* 1 1/2 pounds lean ground beef
* 1 cup soft fine bread crumbs
* 1 large egg
* 1/2 cup ketchup (plus more for topping, if desired)
* 2 teaspoons spicy brown mustard or Creole mustard
* 1 medium sweet onion, finely chopped
* 1/2 red bell pepper, finely chopped
* 1 teaspoon Cajun or Creole seasoning, or similar seasoning blend
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1/2 teaspoon dried leaf oregano
PREPARATION:
Heat oven to 350掳.
Combine all ingredients in a large bowl; work together with hands until thoroughly blended. Pack into a meatloaf pan or a 9x5x3-inch loaf pan and bake for 1 hour.
If desired, spread about 1/2 cup of ketchup over the top of the loaf about 15 minutes before the meat loaf is done.

The one I make and love is from Kraft Foods. You use stuffing mix and BBQ sauce. It's called Easy Pleasing Meatloaf
2 lb. lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 eggs, beaten
1/2 cup KRAFT Original Barbecue Sauce, divided
PREHEAT oven to 375掳F. Mix all ingredients except 1/4 cup of the barbecue sauce.
SHAPE meat mixture into oval loaf in 13x9-inch baking dish; top with remaining 1/4 cup barbecue sauce.
BAKE 1 hour or until cooked through (160潞F).
I use my favorite BBQ sauce instead of Kraft brand, and you can use which ever stuffing mix you like the best too.
lb hamburger meat
2 large eggs
bread crumbs
1/2 onion cut up
1 green pepper cut up
375 for about an hour
for the last 20 put ketchup on top

I use a pound of ground meat, 1 egg, ketchup and either bread crumbs or oatmeal, salt %26amp; pepper, and sometimes chopped onions. Mix all that together and spread it in pan and then spread more ketchup on top. Bake at 350 until done.
For side dishes: any kind of potato dish. If you want something easy buy a box of instant Au Gratin or Scollaped potatoes. Green beans go good with meat loaf.

1 tbs Worcestershire sauce
1/4 tsp pepper
1/4 tsp celery salt
1/4 tsp garlic salt
1/4 tsp ground dry mustard

1 egg, beaten
3 slices white bread, torn into pieces
1 small onion chopped 1/4 cup
heat oven to 350
mix all ingredients. spread into 9x5x3 pan
bake 1/2 hours or until beef mixture is no longer pink in the center and juice is clear.
let stand for 5 minutes.
(I use 2 lbs of ground turkey)
This is my husband's FAVORITE recipe. he said my meatloaf is BETTER than his mother's!
MOM'S MEATLOAF
1 1/2 lb. ground meat
1 env. onion soup mix
2 can stewed tomatoes
1 can tomato sauce
2 tbsp. brown sugar
1 1/2 pieces toasted bread, pulled apart
Salt, pepper and garlic to your taste
1 egg
1 tbsp. milk
Mix all ingredients together in large bowl - using your hands to mix is best.
Reserve 1 can of tomato sauce and 1/2 can of stewed tomatoes for gravy on top.
Form into a loaf and top with gravy/sauce and cook 1 hour at 350 degrees. Vegetables can be added as you cook this.
Garnish during cooking this with sliced green peppers and purple onions.

no set amount of anything, just go until it looks good.
375-400 degree oven for an hour or so. Drain grease, top off, back in the oven 5 min. or so to brown top.
We have made this forever. Mom's recipe then we added things we liked.
