What are some good recipes for Meatloaf?

My boyfriend is coming over to stay the night. I have not cooked for him in awhile and thought I'd make his favorite which is meatloaf. I have not made it for him before.





I was thinking about wrapping the meatloaf in bacon and adding some pieces of cheddar cheese in the mixture.What are some good recipes for Meatloaf?

Bacon Cheeseburger Meatloaf





Ingredients:





* 1 lb ground chuck


* 10 slices bacon, cooked and crumbled


* 1 (8 ounce) package sharp Cheddar, grated


* 2 large eggs, lightly beaten


* 1/4 cup bread crumbs, toasted


* 1/4 cup mayonnaise


* 1 tablespoon Worcestershire sauce


* 1/4 teaspoon salt


* 1/4 teaspoon ground black pepper


* 1/3 cup ketchup


* 2 tablespoon prepared mustard


* 1 (3 ounce) can French fried onions








Directions:





Preheat oven to 350 degrees F.





In a large bowl, combine the ground chuck and next 8 ingredients, mixing well.





In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.





Press meat mixture into a 9x5x3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake 10 to 15 minutes, or until meat is no longer pink.





Yield: 1 (9x5 inch) loaf

Country Pate


1 pound each, ground pork and beef


1/2 c finely chopped onion


1/2 c bread crumbs


2 Tbsp ketchup


1 Tbsp mustard


2 eggs,slightly beaten


1/4 c chopped parsley (optional)


1/2 c sour cream


1 1/2 tsp salt


1/2 tsp pepper


Combine all ingredients and mix well. Place in large loaf pan. Bake at 350 F for 1 hour or until meat shrinks from sides of pan. Pour off juices.





Alternate Method


Line a sheet of waxed paper with 6-8 slices of bacon, slightly overlapping. Place meat mixture on top and spread to cover. Top with grated Old cheddar cheese leaving a 1 inch border around edges. Roll up starting with side that has bacon ends, being sure to pull waxed paper out as you roll. Place on baking sheet with high sides or in centre of 9x13 baking dish. Pinch ends to seal in cheese well or it will all ooze out during cooking.

Favorite Meat Loaf





Meat loaf is my all-time favorite dish to cook. One year, an aunt and I put together a cookbook that included over 50 variations of that hearty, old-fashioned main course





Ingredients:


2 eggs


1/4 cup milk


1 tablespoon Worcestershire sauce


1 teaspoon seasoned salt


1 teaspoon onion powder


1 cup quick-cooking oats


1 carrot, shredded


2 tablespoons chopped fresh parsley


1-1/2 pounds ground beef


1 pound ground pork


1/2 cup ketchup


Directions:


In a large bowl, beat eggs. Add milk, Worcestershire sauce, seasoned salt and onion powder; mix well. Stir in oats, carrot and parsley. Combine beef and pork; add to egg mixture and mix well. Press into a 9-in. x 5-in. loaf pan. Top with ketchup. Bake at 350掳 for 1-1/2 hours or until no pink remains. Drain. Yield: 6-8 servings.

French Onion Meat Loaf





As a teacher and farm wife, I'm always looking for quick and easy menu ideas, especially during planting and harvesting seasons. I keep the ingredients on hand for this simple-to-prepare meat loaf.





Ingredients:


3 eggs


1 can (10-1/2 ounces) condensed French onion soup, undiluted


1 package (6 ounces) crushed beef-flavored stuffing mix


2 pounds lean ground beef


Directions:


In a large bowl, combine the eggs, soup and contents of stuffing package; mix well. Crumble beef over mixture and mix well. Shape into a loaf in a greased 13-in. x 9-in. baking pan. Bake, uncovered, at 350掳 for 1 hour or until meat is no longer pink and a meat thermometer reads 160掳. Let stand 10 minutes before slicing. Yield: 8 servings. If cooking for two, shape the meat mixture for the French Onion Meat Loaf into two-smaller loaves, instead of one large one. Bake for about 45 minutes or until a meat thermometer reads 160掳. Enjoy one loaf and freeze the other to reheat later.

Depression Meat Loaf





This recipe really does date back to the 1930's. The secret to its ';just-right'; texture? It's all in the mixing process. You won't believe that such a grand meat loaf can be created from so few humble ingredients...until you try it for yourself!





Ingredients:


1/2 cup evaporated milk


2 slices bread


1/4 cup chopped onion


3/4 teaspoon salt


1/4 teaspoon pepper


1 pound lean ground beef


Directions:


In a large bowl, pour milk over bread. Let stand until the milk is absorbed. Add onion, salt and pepper. Stir with fork until bread softens and is light and fluffy. Mix in ground beef. In a shallow baking dish, shape into a 7-in. x 3-in. x 2-in. loaf. Bake at 350掳 for 50 minutes or until no pink remains. Yield: 4 servings.
2 eggs ( this is my moms recipe but I dont use bread crumbs I use oats ) .


1/4 cup ketchup


1/4 cup water


1/2 cup minced onion


1 Tablespoon Worcestershire sauce


1 teaspoon salt


1 cup soft breadcrumbs (optional)


2-3 pounds ground beef


Glaze:


Ketchup, brown sugar and a touch of honey.


Mix together to form a thin paste.





Beat eggs in a large bowl. Blend in ketchup, water, minced onion, Worcestershire sauce, and salt. Mix in soft breadcrumbs if desired. With a fork, mix ground beef with other ingredients.


Mold into loaf and place on a rack in roaster or cake pan. Cover with foil and Bake @ 350 degrees for about an hour or until juices run clear and it's no longer pink inside. (May need to drain some of the liquid halfway through cooking time.) As soon as done, remove the foil and coat the top and sides of loaf with glaze and turn oven to broil.





Watch it closely, and broil just until glaze starts to bubble. Remove from oven
Brown Sugar Meat Loaf!





3lbs Ground Beef or Chuck


2 cups bread crubs


3 eggs


1 Tbls of Soy Sauce


2 tsp of salt


2 tsp black pepper


2 tsp minced garlic


1 small onion saulteed til translusent





Mix all together and form loaf!





Top with Brown Sugar Sauce....





1 cup brown sugar


1/2 cup tomato Paste


1 cup ketchup





*Cook this sauce on the stove til the sugar is desolved* Remove and let cool*





Top your meatloaf with it and bake for 1 hour on 350! or Until no longer pink in center!
saute' onions portabella mushrooms in wine and olive oil


put them in your mix also crush spicy chex party mix into it


i did this once and had some people over the all but licked the pan i cooked it in a little splash of beer always a good idea
add some barbecue sauce and chopped green pepper to the meatloaf... along with the usual egg, bread crumbs,etc... and serve this cheddar cheese sauce over pasta or veggies.
