Mozzarella Stuffed Loaf

1 1/4 pounds ground turkey breast

1 10-oz pkg frozen chopped spinach, thawed, squeezed dry

1/2 cup minced onion

1/2 cup seasoned bread crumbs

1/4 cup chopped fresh parsley

1 teaspoon dried oregano

2 egg whites

salt and ground black pepper, to taste

1/4 teaspoon cayenne pepper (I omit when using beef)

4 ounces fresh mozzarella, cubed

2 tablespoons ketchup

2 tablespoons Dijon mustard

Preheat oven to 375.

In a large bowl, combine turkey, spinach, onion, bread crumbs, parsley, oregano, egg whites, salt and peppers. Mix until combined and divide in half.

Press 1/2 of the turkey into an 8-inch loaf pan covered in foil. Top bottom half with cubed mozzarella cheese. Press the rest of the turkey mixture over top and press down to flatten the top.

In a small bowl, combine the ketchup and mustard and with a pastry brush, brush the top of the meatloaf. Bake about 1 hour, until top is golden and the loaf begins to pull away from sides of pan. Let stand 10 minutes before slicing.

This is a very simple and good recipe. The only one my family likes.

1 lb. hamburg

1/2 cup beef broth

1 tbs. chopped onion

1 egg

1/2 cup dry bread crumbs

Mix all and put in loaf pan. Bake 1 hour at 350 degrees.

I use a cube of beef boullion dissolved in the 1/2 cup water

if I don't have beef broth. Also I use dried onon.
I've made this one with ground chicken. We prefer it that way now:

SASSY MEATLOAF

1 lb lean ground beef (or chicken, veal, turkey, pork)

1 1/4 cups salsa

3/4 cup quick-cooking oatmeal

1 shredded carrot

2 plum tomatoes, diced

1/2 cup coarsely chopped mushrooms

Preheat oven to 350F

spray loaf pan

In large bowl combine all ingredients. Bake in loaf pan until browned, and knife inserted in center comes out clean and hot - about 1 hour 5 min. Let stand 10 minutes before slicing.
Chop up some onion and green pepper (optional) add 1 package lipton onion soup mix per pound of meat, 1 egg per pound of meat, 2 tbls A-1 sauce or ketchup mix and form loaf. Bake at 375 for 1 hour.
one packet of onion soup mix salt and pepper mix it all up after you put your meatloaf in the pan mix up brown sugar and ketchup put that on the top of the loaf and cook @375 for one hour
