Need more recipes for meatloaf?

Okay, my husband claims he hates all meatloaf no matter who makes it and no matter how it is made. He absolutely loves everything else containing ground beef, though. I want to make an excellent meatloaf he can't help but love.


I can't find any recipes other than the one I already have, so I decided to see what variations other people made to theirs.


Any and all reccomendations will be appreciated.

I don't like meat, but even I go ga-ga over this recipe, so your husband, who likes ground beef, is sure to love this as well! I get recipe requests like mad everytime I make it for guests.





Brown Sugar Meatloaf

Yields: 8 servings


';This tasty meatloaf flavored with ginger, has a sweet brown sugar and ketchup glaze.';





INGREDIENTS:


1 1/2 pounds lean ground beef


1/4 cup milk


2 eggs


1 1/2 teaspoons salt


1/4 teaspoon ground black pepper


1 package of onion soup mix


1/4 teaspoon ground ginger


3/4 cup finely crushed saltine cracker crumbs


1/4 cup packed brown sugar


Few splashes of Worchestershire sauce


1/2 cup ketchup





DIRECTIONS:


1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.


2. In a mixing bowl, mix thoroughly the all the ingredients but the ketchup, brown sugar and Worchestershire sauce, and shape into a loaf.


3. Put the meat in the loaf plan. And apply the brown sugar on top of the meatloaf, splash some Worchestershire sauce and then the ketchup on top.


4. Bake in preheated oven for 1 hour or until juices are clear.

its all good, just dont dry it out, cook till 155 temp,mmmmmmmmm.
Unbelievable Chicken Meatloaf:





1戮 hours 10 min prep


8 servings





1 lb ground chicken


1/2 cup fine breadcrumbs


1 large egg white


1 medium carrot


1 small onion


1/4 cup ketchup


1/2 teaspoon minced garlic


1 teaspoon Worcestershire sauce


1/4 teaspoon celery seeds


1 teaspoon salt


1/8 teaspoon pepper





1. Preheat oven to 350 degrees.


2. Combine chicken and bread crumbs in large bowl.


3. Set aside.


4. Cut the carrot%26amp; onion into chunks and add to blender.


5. Add the remaining 7 ingredients to the blender.


6. Process in blender until carrot is very fine.


7. Pour blender mixture over meat mixture.


8. Mix very well using your hands.


9. Form mixture into a loaf and place in lightly greased 9'; X 13'; pan.


10. Cover with foil and bake for one hour.


11. Remove foil%26amp; continue baking for 15-30 minutes, until loaf is cooked through.
2lbs ground beef


1 cup bread crumbs


2 eggs


1 small green pepper {chopped


1 packet dried onion soup mix


mix well press half mixture in glass bake pan slice 1 lbs block of Velveeta cheese place on top of meat, spread remaining meat over cheese [make sure you pinch sides together to keep cheese from melting out sides]


mix 1 cup katsup, 1/3 cup honey bar-b-q sauce and 2 tablespoons whorstashier sauce together and spread on top bake at 350 for 1 hour or until done all the way through
Bacon Cheeseburger Meatloaf





1 pound ground chuck


10 slices bacon, cooked and crumbled


1 (8-ounce) package sharp Cheddar, grated


2 large eggs, lightly beaten


1/4 cup bread crumbs, toasted


1/4 cup mayonnaise


1 tablespoon Worcestershire sauce


1/4 teaspoon salt


1/4 teaspoon ground black pepper


1/3 cup ketchup


2 tablespoons prepared mustard


1 (3-ounce) can French fried onions





Preheat oven to 350 degrees F.


In a large bowl, combine the ground chuck and next 8 ingredients,


mixing well.


In a small bowl, combine the ketchup and mustard. Stir 1/4-cup


ketchup mixture into meat mixture, reserving remaining ketchup


mixture.


Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a


loaf and place on a rack in a broiler pan. Spread remaining ketchup


mixture over loaf. Bake 40 minutes. Top with French fried onions;


bake another 10 to 15 minutes, or until meat is no longer pink.


Yield: 1 (9 by 5-inch) loaf
Here's my favorite variation:





Fiesta Meatloaf





Prep Time: 10 min


Total Time: 1 hr 10 min


Makes: 8 servings, one slice each





2 lb. lean ground beef


1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken


1 cup water


2 eggs, lightly beaten


2 tsp. chili powder


1/2 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa, divided


3/4 cup KRAFT Mexican Style Shredded Cheddar Jack Cheese





PREHEAT oven to 375掳F. Mix all ingredients except 1/4 cup of the salsa and the cheese.


SHAPE into oval loaf in 13x9-inch baking dish; top with the remaining 1/4 cup salsa.


BAKE 1 hour or until cooked through (160潞F). Sprinkle evenly with the cheese; continue baking 5 min. or until cheese is melted. Let stand 5 min. before cutting into eight slices to serve.
Here is my own recipe. It is spicy. 1 lb ground beef or turkey. 1 Tablespoon minced garlic. 戮 cup Italian seasoned bread crumbs. 1 Egg. 2 tablespoons crushed red pepper. 录 cup low fat milk. Mix it all up. Shape into a loaf top with roasted red peppers and or ketchup, bake at 350 for about an hour. Use a meat thermometer to make sure it is cooked all the way through.
I don't cook mine from a recipe anymore - I tend to make it a little different each time, but everyone always loves it...


I think the problem with a lot of meatloafs is that they are not very moist and flavorful.


One thing I do, that everyone is surprised at usually, is take red bell peppers, celery. carrots, onions and garlic and chop them fine in a food processer....saute them up in a little butter, let cool and then add to meatloaf...this makes it so flavorful and moist!


Also, set a broiler pan filled with hot water on the shelf below the meatloaf - this also helps keep it moist.





The original idea for this is from a recipe in the New Basics Cookbook - it's called the Market Street Meatloaf.





I am telling you - TRY this meatloaf. It is also a great cookbook with a ton of ideas for other stuff!


You may find yourself changing it a bit to suit your tastes, but i am telling you - it is the BEST.
I don't have a real recipe, just what's in my head. I take 1 to 1 1/2 lb. of ground beef, 1 to 1 1/2 cups of bread crumbs, 1 egg, 1 cup chopped yellow onion, about 1-2 tblspoons ketchup, 1 tblspoon mustard, pepper, garlic powder, seasoned salt, and about 1-2 teaspoons of worcestershire sauce. Put it in a meatloaf dish and cover the top with BBQ sauce of your choice. You can also add cheese in mix if you like.
