Good meatball/meatloaf recipes?

Please, don't submit super-gourmet-ish stuff. I'm just an average girl who loves meatballs and meatloaf and can't find enough good recipes online.Good meatball/meatloaf recipes?
Hi, here is a simple one from my head which I use all of the time. Nothing fancy about it.





One pound of chopmeat, place in in a bowl


1/2 teaspoon salt


1/2 teaspoon pepper


1/2 teaspoon onion powder


1 teaspoon dried oregano


1 teaspoon garlic powder


1 whole egg


1/2 cup bread crumps, plain ones soaked in a 1.4 cup of water.


1/4 cup ketchup





And,,,,,... if you don't have some of the ingredients, don't worry about it.





Mix all of these ingredients together and roll the mixture into small meatballs.





Buy a jar of your favorite spaghetti sauce.





The traditional way is to pan fry the meatballs while you roll them to get a nice brown color. Usually takes about 5-7 to do this.





You can do that if you wish in canola oil or veg oil, or you can bake them at 350 degrees for 30 minutes. Less mess to clean up.





Whether you fry or bake them, once they are browned, they are still raw inside. Place them in a pot with your favorite spaghetti sauce and simmer them for 45 minutes or so.

Meatball Sandwich








INGREDIENTS:





* 1 pound ground beef


* 3/4 cup bread crumbs


* 2 teaspoons dried Italian seasoning


* 2 cloves garlic, minced


* 2 tablespoons chopped fresh parsley


* 2 tablespoons grated Parmesan cheese


* 1 egg, beaten


* 1 French baguette


* 1 tablespoon extra-virgin olive oil


* 1/2 teaspoon garlic powder


* 1 pinch salt, or to taste


* 1 (14 ounce) jar spaghetti sauce


* 4 slices provolone cheese





DIRECTIONS:





1. Preheat the oven to 350 degrees F (175 degrees C).


2. In a medium bowl, gently mix by hand the ground beef, bread crumbs, Italian seasoning, garlic, parsley, Parmesan cheese, and egg. Shape into 12 meatballs, and place in a baking dish.


3. Bake for 15 to 20 minutes in the preheated oven, or until cooked through. Meanwhile, cut the baguette in half lengthwise, and remove some of the bread from the inside to make a well for the meatballs. Brush with olive oil, and season with garlic powder and salt. Slip the baguette into the oven during the last 5 minutes of the meatball's time, or until lightly toasted.


4. While the bread toasts, warm the spaghetti sauce in a saucepan over medium heat. When the meatballs are done, use a slotted spoon to transfer them to the sauce. Spoon onto the baguette and top with slices of provolone cheese. Return to the oven for 2 to 3 minutes to melt the cheese. Cool slightly, cut into servings, and enjoy!











Glazed Meatloaf II








INGREDIENTS:





* 1/2 cup ketchup


* 1/3 cup brown sugar


* 1 tablespoon lemon juice


* 1 teaspoon dry mustard


*


* 2 pounds lean ground beef


* 3 slices bread, shredded


* 1/4 cup diced onion


* 1 egg, beaten


* 1 cube beef bouillon, crumbled


* 3 tablespoons lemon juice





DIRECTIONS:





1. Preheat oven to 350 degrees F (175 degrees C).


2. In a small bowl, combine ketchup, brown sugar, 1 tablespoon lemon juice and dry mustard until smooth.


3. In a large bowl, combine ground beef, shredded bread, onion, egg, bouillon, 3 tablespoons lemon juice, and 1/3 cup of the ketchup mixture until well mixed. Form into a loaf and place in a 9x5 inch loaf pan.


4. Bake 1 hour. Pour off fat. Pour reserved ketchup mixture over loaf. Bake 10 minutes more.

1 2/3 to 1 3/4 pounds ground sirloin


1 medium onion, cut into chunks


2 ribs celery from the heart of the stalk, cut into 2-inch pieces


1 green bell pepper


1 large egg plus a splash of milk, beaten


1 cup plain bread crumbs


2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)


1 cup smoky barbecue sauce


1/2 cup tomato salsa


1 tablespoon Worcestershire sauce


Vegetable oil or extra-virgin olive oil

Smashed potatoes and cream cheese, recipe follows





Preheat oven to 450 degrees F.


Put ground beef into a big bowl. Put onion and celery into a food processor. Cut the bell pepper in half, rip out the seeds and throw them into your garbage bowl. Cut the pepper into a few pieces and add to the food processor. Pulse the processor blades to finely chop the vegetables into very small pieces then add them to the meat bowl. Add egg, beaten with milk, bread crumbs and grill seasoning to the bowl. Next, mix together the smoky barbecue sauce, the salsa and the Worcestershire sauce. Pour half the sauce mixture into the bowl with the meatloaf mix. Mix the meatloaf together with your hands. Wash up. Brush a 12-muffin tin (1/2-cup each) with vegetable oil or extra-virgin olive oil. Use an ice cream scoop to help you fill meat into a each tin. Top each meat loaf with a spoonful of extra sauce. Bake about 20 minutes. Cut open 1 muffin to test that the middle is cooked through. While meatloaf muffins bake, make green beans in the microwave. Serve meatloaf with Smashed Potatoes and Cream Cheese on the side, too.








Smashed Potatoes and Cream Cheese:


2 1/2 pounds small red potatoes or baby Yukon gold potatoes


1/2 cup half-and-half or whole milk


8 ounces plain cream cheese or veggie cream cheese, cut into pieces


10 chives or 2 scallions, chopped or snipped with kitchen scissors


Salt and pepper


Boil potatoes until tender, 15 minutes. While the water boils and when the potatoes are cooking, you can be working on the meatloaf recipe.





When the potatoes are tender, drain them and return them to the hot pot to let them dry out a bit. Mash potatoes with half-and-half or milk using a potato masher. Add in the cream cheese and smash until the cheese melts into the potatoes. Then add chives and scallions and season with salt and pepper, to your taste.





Yield: 6 servings

I have one that we tested last night. It's not good for you by any means. :-) Came from an old Marlboro cookbook that I found and LOVE.





I don't have exact measurements with me but it is ground beef, crushed Frito Corn Chips soaked in milk, 1/2 cup of salsa, and then eggs. Top the formed meatloaf with more salsa and bake.
