What is a really good meatloaf recipe?

I HATED meatloaf as a kid, but my husband loves it, so I want to find a recipe that I might actually enjoy. I know there are LOTS of recipes for meatloaf, so I thought I might get some varied answers. Thanks!What is a really good meatloaf recipe?
Mozzarella Stuffed Loaf





1 1/4 pounds ground turkey breast


1 10-oz pkg frozen chopped spinach, thawed, squeezed dry


1/2 cup minced onion


1/2 cup seasoned bread crumbs


1/4 cup chopped fresh parsley


1 teaspoon dried oregano


2 egg whites


salt and ground black pepper, to taste


1/4 teaspoon cayenne pepper (I omit when using beef)


4 ounces fresh mozzarella, cubed


2 tablespoons ketchup


2 tablespoons Dijon mustard





Preheat oven to 375.





In a large bowl, combine turkey, spinach, onion, bread crumbs, parsley, oregano, egg whites, salt and peppers. Mix until combined and divide in half.





Press 1/2 of the turkey into an 8-inch loaf pan covered in foil. Top bottom half with cubed mozzarella cheese. Press the rest of the turkey mixture over top and press down to flatten the top.





In a small bowl, combine the ketchup and mustard and with a pastry brush, brush the top of the meatloaf. Bake about 1 hour, until top is golden and the loaf begins to pull away from sides of pan. Let stand 10 minutes before slicingWhat is a really good meatloaf recipe?
1 # ground beef


1/2 # bulk italian sausage


1 package sloppy joes mix


1 small sweet onion, grated


1/2 cup grated parm cheese


3 eggs


1/2 cup crushed saltine crackers or bread crumbs


1/4 cup tomato sauce.





Mix all together, form into loaf, and place in glass baking dish. Top with mixture of 1/2 cup catsup, and 1/2 cup honey BBQ sauce.





Option - for a different variation - grill some italian sausage links and shove them in the center of the loaf - it's a nice surprise for those eating.

Ingredients:


2 T Butter


2 medium onions, finely chopped


1 T minced garlic


1 medium celery rib


1 medium carrot


3 scallions chopped


2 t salt


1 1/2 t ground pepper


2 t worcestershire sauce


2/3 Cup ketchup


1 1/2 lbs ground beef chuck


3/4 lb ground pork


1 Cup bread crumbs


2 large eggs, lightly beaten


1/3 cup minced fresh parsley





Heat oven to 350 degrees. Melt butter in skillet, ad onions, garlic, celery, carrot, and scallions and cook 5 minutes or so. Cover skillet, place lid on top, turn heat to low, and simmer another 5 minutes to soften carrot. Add salt, pepper, wort. sauce, and 1/3 cup ketchup, and cook for 1 minute. Transfer to a large bowl. Add meat, bread crumbs, eggs, and parsley and blend with your hands but be careful not to overmix. Place in 13 X 9 baking pan. Spread to with remaining 1/3 Cup ketchup. Bake in oven until meat loaf registers 155 degrees F, about 1 to 1 1/4 hour.Let stand 5 minutes after removal from oven, and, enjoy
I use 1 egg,breadcrumbs, onion,greenpepper if you like,

This one is pretty good. 1 lb. ground beef, 1 lb. breakfast sausage, any kind. 1 lb. ground chicken, turkey or veal. 1 package dry onion soup mix, 2 slices bacon, 1 can chopped green chiles, 1 can diced tomatoes (preferably fire roasted, if you can get them), salt, pepper, garlic POWDER, onion POWDER if necessary.





Put all meat in a big bowl. Add onion soup mix, green chiles, chopped, diced tomatoes, onion powder (@1 tsp.) and garlic powder (@ 1/2 tsp) to meat. Mix GENTLY until combined. Form into loaf on baking sheet. Place bacon strips on top; bake 1 1/2 hours. Let stand for 15 minutes before slicing. Makes a great sandwich w/ mayo, too.
i use 1 egg, Italian bread crumbs, Worcestershire sauce, onion soup mix, garlic powder, salt and pepper. After it bakes most of the way, slather with ketchupand bake the rest of the way.





3 people that hated meatloaf loved mine.
Not sure if you like veggies, but....I make a regular meat loaf recipe...Divide half of the meat and spread it into the loaf pan. Then add sliced mushrooms, onions, bell peppers, and grated cheese. Then place the other half of the meat over it.





Cook for about 45 minutes.





I then make a mixture of ketchup, mustard, sugar, and a little soy sauce. Brush this onto the meatloaf, then cook about 10 more minutes.
This is what I put in my meatloaf:





Ground Beef


1 Egg


1 small diced yellow onion


Worcestershire Sauce


Olive Oil


Bread Crumbs


Cornmeal


Tabasco Sauce


Kosher Salt


Black Pepper


Red Pepper


Oregano


Garlic


Cider Vinegar





When is about 10 min from being done, put some crumbled bacon on top and sprinkle with some sharp cheddar, then finish baking until cheese is melted.
Ok......brown sugar meat loaf is definitely the best. My daughter hated meat loaf before but loves this one. Basically you just make a meat loaf,


1 lb ground beef extra lean


1 egg


1/2 onion chopped very fine


about 15 or so saltine crackers crushed fine


1 tablespoon worcestershire


1 teaspoon salt


1/2 teaspoon pepper


splash of milk





Now take a meat loaf pan and put in about 1/3 cup brown sugar and put about 1/2 to 3/4 cup ketchup on top. Form meat loaf into a meat loaf shape and place on top. Bake in 350 oven for about 1 hour.
World's Best Meatloaf or Meatballs








Ingredients


1 Tbsp. Onion Onion鈩?br>

1/2 tsp. Dried Tomato %26amp; Garlic Pesto Mix


1/4 tsp. Garlic Garlic鈩?br>

1/4 tsp. Seasoned Salt


1 1/2 lbs. ground beef


1 egg


1 cup breadcrumbs


1/2 cup half and half


1/4 cup grated Parmesan cheese





Directions


Combine all ingredients in mixing bowl; mix well. Place in refrigerator for 1 hour. For meatloaf, form into loaf; place in loaf pan. Bake at 350掳 for 50 minutes. For meatballs, form into balls; place on baking sheet. Bake at 350掳 for 20 minutes. Makes 4-6 servings.

my grandmother makes the best meat loaf. she gets milk and puts crackers in it untill the mixture it thick then mixes it in with the ground beef then add spices and cooks. sorry i dont have the full recipie but here is one i found online like it. it looks good...

I hated meatloaf too, then someone told me to buy Lipton beefy onion soup mix, there is a fantastic recipe for meatloaf on the box - very easy to make and it's pretty tasty!
