I Need A Good Meatloaf Recipe?

I am looking for a meatloaf recipe that is not too fancy, but moist %26amp; delicious. Seems that everytime I try to make it, it turns out dry.

Cheesy Meat Loaf


3 pounds lean ground beef


1 cup fresh bread crumbs


1 (8-ounce) can tomato sauce


8 ounces Swiss cheese or extra sharp cheddar, grated (about 2 cups)


1/4 cup milk or beef broth


2 large eggs, slightly beaten


2 tablespoons Worcestershire sauce


2 tablespoons minced onion


1 teaspoon dried basil


1 teaspoon dried oregano


1 teaspoon salt


1 teaspoon pepper


3 tablespoons tomato paste (optional)





1. Preheat the oven to 350*F (175*C). Line a baking sheet that has a rim or 13 x 9 x 2-inch baking dish with a couple of thickness of foil (for easier cleanup).


2. Mush all the ingredients except the tomato paste together in a large bowl until well mixed. Mold the meat loaf mixture into a large, flattish mound in the center of the prepared pan. ';Ice'; the top with the optional tomato paste if you want.


3. Bake the meat loaf for 1 1/2 hours, or until it is browned and cooked through. Serve it hot the first day and cold, in sandwiches, thereafter.

Ground round, a little ground pork, 1 or 2 eggs, tomato sauce, bread crumbs (Stove top stuffing works good), I add a little brown sugar for sweetness. Also if you like them...onions, bell pepper.
one pound hamburger,


one cup oatmeal,


1 egg,


one cup ketchup,


1/2 cup each chopped onions and green peppers.


Mix thoroughly in a large bowl and shape in loaf pan. Drizzle a bit extra ketchup over the top of loaf and bake one hour at 350 degrees.


pan should serve 4-6 people depending on serving size.
Lipton onion soup mix. Follow therecipe on the box. You can't go wrong.
1 1/2 lb lean ground beef


1 lb sausage


put in 8 x 10 pyrex baking dish


add 2 or 3 eggs


half a chopped onion


lots of ketchup ( use a whole bottle mixed in and on top)


and crushed up ritz crackers or something similar





You have to get your hands into it- and mix mix mix- just keep adding crackers and ketchup until the consistency feels right.


It will be very moist and stick to your hands- but make sure the ketchup is mixed in very well. When it is right, form into a loaf and coat the top and sides with ketchup.


Bake at 350 until done. After about 1 1/2 hours cut into the middle to check it.


I have never had any complaints. Is also yummy leftover- cold or heated.

1 slice bread, broken or chopped finely


1 whole fresh egg


1 small vidalia onions or type sweet onion, finely chopped

4 tablespoons ketchup


1/2-2/3 cup sweet milk or half-and-half


Sauce


4 tablespoons apple cider vinegar


2-4 tablespoons dark brown sugar, packed firm (to taste)


1/2 cup ketchup





Meatloaf: Combine meat loaf ingredients and place into a loaf baking dish.


Smooth out top.


Sauce: Combine sauce ingredients and pour on top and sides of meatloaf.


Bake@ 350 degrees Fahrenheit about 1 hour to 1 hour 15 minutes or until done.

*The addition of 1 or 2 teaspoons of Kitchen Bouquet庐 makes this recipe very good.


**Recipe should be';plump'; from the addition of the milk or Half%26amp; Half庐.


It should NOT be runny.


***A second batch of sauce served hot is good to serve with the meatloaf.


Note: I note that some of you are using game meat such as deer -- Deer is a very DRY meat. It is wise to HAVE some fat added to the deer -- especially to ground deer. Maybe 25 % fat, otherwise your results will be poor. I don't know about some of the other game meat some are using. Please consult and expert. The recipe is delicious as it stands! Enjoy!





Brown Sugar Meatloaf


Got this one from allrecipes.com. It's one of their most popular recipes. I use chili sauce or salsa instead of ketchup to give a nice contrast to the sweetness of the brown sugar. A lighter version can be made using Splenda brown sugar blend, skim milk, and Egg Beaters.


6-8 servings 1陆 hours 20 min prep





1/2 cup packed brown sugar


1/2 cup ketchup


1 1/2 lbs lean ground beef


3/4 cup milk


2 eggs


1 1/2 teaspoons salt


1/4 teaspoon ground black pepper


1 small onion, chopped


1/4 teaspoon ground ginger


3/4 cup finely crushed saltine crumbs





Preheat oven to 350 degrees.


Lightly grease a 5x9 inch loaf pan.


Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.


In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf.


Place on top of the ketchup.


Bake in preheated oven for 1 hour or until juices are clear.
Here's one, it comes out moist at the end:

1 Egg


1 Bread-crumbled up


1 Green Pepper -blended


1/2 onion-blended


1 can of Camp bells vegetable soup


a dash of black pepper


dash of salt








1)mix into a mixing bowl


2) preheat oven to 350


3) pour onto glass tray


4) shape however you want it


5) cook for 45 min


6) you can mix BBQ sauce with ketchup and brush/smooth over meatloaf and cook for another 15 min

Meatloaf





1 1/2 lbs lean ground beef


3 slices soft white bread, torn into very tiny pieces


1 cup V8 vegetable juice


1 medium onion, finely chopped


2 tablespoons chopped parsley


1 egg, beaten


1 teaspoon salt


1/4 teaspoon pepper


1 (1 1/4 ounce) package Lipton Onion Soup Mix (do not substitute)


1-2 minced garlic clove





preheat oven to 350F, mix ingredients thoroughly, press into small roasting pan or loaf pan.


bake uncovered for 1 1/2 hours.








Meatloaf





1 (10 ounce) can condensed tomato soup with basil %26amp; oregano


1 1/2 lbs ground beef


1/2 cup dry breadcrumbs


1 teaspoon dry mustard


1 tablespoon worcestershire sauce


1 egg, beaten


1/4 cup water





In large bowl, combine 1/2 cup (125 mL) soup, beef, bread crumbs, mustard, Worcestershire and egg; mix thoroughly.


In 11-inch x 7-inch (2 L) baking dish firmly shaped mixture into loaf.


Bake at 350掳F (180%26amp;掳C) 1 hour or until done.


Spoon off fat, reserving 2 tbsp (25 mL) drippings.


In small saucepan over medium heat, combine remaining soup, water and reserved drippings.


Heat through, stirring occasionally.


Serve with meat loaf.


-------Meatloaf with Zesty Sauce------------.


Omit all drippings when spooning off fat.


To soup and water in saucepan, add 1 tbsp packed brown sugar, 1 tbsp (15 mL) vinegar, 1 tsp (5 mL) dry mustard and hot pepper sauce to taste.

1 cup cracker crumbs


1 1/4 teaspoons salt


1/4 teaspoon pepper


1 large egg, beaten


1 medium onion, chopped


1/2 cup tomato sauce


3/4 cup ketchup


2 tablespoons firmly packed brown sugar


1 cup water


2 tablespoons mustard


2 tablespoons vinegar





Preheat oven 325 degrees.


In a large mixing bowl, combine ground beef, crumbs, salt, pepper, egg, onion and tomato sauce.


Mix lightly.


Shape into a loaf and place in a baking dish.


In a small mixing bowl, combine the ketchup, brown sugar, water, mustard and vinegar.


Brush the loaf with this mixture and place in oven and bake 1 hour and 15 minutes, basting occasionally with sauce.








Bacon Cheeseburger MeatLoaf!





4 slices bacon


1 1/2 lbs lean ground chuck or ground round


1 cup firm fresh white breadcrumbs


1 cup coarsely shredded sharp cheddar cheese


1 large sweet onion, chopped (vidalia)


2 tablespoons mayonnaise


2 tablespoons sweet pickle relish


2 teaspoons dry mustard


3/4 teaspoon salt


1/2 teaspoon ground pepper


1 egg


1/4 cup ketchup





Preheat the oven to 350.


In medium skillet,cook bacon over medium heat until it is limp%26amp; some fat is rendered,3-4 minutes.


Remove bacon from the skillet and reserve it,set aside.


In large mixing bowl,use your hands to gently but thoroughly mix together: meat,bread crumbs,1/2 cup cheese,onion,mayo,relish,mustard赂氓 pepper and egg.


Pat mixture into a shallow 2-quart baking pan.


Spread top of the loaf with the ketchup then lay bacon strips over the ketchup.


Bake until loaf is firm%26amp; the bacon is crisp,45 to 50 minutes.


Sprinkling top with remaining 1/2 cup cheese to melt during last 5-10 minutes of baking (Internal temperature should be 155).


Let meatloaf stand in the baking dish for 10 minutes,then cut into squares to serve.








Mom's Meatloaf Made Healthy





2 slices white bread, crumbled


1/4 cup skim milk


3/4 lb extra lean ground beef


1 cup carrots, grated


1 stalk celery, finely chopped


1 medium onion, minced


2 garlic cloves, minced


1 (6 ounce) can tomato paste (no salt added is best)


1 egg white, slightly beaten


1/2 teaspoon dried thyme


1/2 teaspoon salt


1/4 teaspoon pepper





Preheat oven to 400 degrees, line 8 1/2 x 4 1/2 inch loaf pan with foil.


In large bowl, combine bread and milk. Add beef, carrots, celery, onion, garlic, tomato paste, egg white, thyme, salt, and pepper, mix until well combined.


Transfer to prepared pan and bake 45 minutes (the recipe says 25 minutes, but it didn't seem done by then), or until cooked through. Serve hot, warm, or chilled.

5 pounds chopped meat (2 1/2 pounds beef, 2 1/2 pounds pork)


15 ounces Italian bread crumbs


10 eggs


1 chicken bouillon cube, dissolved in 1/2 cup hot water


1/2 cup finely grated Parmesan


Chopped parsley


Salt and pepper


Tomato Gravy:


2 tablespoons butter


4 cloves smashed garlic cloves


2 tablespoons flour


2 (14-ounce) cans chicken stock


2 tablespoons tomato paste


1/4 cup red wine vinegar


1 (14-ounce) can whole tomatoes


Salt and pepper


1 tablespoon dried oregano


Fried Onions:


3 large Spanish onions, peeled, cut in 1/2, and thinly sliced


1 quart milk


1 pound all-purpose flour


2 quarts canola oil





To make Meatloaf: Preheat oven to 350 degrees.


In a large bowl, mix chopped meat, bread crumbs, eggs, bouillon broth, Parmesan, and chopped parsley. Mix well with a wooden spoon until all the ingredients are well incorporated. Form into a loaf shape and place on a sheet pan coated with nonstick vegetable spray.


Place in oven and cook for 45 minutes, or until meatloaf has an internal temperature of 160 degrees.


To make Tomato Gravy: In a large saucepan, heat butter over medium-high heat. Allow butter to foam and begin to brown. Add smashed garlic and allow garlic to brown slightly. Sprinkle in flour and stir constantly, forming a roux to cook for approximately 10 to 12 minutes until golden brown. Add chicken stock and tomato paste and cook for 3 to 5 minutes.


Add 1/4 cup red wine vinegar and all tomatoes. Simmer for 30 minutes and finish with salt, pepper and oregano. Serve atop the meatloaf.


To make Fried Onions: Heat a large, deep pot of oil to 350 degrees. Soak onions in milk for a minimum of 10 minutes. When oil is hot, drain onions and dredge in flour, making sure to remove excess flour.


Plunge onions a batch at a time (there should be 3 batches) into hot oil and fry until extremely golden brown and crispy. Remove from fryer and place on a paper towel to drain. Serve atop dressed meatloaf.

LOW-FAT MEATLOAF %26amp; GRAVY





Pre-heat oven to: 350 degrees and make sure oven rack is in the center.





CHOP FINE AND PUT IN A VERY LARGE BOWL:


1 medium onion 鈥?finely chopped





3 stalks of celery 鈥?finely chopped





6-8 button, or (I like crimini) mushrooms- finely chopped





2 cloves of garlic finely minced





ADD, COATING ALL THE CHOPPED VEGETABLES


1 tsp. salt





陆 tsp. freshly ground black pepper





1 tsp. dried oregano





1 tsp. dried thyme leaves





1 tsp. rubbed sage





陆 tsp. Steak %26amp; Chop seasoning (any powdered steak seasoning is fine)





ADD TO THE BOWL:


1 lb. Extra Lean Ground-Beef (97% fat free) if you must indulge. For non-red meat eaters, fat-free turkey works great.





2 eggs (well-beaten in a separate bowl BEFORE ADDING)





2 tsp. aged balsalmic vinegar





1 c. plain bread crumbs (from can 鈥?unless you can make your own in food processor). I only use the can when I am in a hurry or tired, but I like stale Italian Foccacia bread made into crumbs in the food processor.....so good!





Spray loaf pan (9x5x3) with PAM, place meatloaf mixture in loaf pan and bake at 350 degrees for 55 minutes. Allow meatloaf to 鈥榬est鈥?before cutting so it retains all the juices.

QUICK-N-EASY LOW-FAT MUSHROOM GRAVY





SAUTE OVER MEDIUM HEAT IN A MEDIUM SIZED POT:


8 button or crimini mushrooms, sliced





1 Tablespoon of Extra Virgin Olive Oil





ADD %26amp; STIR CONSTANTLY:


2 tsp. thyme leaves (dried or fresh)





陆 tsp. fresh ground pepper





1 beef bouillon cube





WHEN THE ABOVE IS COOKED FOR ABOUT 3 minutes, ADD %26amp; STIR IN SLOWLY:


陆 c. merlot or burgundy wine





2 cans of Fat-Free Cream of Mushroom Soup





Add water to your desired consistency of gravy thickness, turning heat to precise simmer (medium 鈥?to 鈥?low)鈥? Until your meatloaf is ready to serve.








WHY LOW-FAT?





I save all my calories for the extra buttery, roasted garlic, cheesy mashed potatoes that I serve the above with! :)
