as much as i enjoy having a good meat loaf for dinner.just get tired of the same old recipe...thank you kindly everyone whom takes time to respond..happy holiday's.Whose got some great recipes to zip up meatloaf recipes?

Ingredients





* 6 ounces garlic-flavored croutons


* 1/2 teaspoon ground black pepper


* 1/2 teaspoon cayenne pepper


* 1 teaspoon chili powder


* 1 teaspoon dried thyme


* 1/2 onion, roughly chopped


* 1 carrot, peeled and broken


* 3 whole cloves garlic


* 1/2 red bell pepper


* 18 ounces ground chuck


* 18 ounces ground sirloin


* 1 1/2 teaspoon kosher salt


* 1 egg





For the glaze:





* 1/2 cup catsup


* 1 teaspoon ground cumin


* Dash Worcestershire sauce


* Dash hot pepper sauce


* 1 tablespoon honey





Directions





Heat oven to 325 degrees F.





In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.





Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.





Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.Whose got some great recipes to zip up meatloaf recipes?

Ingredients Meat Loaf


Stuffing:


2 large or 5 small corn muffins锟?(2 to 3 cups锟?, crumbled by hand


1/2 pound bacon, chopped


1 red bell pepper, diced


1 tablespoon seeded and minced jalapeno


2 tablespoons minced garlic


2 tablespoons chopped fresh锟?flat-leaf parsley


Salt and pepper


1 egg, beaten


Meatloaf:


3 tablespoons olive oil, plus 3 tablespoons


1 cup diced red onion


1 tablespoon seeded and minced jalapeno


2 tablespoons minced garlic


2 pounds ground beef锟?


1 pound ground pork锟?


2 teaspoons sea salt


2 teaspoons freshly cracked black pepper


2 tablespoons chopped parsley leaves


1 tablespoon chopped thyme leaves


1 teaspoon dry mustard


1/4 cup ketchup


1 tablespoon Worcestershire sauce


2 eggs


6 ounces sliced Cheddar


Directions


For the stuffing: Preheat oven to 275 to 300 degrees F.


Spread the cornbread crumbs on a sheet pan and let toast for about 20 minutes, or until lightly toasted and dry. Turn oven up to 350 degrees F.


In a skillet brown the bacon until crispy. Drain. To the same skillet add the red pepper, jalapeno, and garlic and cook until soft.


In a bowl, combine the cornbread crumbs, bacon, and vegetable mixture. Add parsley and salt and pepper, to taste. Add the egg and mix thoroughly.


For the meatloaf: In medium skillet over medium heat add oil, red onions, jalapeno and garlic. Cook until caramelized, remove from heat and let cool.


In a bowl combine the meat, salt, pepper, parsley, thyme, mustard, ketchup Worcestershire, and eggs and thoroughly mix.


Divide the meat mixture in half. Shape 1 half into a rectangle, creating a canoe, and then loosely fill with stuffinthe stuffing. Transfer to the oven and bake for 1 1/2 hours, or until internal temperature reaches 145 degrees F. Layer the cheese slices on top and bake for another 5 minutes to melt the cheese. Remove from oven and let rest for about 10 minutes. Cut into thick slices and serve.
Bacon-Wrapped Meat Loaf





3 tablespoons Olive Oil


1 large onion, diced


1/2 pound Mushrooms, finely chopped


3 Large cloves garlic, minced


1 cup Heavy Cream


1 1/2 teaspoons Minced fresh oregano


1 1/2 teaspoons Minced fresh thyme


1 1/2 teaspoons Salt


1/2 teaspoon Freshly ground black pepper


1 pound Lean ground pork


1 pound Lean ground beef


1 pound Ground veal


1 Egg, lightly beaten


3/4 pound Sliced bacon





In a large skillet over medium high heat, heat the olive oil.


Saute the onions until translucent, about 8 minutes.


Add the mushrooms and garlic and cook over medium high heat for 3 or 5 minutes.


Add the cream, oregano, thyme, salt and pepper.


Bring mixture to a boil.


Reduce heat and simmer 5 minutes or until vegetables are tender.


Cool vegetable mixture.


In large bowl, combine the beef, pork, veal and vegetable mixture.


Stir in the egg.


Preheat oven to 400 degrees F.


Place a 9 x 5 x 2 1/2-inch loaf pan with the short side facing you.


Take bacon slices and place them across the pan, slightly overlapping, to line the bottom and sides.


Continue with the meat mixture, patting down to level.


Fold the ends of the bacon strips up and over the ground meat mixture.


Place the loaf pan in a larger baking or roasting pan and fill the larger pan with boiling water halfway up the sides of the loaf pan. Cover with aluminum foil and bake for 1 hour.


Remove the foil and continue to bake 30 minutes or until an instant read thermometer registers 165 degrees F.


Remove the meatloaf from the oven and let rest for 10 minutes.


Carefully pour the juices out of the pan.


Cut into 8 slices.
Tex mex meatloaf cheddar pie








Ingredients


One 16-ounce jar fire-roasted red peppers drained, split and seeded


12 ounces shredded Mexican cheese blend (3 cups)


1 1/2 pounds lean ground beef


One 16-ounce jar chunky salsa


1 cup bread crumbs


2 eggs, lightly beaten


1/3 cup chopped flat-leaf parsley


3/4 teaspoon salt


3/4 teaspoon pepper





Directions:


1. Preheat the oven to 375掳. Grease a 10-inch pie plate lightly with olive oil and line with the red peppers. Scatter 1 cup cheese on top.





2. In a large bowl, mix 1 cup cheese, the beef, 3/4 cup of the salsa, the bread crumbs, eggs, parsley, salt and pepper until just combined. Press into the pepper-and-cheese-lined pie plate. Spread the remaining salsa over the top. Bake for 35 minutes.





3. Scatter the remaining 1 cup cheese on top and bake for 10 minutes longer. Let cool for about 15 minutes before slicing.

1 pound lean ground beef


1/2 pound lean ground pork


1/2 pound ground veal


Or 2 pounds lean ground beef


1 cup bread crumbs


1/2 cup chicken stock


1/4 cup tamari sauce


1/2 cup soy sauce


1/4 cup green onions


3 cloves garlic, minced


1 large egg, beaten


serve with steamed veggies, ( i use


1 package japenese style veggies broccoli, sliced carrots, sliced red pepper)





mix meat with all ingredients except for veggies.


shape into loaf pan, bake 1 hour.


steam veggies.
Make-Ahead Pizza Meat Loaves --











INGREDIENTS


1 (26 ounce) jar Prego庐 Traditional Italian Sauce


1 1/2 pounds ground beef


1 1/2 cups Pepperidge Farm庐 Herb Seasoned Stuffing


2 eggs, beaten


1 medium onion, chopped


1/4 cup chopped green peppers


1 teaspoon dried oregano leaves, crushed


4 ounces mozzarella cheese, sliced











DIRECTIONS


Mix 3/4 cup pasta sauce, beef, stuffing, eggs, onion, pepper and oregano thoroughly and shape firmly into 6 loaves, placing 1 piece of cheese in center of each loaf. Place loaves in baking pan.


Bake at 400 degrees F. for 30 min. or until meat loaves are done. Cool slightly. Wrap and refrigerate up to 3 days. Cover and refrigerate remaining pasta sauce.


Place meat loaves and remaining pasta sauce in skillet. Cover and heat through

Brown Sugar Meatloaf --











INGREDIENTS


1/2 cup packed brown sugar


1/2 cup ketchup


1 1/2 pounds lean ground beef


3/4 cup milk


2 eggs


1 1/2 teaspoons salt


1/4 teaspoon ground black pepper


1 small onion, chopped


1/4 teaspoon ground ginger


3/4 cup finely crushed saltine cracker crumbs











DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.


Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.


In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.


Bake in preheated oven for 1 hour or until juices are clear.

Rempel Family Meatloaf --











INGREDIENTS


1 1/2 pounds lean ground beef


1/2 cup crushed buttery round crackers


3/4 cup shredded Cheddar cheese


1 (1 ounce) package dry onion soup mix


2 eggs, beaten


1/4 cup ketchup


2 tablespoons steak sauce











DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C).


Stir the ground beef, crushed crackers, Cheddar cheese, and onion soup mix in a large bowl until well combined. Whisk the eggs, ketchup, and steak sauce in a separate bowl until smooth. Mix the eggs into the meat until evenly combined, if the mixture seems too dry, add a little water. Press into a 9x5 inch loaf pan.


Bake in preheated oven until the meatloaf reaches 160 degrees F (71 degrees C) and is no longer pink in the center, 45 to 60 minutes.

Cheeseburger Meatloaf --











INGREDIENTS


2 pounds ground beef


3/4 cup fresh bread crumbs


1/2 cup minced onion


2 eggs, beaten


1 1/2 teaspoons salt


1 1/2 teaspoons ground black pepper


3 cups shredded Cheddar cheese











DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C).


In a large bowl, combine the beef, bread crumbs, onion, eggs, salt and pepper, and mix well. Pat out meat mixture into a 14x18 inch rectangle on a piece of wax paper. Spread cheese over the meat, leaving a 3/4 inch border around the edges. Roll up jelly roll fashion to enclose the filling and form a pinwheel loaf. Press beef in on both ends to enclose the cheese. Place in a 10x15 inch baking dish.


Bake in the preheated oven 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).
I tend to layer my meatloaves. Some will have a layer of diced green olines and mushrooms, other times there might be pepperoni and a layer of shredded carrots and then a layer of Swiss or cheddar cheese, You can be creative and pout nearly anything in a meatloaf, that is the great thing about them. Get out of the box and experiment. That's how great new dishes appear. No matter how less than perfect it might turn out, it will usually always be at least edible, One time I have a layer of streamed and chopped cabbage with celery seeds and it was great. I usually put at least two different layers in a 5 X 9 sized pan. Go to it,
Corn stuffed meatloaf





Ingredients:


1 1/2 pounds lean ground beef


3/4 teaspoon salt


1/4 teaspoon black pepper


1/2 teaspoon chili powder

Stuffing Mixture:


1 1/2 cups whole kernel corn, canned or frozen, thawed


1 cup soft bread crumbs


1/3 cup finely chopped onion


1 tablespoon dried parsley flakes


1 egg, slightly beaten


1/2 teaspoon salt


1/4 teaspoon pepper


Preparation:


Combine ground beef, salt, pepper, and chili powder. On a large piece of wax paper or foil, form beef mixture into a 10- x 12-inch rectangle.


Mix stuffing ingredients. Top meat with stuffing mixture to within 3/4-inch of edges and roll up like a jelly roll. Seal ends to keep corn mixture in. Place roll in a baking dish (with sides). Bake meatloaf at 350掳 for about 1 hour to 1 hour and 15 minutes.

Cajun Meatloaf





Ingredients:


1 tablespoon canola oil


1 large onion, finely chopped


4 medium garlic cloves, minced


3 tablespoons jalapeno peppers, minced


1/4 cup chopped red bell pepper


1/3 cup tomato paste


1 tablespoon chili powder


1 teaspoon ground cumin


1/4 teaspoon cayenne pepper


1/2 pound lean ground turkey


1 1/2 pounds lean ground beef


1/2 cup bread crumbs


1/2 cup low-fat milk


fresh salsa, see below


Preparation:


Heat the oil in a large skillet over medium-low heat. Add the onion and garlic; saut茅 until soft, but not browned. Transfer to a large mixing bowl. Add the jalapeno and red bell pepper, tomato paste, chili powder, cumin, and cayenne to the onion mixture, blending well. Add the turkey, ground beef, bread crumbs, and milk, combining thoroughly.


Transfer to a 9x5-inch loaf pan. Bake in a preheated 350掳 oven 1 1/2 hours, or until cooked thoroughly. Remove from the oven and let rest 10 minutes before slicing.


Serve with fresh salsa.

Country Meatloaf





Ingredients:


2 tablespoons butter or margarine


8 ounces sliced mushrooms


1 cup chopped onion


1 cup thinly sliced celery


3/4 shredded carrots


2 tablespoons water


2 pounds ground round


1/2 cup flour


1 teaspoon salt


1 1/2 teaspoons seasoned salt


1/4 teaspoon dried tarragon or thyme


1 teaspoon dried parsley flakes


2 tablespoons soy sauce


Preparation:


In a skillet, melt butter over medium heat; add mushrooms, onion, celery, carrots, and water. Heat to boiling; cover and cook for 10 minutes, or until vegetables are just tender-crisp.


In a large bowl, combine ground beef, flour, seasoned salt, tarragon, thyme, soy sauce, and the cooked vegetables. Mix gently and shape into a loaf on a greased, shallow baking pan (with sides). Bade at 350掳 for 55 to 65 minutes, or until loaf is crusty and browned.


Meatloaf serves about 8.
Not sure if mine is different than yours but here's what I do:





1 1/2 pound ground beef


1 egg


1/2 cup cracker crumbs


1 packet onion soup mix


1/4 cup Heinz 57 sauce





Mix together and shape into a loaf. Bake at 350 for 30 minutes. While it's baking mix:





1/4 cup Heinz 57


1/4 cup ketchup


1 Tbls Worcestershire sauce





Spread this over the meatloaf and bake for another 10 minutes.
i don't have one but i love meatloaf make me some lol
