice wine or any dry white wine


1 teaspoon minced garlic


2 tablespoons cornstarch


1 1/4 teaspoons salt


1/4 teaspoon black pepper





Mix all sauce ingredients thoroughly. Set aside to allow flavors to marry.





Next, combine all meat loaf ingredients except cornstarch. Take 1 cup of sauce AND mix it into meat. Follow this step with evenly sprinkling cornstarch over meat and thoroughly mixing it in.





Preheat oven to 350 degrees F.





Place meat in loaf pan and pack it down. Bake covered with foil for about 30 minutes. During last 10 minutes of initial 30-minute baking cycle, remove meat loaf from oven, drain fat and slice into several serving-size slices. Pour about 1/2 cup of sauce over meat, making sure some of sauce runs down into cracks. Bake uncovered for about 15 more minutes.





Meanwhile, if you want, you can heat and thicken leftover sauce with about 1 teaspoon cornstarch and an equal amount of water. As sauce starts to thicken, you can add about 2 teaspoons hot oil to sauce.





This recipe makes a lot of sauce, so leftover heated sauce can be spooned over individual meatloaf servings if desired.





NOTE: If you want a browner meatloaf, bake covered for about 20 minutes and uncovered for 15 to 20 minutes. Then drain fat, slice meatloaf and pour sauce over it.
Meat Loaf in a Loaf





1 1/2 lb lean ground chuck


1 (1 lb) loaf French or Italian Bread


1 (5 oz) can evaporated skimmed milk


1 egg slightly beaten


1 tbl worcestershire


2/3 cup chopped onion


1/2 cup chopped green bell pepper


salt %26amp; pepper to taste





Preheat oven to 350. Cut a 1/2'; slice off the top of bread loaf lenghtwise (horizontally); set aside.





Hollow out loaf leaving about a 1'; shell. Tear bread removed from center into 2 cups of small, soft bread crumbs. Combine crumbs w beef %26amp; remaining ingredients; mix thoroughly.





Fill inside of loaf w beef mixture. Place bread top back on filled loaf. Secure top in place w several toothpicks. Wrap in foil, sealing tightly. Place on cookie sheet in middle of oven %26amp; bake 1 hour 30 mins. To serve, remove foil %26amp; toothpicks, slice into 1 1/2'; slices.

Muffin Meatloaves


Serving Size : 6





1-1/2 lbs. lean ground beef


1-1/2 cups shredded zucchini or carrots


1 cup soft bread crumbs


1 egg, slightly beaten


1 tsp. dried Italian seasoning


1/2 tsp. salt


1/4 cup ketchup





Preheat oven to 400ºF. In large bowl, combine all ingredients except ketchup. Mix lightly but thoroughly.





Place approximately 1/3 cup beef mixture into each of 12 medium muffin cups, pressing lightly. Spread ketchup over tops. Bake 20 minutes or until centers are no longer pink and internal temperature is 160°F. Remove meatloaves from pan to serve. Serve with mashed potatoes and tossed salad.

Meatloaf Wellington





Start with your favorite meatloaf recipe, but divide the mixture in half before baking. Use lean ground beef to prevent a lot of fat from spilling in the oven.





Buy a pack of commercial frozen-puff pastry dough. Roll out two sheets of thawed puff pastry dough into large rectangles, about 16 by 20 inches. Spray the pastry with some water if it starts to dry out while you're working with it.





Place a loaf of meat mixture in the center of each sheet of pastry. Fold the short sides over first, followed by the long sides. Seal the seam with a little water. Make a couple of slits in the top to allow steam to escape.





Put a baking rack on a jellyroll sheet pan and place the loaves, seam side down on the rack. Bake at 350 degrees for 60 to 70 minutes, or until the internal temperature is between 160 and 170 degrees. Top with sauce.





Meatloaf Wellington Sauce


1/4 stick butter


1/2 cup flour


2-1/2 cups beef consommé


1 Tbs. tomato paste


1/2 tsp. dried thyme


1/2 tsp. dried rosemary, crushed


dash cloves





Melt butter in a saucepan and whisk in flour until smooth. Stir in remaining ingredients and bring to a boil. Cook for about two minutes, stirring constantly, until thickened. Serve over meatloaf.
Yeah we make italian and/or mexican meatloaves.


SImply add ingredients like you would for meatballs and cover with spaghetti sauce, or for mexican, we use taco seasonings and tortilla crumbs in place of bread crumbs. Cover it with salsa rather than catsup.
I use oatmeal instead of bread crumbs, or crackers, I also use diced squash or zucchini and BBQ sauce for it.
I don't think my meatloaf is too unusual. One thing I like to do differently is instead of adding crushed crackers to keep the loaf together is to use old, crushed up potato chips. Gives the loaf a different little twist. If you do this, make sure you cut back on your seasoning since the potato chips are already salted.
Sweet and Sour Meat Loaf





* 2 lb ground meat (I usually mix pork and beef, but you can also use beef, turkey, or chicken)


* 1 c breadcrumbs


* 1/2 c water


* 2 eggs


* 1 onion (chopped)


* salt and pepper to taste


* 1 1/2 c tomato sauce (plain tomato, tomato herb, tomato mushroom, whatever you want)


* 1/4 c lemon juice


* 1/2 c sugar





Mix tomato sauce, lemon juice and sugar in a small bowl. Combine half of the sauce mix with the rest of the ingredients and place into a loaf pan. Pour the remaining sauce mix over the meat loaf. Bake at 175 degrees Celsius/350 degrees Fahrenheit for about 50 minutes.
