Do you have a great chicken meatloaf recipe with the following ingredients?

I have the following ingredients and need a great meatloaf recipe:


ground chicken


butter chicken curry paste


onion


eggs


bread crumbs


crackers


tomato pesto


tomatoes


(may have many other odds and ends of food/spices in my stuffed refrigerator)





Can you give me your version of a great meatloaf to serve with rice as a side?

CHICKEN MEATLOAF





2 lb. ground chicken


1 c. soft bread crumbs


1 c. tomato sauce


1/4 horseradish sauce


1/2 c. finely chopped onion


1/4 c. butter (butter flavored), melted


1/4 c. chicken broth, heated


1 tsp. salt


1/2 tsp. pepper


2 eggs





In large bowl, mix together chicken, bread crumbs, onion, salt and pepper. In small bowl; beat eggs. Add tomato sauce and horseradish sauce; mix well. Pour egg mixture into ground chicken mixture and mix well.


Lightly oil 9 x 5 x 3 inch loaf pan; pack chicken lightly into prepared pan. Bake in 350 degree oven about 1 hour, basting occasionally with melted butter and chicken broth which have been mixed together. Chicken loaf will be done when it shrinks from sides and springs back at a gently touch. Pour off liquid. Let loaf sit several minutes, turn out onto a serving platter.

I think this recipe would be perfect for ground chicken. You can substitute bread crumbs for the oatmeal if you don't have them. The sauce is really good.





Moms Sweet %26amp; Sour Meatloaf





Sauce:


2 small cans tomato sauce


1/4 cup worchestershire sauce


1/2 onion chopped


1 tablespoon dried parsley


1/2 cup brown sugar





Mix all sauce ingredients together in bowl, set aside.





Ingredients (Meatloaf):


2 pounds ground beef, chicken, or turkey


1/2 chopped onion


1 egg, beaten


1/2 cup or more if needed, quick oatmeal (not instant) or breadcrumbs


1 teaspoon garlic salt





In another bowl add ground meat, 1/2 chopped onion, egg, oatmeal, garlic salt, pepper, and 1/3 of the sauce mixture. Mix together well.





Place in pan, making space between meat and pan around edges with fingers. Flatten top, spread more sauce over top and cook 1 hour, at 350F. Drain off grease half way (30 min) and add more sauce. Reserve some sauce for adding when served. The oatmeal disappears, is healthy and you can't taste it. It just holds it together better. Add more if you need it.
