Meatloaf Recipes anyone?

Wondering if anyone has some good meatloaf recipes to share? Thanks a bunch!!!Meatloaf Recipes anyone?
1 1/2 pounds ground beef


1 egg


1 onion, chopped


1 cup milk


1 cup dried bread crumbs


salt and pepper to taste


2 tablespoons brown sugar


2 tablespoons prepared mustard


1/3 cup ketchup





Preheat oven to 350 degrees F (175 degrees C).


In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish.


In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.


Bake at 350 degrees F (175 degrees C) for 1 hour.

Lil Cheddar Meat Loaves

INGREDIENTS


1 egg


3/4 cup milk


1 cup (4 ounces) shredded cheddar cheese


1/2 cup quick-cooking oats


1/2 cup chopped onion


1 teaspoon salt


1 pound lean ground beef


2/3 cup ketchup


1/2 cup packed brown sugar


1-1/2 teaspoons prepared mustard





SERVINGS 8





DIRECTIONS


In a bowl, beat the egg and milk. Stir in cheese, oats, onion and salt. Add beef and mix well. Shape into eight loaves; place in a greased 13-in. x 9-in. x 2-in. baking dish. Combine ketchup, brown sugar and mustard; spoon over loaves.





Bake, uncovered, at 350掳 for 45 minutes or until the meat is no longer pink and a meat thermometer reads 160掳.

Barbecue Meat Loaf





Serves/Makes: 8





1 1/2 pound ground beef


1 cup bread crumbs


OR


1 cup oatmeal


1 chopped onion


1 egg


1 1/2 teaspoon salt


1/4 teaspoon pepper


2/3 cup bbq sauce





Mix all ingredients and shape into loaf. Pour extra sauce on top. Bake at 350 degrees for 1 hour and 15 minutes.

Southwestern Meatloaf

Prep Time: 20 minutes


Cook Time: 1 hour


Serves: 6





Ingredients:


Meatloaf


1 cup Pace庐 Picante Sauce


1 1/2 lb. ground beef


1 cup fresh bread crumbs


1 egg, beaten


2 tbsp. chopped fresh parsley OR 2 tsp. dried parsley flakes


1 tbsp. Worcestershire sauce


2 cloves garlic, minced OR 录 tsp. garlic powder





Potatoes


录 tsp. garlic powder


2 tbsp. vegetable oil


4 medium potatoes (about 1 1/4 lb.), each cut into 8 wedges


Paprika





Directions:





MIX thoroughly 1/2 cup picante sauce, beef, bread crumbs, egg, parsley, Worcestershire and garlic. Shape firmly into 8';x4'; loaf in baking pan.





MIX oil and garlic powder. Toss potatoes with oil mixture until evenly coated. Sprinkle with paprika. Arrange potatoes around meat loaf.





BAKE at 350掳F. for 1 hr. or until meat loaf is done. Pour remaining picante sauce over meat loaf before serving.

Mighty Meaty Meatloaf

2 tablespoons vegetable oil


1 cup chopped yellow onion


1/2 cup chopped celery


1/2 cup chopped green bell pepper


1 tablespoon minced garlic


1 1/2 teaspoons salt


1/2 teaspoon dried basil


1/2 teaspoon dried thyme


1/2 teaspoon ground black pepper


1 1/2 pounds ground beef


1/2 pound ground pork


1/2 pound ground veal


2 eggs


1/2 cup heavy cream


1/4 cup ketchup


2 teaspoons Baby Bam, recipe follows


1 1/2 teaspoons Dijon mustard


1 teaspoon Worcestershire sauce


2/3 cup fine dried bread crumbs





Glaze:


1/2 cup ketchup


2 tablespoons light brown sugar


1 teaspoon Worcestershire sauce


1/4 teaspoon Emeril's Hot Sauce or other red hot sauce, optional





Position rack in center of oven and preheat the oven to 350 degrees F.





Heat the vegetable oil in a skillet over medium heat. Add the onion, celery, bell pepper, garlic, salt, basil, thyme, and black pepper. Cook, stirring, until the onions are soft and lightly golden, about 6 minutes. Remove from the heat and set aside to cool.





In a large mixing bowl, combine the ground beef, pork, and veal with a wooden spoon or with clean hands. Be sure to wash up afterward.





In a medium mixing bowl, combine the eggs, heavy cream, ketchup, Baby Bam, Dijon mustard, and Worcestershire sauce, and whisk to combine. Add the egg mixture to the meat mixture along with the cooled vegetables and bread crumbs. Mix with your hands or a wooden spoon until thoroughly combined.





Transfer the mixture to a 9 by 5 by 3-inch loaf pan. Using your fingers or the back of the wooden spoon, smooth the top into a rounded loaf shape.





To make the glaze, combine the ketchup, brown sugar, Worcestershire, and hot sauce, if desired, in a small bowl. Stir to blend. Spread the mixture evenly over the top of the meatloaf. Bake the meatloaf for 1 hour and 15 minutes.





Using oven mitts or pot holders, carefully tilt the pan away from you and drain off the excess grease from the pan. Slice to serve.





Baby Bam:


3 tablespoons paprika


2 tablespoons salt


2 tablespoons dried parsley


2 teaspoons onion powder


2 teaspoons garlic powder


1 teaspoon ground black pepper


1 teaspoon dried oregano


1 teaspoon dried basil


1 teaspoon dried thyme


1/2 teaspoon celery salt





Place all the ingredients in a mixing bowl. Stir well to combine, using a wooden spoon.


Store in an airtight container for up to 3 months.


Yield: about 3/4 cup



Here is my favorite everyday kind of meatloaf recipe





1 1/2 pounds lean ground beef


1 cup tomato juice or tomato sauce


3/4 cup Quaker庐 Oats (Quick or Old Fashioned, uncooked)


1 egg, lightly beaten


1/4 cup chopped onion


1/4 teaspoon salt (optional)


1/4 teaspoon black pepper





DIRECTIONS


Heat oven to 350 degrees F. In large bowl, combine all ingredients, mixing lightly but thoroughly. Press into 8 x 4-inch loaf pan.


Bake 1 hour to medium (160 degrees F) doneness until not pink in center and juices show no pink color. Let stand 5 minutes; drain off any juices before slicing.





BUT if you want to impress people, serve this one from Rachel Ray's kitchen





Sicilian Meatloaf Roll





1 1/2 pounds ground beef, pork and veal mix from the butcher's counter (meatloaf mix) (I USE 1/2 beef and 1/2 pork)


Salt and pepper


1/2 cup Italian bread crumbs


1 egg


2 cloves garlic, minced


1/4 small white onion, grated


2 tablespoons golden or dark raisins, chopped


3 tablespoons pine nuts, chopped


3 tablespoons grated cheese, Parmigiano or Romano


2 tablespoons chopped flat-leaf parsley


1 cup arugula leaves or baby spinach


6 slices prosciutto di Parma


6 slices deli sliced provolone


Extra-virgin olive oil, for drizzling





Mix meat and next 10 ingredients as if you were making meatloaf. Flatten meat out on a waxed paper lined cookie sheet into a thin layer: 1/2-inch thick, 12 inches long by 6 to 8 inches wide. Cover meat with arugula or spinach, prosciutto and cheese then roll the meat, using the waxed paper to help roll up into a large log, , working across the 6 to 8-inch side, resulting in a 12-inch long log. Drizzle the log with extra-virgin olive oil to coat lightly.





Bake at 450 for 20 minutes. DO NOT OVER BAKE. It will look a little pink but that is from the prosciutto. Serve with pasta and marinara sauce.

Preheat oven to 375 degrees F.





Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.





Topping:


Mix ingredients for topping and spread on loaf. Bake for 1 hour.

This one is AWESOME, enjoy! You can substitute steak sauce for the worcestershire sauce if you don't have any.





Moms Sweet %26amp; Sour Meatloaf





Sauce:


2 small cans tomato sauce


1/4 cup Worcestershire sauce


1/2 onion chopped


1 tablespoon dried parsley


1/2 cup brown sugar





Mix all sauce ingredients together in bowl, set aside.








Ingredients (Meatloaf):


2 pounds ground beef


1/2 chopped onion


1 egg, beaten


1/2 cup or more if needed, quick oatmeal (not instant)


1 teaspoon garlic salt





In another bowl add ground beef, 1/2 chopped onion, egg, oatmeal, garlic salt, pepper, and 1/3 of the sauce mixture. Mix together well.





Place in pan, making space between meat and pan around edges with fingers. Flatten top, spread more sauce over top and cook 1 hour, at 350F. Drain off grease half way (30 min) and add more sauce. Reserve some sauce for adding when served. The oatmeal disappears, is healthy and you can't taste it. It just holds it together better. Add more if you need it.
