Any good meatloaf recipes?

Like something special not just the plain jane kind.Any good meatloaf recipes?
I like this one.





INGREDIENTS (Nutrition)


2 pounds lean ground beef


4 (6 ounce) cans tomato paste


15 ounces dry bread crumbs


4 eggs


3 tablespoons garlic salt


3 tablespoons seasoning salt








DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C).


In a large bowl, combine ground beef, tomato paste, bread crumbs, eggs, garlic salt and seasoning salt until well mixed. Shape into a loaf and place in a 9x5 inch loaf pan.


Bake in preheated oven 1 hour, until no longer pink.Any good meatloaf recipes?
Bacon-Wrapped Meat Loaf with Brown Sugar - Ketchup Glaze





If you like, you can omit the bacon topping from the loaf. In this case, brush on half the glaze before baking and the other half during the last fifteen minutes of baking. Serves 6 to 8





Brown Sugar - Ketchup Glaze


1/2 cup ketchup or chili sauce


4 Tbsp.s brown sugar


4 Tbsp.s cider vinegar or white vinegar





Meat Loaf


2 tsp. vegetable oil


1 medium onion , chopped medium


2 medium cloves of garlic , minced


2 large eggs


陆 tsp. dried thyme


1 tsp. table salt


陆 tsp. ground black pepper


2 tsp. Dijon mustard


2 tsp. Worcestershire sauce


1/4 tsp. hot pepper sauce


陆 cup whole milk or plain yogurt


1 pound ground chuck


陆 pound ground pork


陆 pound ground veal


2/3 cup Saltine crackers , crushed (about 16), or quick oatmeal, or 1 1/3 cups fresh bread crumbs


1/3 cup fresh parsley leaf , minced


8-12 slices bacon





1. For the glaze: Mix all ingredients in small saucepan; set aside.





2. For the meat loaf: Heat oven to 350 degrees. Heat oil in medium skillet. Add onion and garlic; saut茅 until softened, about 5 minutes. Set aside to cool while preparing remaining ingredients.





3. Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce, and milk or yogurt. Add egg mixture to meat in large bowl along with crackers, parsley, and cooked onion and garlic; mix with fork until evenly blended and meat mixture does not stick to bowl. (If mixture sticks, add additional milk or yogurt, a couple Tbsp.s at a time until mix no longer sticks.)





4. Turn meat mixture onto work surface. With wet hands, pat mixture into approximately 9-by-5-inch loaf shape. Place on foil-lined (for easy cleanup) shallow baking pan. Brush with half the glaze, then arrange bacon slices, crosswise, over loaf, overlapping slightly and tucking only bacon tip ends under loaf .





5. Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool at least 20 minutes. Simmer remaining glaze over medium heat until thickened slightly. Slice meat loaf and serve with extra glaze passed separately.

Emeril鈥檚 Most Kicked Up MEATLOAF Ever





2 tablespoons butter


1 large onion, chopped


1 rib celery, finely chopped


1/2 red bell pepper, finely chopped


2 teaspoons minced garlic, plus 1 teaspoon


1 teaspoon chopped thyme leaves


1 teaspoon chopped rosemary


1/3 cup chopped fresh parsley





2 eggs


1 1/2 teaspoons Dijon mustard


1/2 cup ketchup, plus 1/4 cup


2 tablespoons plus 1 teaspoon Worcestershire sauce


1/2 cup Heavy cream


2/3 cup Breadcrumbs


1 pound ground chuck


1/2 pound mild pork sausage (such as breakfast sausage)


1/2 pound ground veal


1 1/2 teaspoons salt


2 teaspoons plus 1/4 teaspoon freshly ground black pepper


4 slices bacon, cut in half


2 tablespoons white or red wine vinegar


1/2 cup canned tomatoes, chopped or crushed





In a large skillet heat the butter over medium-high heat until melted. Add all but 1/4 cup of the onions, the celery and all but 2 tablespoons of the bell pepper and cook, stirring occasionally, until vegetables are softened and beginning to caramelize around the edges, about 6 minutes. Add 2 teaspoons of the garlic, the thyme, rosemary, and parsley and cook for 2 minutes. Remove from the heat and allow to cool.


Preheat the oven to 350 degrees F.


When the vegetable mixture is cooled, transfer to a mixing bowl and add the eggs, mustard, 1/4 cup of the ketchup, 1 teaspoon of the Worcestershire sauce, and heavy cream and mix until thoroughly combined. Add the breadcrumbs, ground chuck, pork sausage, ground veal, 1 teaspoon of the salt and 1/4 teaspoon of the pepper and mix until just combined. Do not overmix. Transfer meat mixture to a 9 by 5 by 3-inch loaf pan and using your hands, form mixture into a loaf shape. Arrange the slices of bacon on the top of the meatloaf and set aside.





In a small saucepan combine the remaining 1/4 cup of chopped onion, remaining 2 tablespoons of green pepper, remaining teaspoon of garlic, remaining 1/2 cup of ketchup, remaining 2 tablespoons of Worcestershire sauce, remaining 1/2 teaspoon of salt, remaining 2 teaspoons of pepper, vinegar, and canned tomatoes and bring to a boil over medium-high heat. Cook until thickened, about 5 minutes.





Pour the sauce over the uncooked meatloaf and bake for 45 minutes to 1 hour, or until the bacon and sauce are slightly caramelized on the top of the meatloaf. Remove from the oven and cover loosely with aluminum foil. Let stand for 10 minutes before serving. Slice and serve along with the Macaroni with 4 Cheeses.

I put garlic, onion, gr pepper, worstershire, eggs, cornflakes, salt, pepper, bread crumbs, oregano, form into shape, the secret is to top the shaped loaf with ketchup, yes, ketchup, it cooks onto meat, as is amazing. corn flakes are kind of a filler, but helps hold together, as do the eggs, I dont measure anything, I add ingrediants according to size of loaf, more or less, 1 egg for a small, (1 to 2 lb.) 2 eggs for larger size. bake for about an hour.

Meatloaf





1 1/2 pounds ground beef


1 egg


1 onion, chopped


1 cup milk


1 cup dried bread crumbs


salt and pepper to taste

Preheat oven to 350 degrees F (175 degrees C).


In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish.


In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.


Bake at 350 degrees F (175 degrees C) for 1 hour.





Serve with mashed potatoes, a steamed veggie and warm bread %26amp; butter

Dad's Meatloaf with Tomato Relish





Ingredients


Tomato Relish:


Extra-virgin olive oil


1 onion, finely diced


2 garlic cloves, minced


2 bay leaves


2 red bell peppers, cored, seeded, and finely diced


2 tomatoes, halved, seeded, and finely diced


1/4 cup chopped fresh flat-leaf parsley


1 (12-ounce) bottle ketchup


1 tablespoon Worcestershire sauce


Sea salt and freshly ground black pepper





Meatloaf:


3 slices white bread, crusts removed, torn into chunks by hand


1/4 cup whole milk


1 1/2 pounds ground beef


1 pound ground pork


2 eggs


Leaves from 2 fresh thyme sprigs


Salt and freshly ground black pepper


3 to 4 bacon slices


Directions


Preheat the oven to 350 degrees F.





Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.





Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.





This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small ';hamburger'; patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.





Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.





Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!

I use a mixture of pork and beef, but like using more beef than pork. I also prefer to use chuck. I have cooked a lot of beef for a lot of men, and I believe you can really taste the difference between different types of beef.





I usually ';eye'; everything:


Put a little thyme, minced onion, garlic powder, and cumin.


Some black pepper, maybe some ketchup (yes, it does help), but I don't add salt. The worcestershire is too salty already.


Mix with 2TBSP worcestershire sauce, 1/2 cup milk and 1/2 cup dry bread crumbs. I mush it together with the meat, until it looks well distributed (no big clumps of bread crumbs in one place), then add a beaten egg and mix it with my hands until the egg disappears.





Cook it until done.





More than loaves, I like to make salisbury steaks, which are the same thing, but formed into oval patties, then browned quickly then simmered in beef gravy for about 30 minutes. I personally don't like the flavor of meatloaf that has been sitting in its own fat for an hour.

and if you want to try something really good, you HAVE to try the recipe for meatloaf with the dry onion soup mix and oatmeal. It is really phenomenal and different. I'd say that Lipton brand probably has the original recipe posted on their website....they make the soup mix.
I like to make meatloaf muffins, they're very good, easy and fun.





I mix 1lb of chuck beef, with a palm full of breadcrumbs, 1tblsp of wisterchire sauce, salt and pepper to taste 1 egg, a splash of milk, 1/2 cup of ketchup or smokey barbeque, 1 small chopped onin and 1 or 2 cloves of garlic. Mix together with hands. Then scoop into muffin tin (oiled without paper cups), top with ketchup or barbeque sauce, then put into 400 degree oven for 20-25 minutes.





My boyfriend, who is very picky, loves them!
I make this over and over again because everyone in the house loves it.





2 lbs ground beef (you can use beef and pork, too)


1 chopped onion


1 chopped celery stalk


1 egg, beaten


salt and pepper


garlic powder


parsley flakes

worcestershire sauce


1 pkg Stove Top Stuffing





I mix it all together with a package of Stove Top chicken stuffing mix (dry) instead of breadcrumbs.


I then shape the meat mixture into a loaf on a cookie sheet, cover with ketchup and cook for an hour in a preheated 375 oven (oven time and temps vary)








I've also done this but divided the meat mix in half - placed cooked bacon and cheddar cheese on one side and covered with the remaining meat mix, closed the sides and baked. Bacon Cheeseburger Loaf - the kids loved it.

not a recfipe but a really good idea that I got from Alton Brown. If you use the standard meatloaf pan....when you put it int the oven put it in upside down on your broiler pan. This will keep the grease from pooling in the bottom of your meatloaf. It will all run off into your broiler pan. I tried this and it works and your cold meatloaf the next day doesnt have a crust of grease on it.
I use a brown gravy mix packet with my usual meatloaf recipe for the flavor and top the loaf with barbeque sauce instead of ketchup.
