Any good ideas or recipes for making a good meatloaf?

So, I have some ground beef, and I am wanting to make a homemade meatloaf. I would like some suggestions or recipes. Also, what are some good sides? ThanksAny good ideas or recipes for making a good meatloaf?
Sides for meatloaf = mashed potatoes, whole kernel corn (or on the cob), roasted carrots, green beanns, broccoli florets, asparagus spears








Bacon-Wrapped Meat Loaf with Brown Sugar - Ketchup Glaze





If you like, you can omit the bacon topping from the loaf. In this case, brush on half the glaze before baking and the other half during the last fifteen minutes of baking. Serves 6 to 8





Brown Sugar - Ketchup Glaze


1/2 cup ketchup or chili sauce


4 Tbsp.s brown sugar


4 Tbsp.s cider vinegar or white vinegar





Meat Loaf


2 tsp. vegetable oil


1 medium onion , chopped medium


2 medium cloves of garlic , minced


2 large eggs


陆 tsp. dried thyme


1 tsp. table salt


陆 tsp. ground black pepper


2 tsp. Dijon mustard


2 tsp. Worcestershire sauce


1/4 tsp. hot pepper sauce


陆 cup whole milk or plain yogurt


1 pound ground chuck


陆 pound ground pork


陆 pound ground veal


2/3 cup Saltine crackers , crushed (about 16), or quick oatmeal, or 1 1/3 cups fresh bread crumbs


1/3 cup fresh parsley leaf , minced


8-12 slices bacon





1. For the glaze: Mix all ingredients in small saucepan; set aside.





2. For the meat loaf: Heat oven to 350 degrees. Heat oil in medium skillet. Add onion and garlic; saut茅 until softened, about 5 minutes. Set aside to cool while preparing remaining ingredients.





3. Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce, and milk or yogurt. Add egg mixture to meat in large bowl along with crackers, parsley, and cooked onion and garlic; mix with fork until evenly blended and meat mixture does not stick to bowl. (If mixture sticks, add additional milk or yogurt, a couple Tbsp.s at a time until mix no longer sticks.)





4. Turn meat mixture onto work surface. With wet hands, pat mixture into approximately 9-by-5-inch loaf shape. Place on foil-lined (for easy cleanup) shallow baking pan. Brush with half the glaze, then arrange bacon slices, crosswise, over loaf, overlapping slightly and tucking only bacon tip ends under loaf .





5. Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool at least 20 minutes. Simmer remaining glaze over medium heat until thickened slightly. Slice meat loaf and serve with extra glaze passed separately.

Mom鈥檚 Meatloaf





1 egg


2 tsp salt


3/4 cup chopped celery


1 finely chopped onion (I grate it)


1 tsp sage


1 pkg. dry onion soup mix


1 Tbsp chopped parsley (I used dried)


1/4 cup ketchup, plus more for top


1 can cream of mushroom or celery soup


2 lbs ground meat (1 1/2 lbs lean beef and 1/2 lb lean pork)


3 cups Bran Flakes cereal, slightly crushed





Blend all ingredients adding meat and cereal flakes last. Pack into a 9x5x3 loaf pan shaping into loaf. Spread top with ketchup. Bake at 375潞F for about an hour and a half. If top starts to get dark cover lightly with foil to prevent burning.

CAMPBELL'S BEST-EVER MEAT LOAF





1 can Campbell's condensed Golden Mushroom Soup, divided (not as good w/ plain mushroom soup)


2 lbs ground chuck


1/2 cup fine dry bread crumbs


1 egg, beaten


1/3 cup finely chopped onion


1 tbsp. Worcestershire sauce


1/3 cup water





In large bowl, thoroughly mix 1/2 cup of the soup, the beef, bread crumbs, egg, onion %26amp; Worcestershire. In 12 x 8'; baking pan, firmly shape meat into 8 x 4'; loaf.





Bake at 350 degrees for 1 1/4 hours or until done. Remove meat loaf to platter, keep warm.





Spoon off all but 3 tbsp. drippings from pan. Stir remaining soup %26amp; the water into drippings in pan, scraping up brown bits from bottom. Over medium heat, heat soup mixture until hot, stirring constantly Serve gravy with meat loaf.

Mama's Cheesy Meatloaf





1 lb. ground chuck


1 egg, beaten


2 tbls. worcestershire sauce


1 cup ketchup


1/2 tsp. onion salt


3/4 stack Town House or Ritz Crackers, crushed


2 cups grated cheese (I like sharp)





Mix all ingredients, except cheese. Press meat out onto plastic wrap about 1/2 inch thick. Sprinkle cheese over meat evenly. Roll up the meatloaf, jelly roll style. Tuck in the ends, and secure with LOTS of toothpicks. Bake at 350 degrees for about 45 min.





Sauce:


陆cup ketchup


录 cup mustard


录 cup brown sugar





Combine, and heat thoroughly. About 15 min. or 20 min. before meatloaf is done, pour on some of the sauce, and finish baking. Keep the rest to pour onto the meatloaf slices at the table.Any good ideas or recipes for making a good meatloaf?
Cheesy Meatloaf





1 pound ground beef


1 cup milk


1 cup Italian seasoned bread crumbs


2 eggs


1 teaspoon salt


1/4 teaspoon pepper


3/4 pound Colby cheese, cut into 1/2-inch cubes


1/2 cup ketchup





Directions





Preheat oven to 400 degrees F (200 degrees C).





In a bowl, mix the beef, milk, bread crumbs, and eggs by hand. Season with salt and pepper. Fold the cheese cubes into the mixture. Transfer to a loaf pan, and top with ketchup.





Bake 1 hour in the preheated oven, to an internal temperature of 180 degrees F (85 degrees C).





Serve with scalloped or mashed potatoes and steamed veggies.
1 pound of ground beef


1/2 pound pork sausage


1 cup cracker or bread crumbs (you can tear bread also)


2 tsp. salt


1 small onion chopped


1/3 green pepper chopped finely (omit if you don't like green pepper)


1 egg beaten


1/2 cup milk


1 tablespoon worstchestershire sauce


1/2 tsp. pepper


1/2 tsp garlic powder





Preheat your oven to 400.


Mix it all together in a big bowl. Form into a loaf.


Place the loaf onto a baking pan (with sides...drippings).


Bake for 40 minutes.


Pull it out %26amp; smear ketchup on the top.


Bake for another 10-15 minutes.
This is the best meatloaf I've ever made. I got the recipe from a Sunday insert in the paper.





1.5 pounds ground beef


1 red onion, finely chopped


2 cups seasoned breadcrumbs


3 eggs


Garlic powder, salt and pepper


Deli ham and provolone slices





Mix beef, onion, breadcrumbs, eggs, some garlic powder, salt and pepper. Pat it out into a rectangle on a sheet of wax paper. Put down a layer of ham, then provolone. Use the wax paper to help carefully roll it up. Pinch the seams shut, put in a sprayed loaf pan, and bake at 350F for a little over an hour. Maybe an hour and 20 minutes. Let cool for about 10 minutes before slicing into it.





Serve with mashed potatoes, bacon gravy, and green beans or succotash.
Easy and Yummy Meatloaf:





1 Box of chicken or veggie stove top stuffing


1lb of ground beef (or turkey if your wanting lower fat)


2 Eggs


2T Worcestershire sauce


1/4 C ketchup





Mix all ingredients together, put in a loaf pan, or form into a loaf and bake in a casserole dish for 1 hour in a 350 degree oven.





Best sides are mashed potatoes and corn, or green bean casserole.
First off let me apologize for the recipe as I don't measure when cooking and I just add what I feel is enough. Anyways the way I make meatloaf is as follows.





Saute one yellow onion and one green pepper until soft. (Sauting helps to moisten the meatloaf)





I like to use a 80/20 lean to fat ratio when cooking with hamburger.





Into the meat mixture I will add the onion and green peppers (let cool). One large egg, I typically like to use ground up crackers instead of bread crumbs, ALDIS sells and really good veggie cracker. You'll need one large can of cream of mushroom soup, half for adding to the beef (again something else to add moisture to the meatloaf). As far as spices I don't use much, salt, pepper, garlic and onion powder and sometime I'll even use Montreal steak seasoning. For the other half of the cream of mushroom soup pour over the top of the meatloaf about 20 to 30 minutes befor it's done. It makes a nice gravy and taste a little bit like beef stroganoff when its done.
Stovetop meatloaf


2 pounds of hamburger


2 eggs


1 cup of water


1 box of stovetop stuffing


1 cup of bbq sauce





Do not prep the stovetop. Mix all ingredients into a bowl. Put in 9x9 pan. Cook on 375 degrees for 45 -60 minutes. It's very moist, and flavorful.





good sides: Mashed taters, corn off or on the cobb, green beans, asparagus, salad, bread/rolls, ETC
I like to mix in diced green bell pepper, diced onions, egg, and crumbled croutons as breading...the seasoned croutons really taste good...then I mix a bit of Barbeque sauce in with the Ketchup to glaze the top.





For sides:


- Sweet Potato Fries baked in a little salt, pepper, and oil. 20 minutes, 400 degrees preheated oven.


- Deep Fried Corn on the Cob. Cut corn in 1/2, roll the corn in flour, egg, then flour again. Drop carefully into a deep fryer of canola oil. Turn as sides become golden brown. Remove with tongs and dry on paper towels or newspaper. Season w/ Salt n Pepper, or Cayenne Pepper for spicy corn.
Wow - lots of meatloaf people out there! Whatever recipe you chose, the bottom line is lots of ketchup - nothing is worse than a dry meatloaf. One thing makes your meatloaf outstanding is a french bread loaf, sliced lengthwise - place that meatloaf sub-style into the bread and bake away. You'll never believe how awesome that bread tastes when it takes on the juices of your meatloaf - be sure to let it cool though so it binds well.
Put an egg, 1 cup milk, 1/2 cup breadcrumbs (if you have them, if not its cool), whatever spices you like, 1 tbsp Worcestershire sauce. That's what I normally put in there. Form it into a loaf shape and cook at 375 degrees for about 45-60 mins.





I always put mashed potatoes and corn with my meatloaf.
I make a more modern meat loaf .


Pizza Meatloaf


I use hamburger and some sausage just basic meatloaf but use pizza sauce mozzarella cheese red pepper and pineapple on top. Be fun and creative!
