Does anyone have a really good meatloaf recipe?

I'm not a huge fan of meatloaf but my mom loves it. I think however that if I found a really good recipe I would like it too. I should have all the ingredients. I have the basics like the meat, bread crumbs and eggs etc. I have 3 lbs. of meat so I would prefer a recipe using 3 pounds (I know that's a lot but there's no need to be wasteful).Does anyone have a really good meatloaf recipe?
Do I ever!! It sounds strange at first, but oh my goodness, it is amazing.








Loaf:


1 lb Ground Beef


2/3 Cup Bread Crumbs


2 beaten eggs


3/4 Cup Milk


Onion Powder


1 tsp Salt


1 tsp Pepper


1/2 tsp Sage





Sauce:


1/2 Cup Ketchup


3 Tbsp Brown Sugar


1 tsp dry Mustard


1/4 tsp Nutmeg











Mix together all loaf ingredients and blend well. Place in 8 陆 inch loaf pan. Mix sauce and spread over the top of the loaf. Bake at 350掳 for 1 hour.Does anyone have a really good meatloaf recipe?
1 cup milk


1 cup saltine cracker crumbs


3eggs


1 cup sauteed aromatic vegetables...what ever you have n had. Onion, garlic, celery, carrots, bell pepper etc


2 tablespoons mustard


1 tablespoon Worcestershire sauce


1 1/2 tsp salt


1 1/2 tsp pepper


3lb ground beef





Mix milk and cracker crumbs. Let sit for 10-15 min. Beat eggs and add to milk mixture along with everything except the meat. Mix very well.


Add meat and mix just until the other ingredients are spread throughout the meat mixture. Over mixing the meat will make th meatloaf too dense.





I prefer to bake mine in a glass casserole and pat the mixture out to about 2 inches thick.





Bake at 375 until well browned and it has pulled away from the sides of the baking dis. A 3lb meatloaf should take just over an hour if it isn't any thicker than 2 inches.


If you want to glaze the top, use equal parts mustard and brown sugar.
3 lbs. ground round, 2 eggs slightly beaten, 1/2 c bread crumbs, 2 T prepared mustard, 1 t dried basil leaves, 1 1/2 t salt, 1/2 t pepper, 1/2 c finely chopped onion, 1/2 c finely chopped green pepper, 1 c chopped parsley, 6 slices bacon. Preheat oven to 350F. In large bowl combine eggs, bread crumbs, mustard, basil, salt, pepper, and parsley. Beat with fork until well combined. Mix 1/2 c ketchup with 1/2 c brown sugar in a small bowl. Mix well. Allow to sit for 5 minutes. Mold and place meat mixture in baking pan. Add ketchup and sugar to top of loaf. Line bacon strips over top. Cook uncovered for 1 hour 15 minutes. Serves 8.
Ingredients


2-3 lb ground beef


I packet dry onion soup mix


1 can evaporated milk (12 Fl. oz.)


4 tablespoons ketchup


4 tablespoons firmly packed brown sugar


2 teaspoon mustard





Directions:

Heat oven to 350 degrees.

In 8 by 4 inch loaf pan, combine first 3 ingredients; mix well (mixture will be very moist) Press evenly in pan.

Combine brown sugar, mustard, and ketchup in a small bowl. Spoon over mixture.

Bake for 45 minutes.

Using spatulas, lift meat loaf from pan to a serving plate. (Because it will be in lots of liquid, mostly water if using lean ground beef).
There are a lot of good recipes. I will tell you what my family has used for years and they were great farm cooks:





We always use milk as the moistening agent. We addd enough so that the meat is just barely able to hold its shape.





We always use onion and chopped peppers, eggs and torn bread. Bread crumbs make for some tough meatload that is usually good for sandwiches onlyl the next day.





We use a ketchup,brown sugar, yellow mustard (not too much) mixture for the glaze that goes on the meatloaf at the end of the cooking time. We let it bake on the meatloaf for about 10 minutes.
half lean meat, half pork. i forgot the seasonings, but you can experiment with the seasonings...
