Hey - Here's one I found - not a meatloaf lover but seems simple enough and the lady says her family loves it. My only caution would be excess liquid in the salsa, as the tomatos etc should provide enough moistness. Don't remove ALL the juices, just careful on excess...

Change to: servings US Metric

1 lb lean ground beef

1 cup thick %26amp; chunky salsa or picante sauce

2/3 cup plain breadcrumbs

2 teaspoons additional breadcrumbs (may need, depending on consistantsy salsa or picante sauce)

mix all ingredents well by hand and place in glass 8x8 square cassorole. you can even drizzle with catsup.

place in a preheated oven set at 375 degrees and bake until done.(about 45 mins.).
Meatloaf is a matter of taste. You can put ANYTHING in it.

Groundbeef, pork, ham, turkey.

With Groundbeef, use ketchup, saltines, snack crackers, or oatmeal. Eggs. Maple Syrup or Brown Sugar, Parmesan cheese. Salt pepper %26amp; Garlic. Brown. I have sometimes when there is about 10 minutes before you are ready to serve take it out and put a layer of thinly slices cheese over the top and then cover with non rolled up crescent rolls then bake again till they are done.
1 pound hamburger in a bowl, mix in two eggs, dash of garlic powder, dash of pepper, and a handfull of cracker crumbs. Mix well with the hands and put in large bread pan and bake for 1 hr. on 325 temp. That is as plain as you can get.
After you have mastered a meatloaf recipe you like, I have a suggestion for another great main dish you might like.

Using your meatloaf recipe, mix well and then form into large meatballs...my family makes them bigger than baseballs. Put them in a baking pan and bake at 350' till done.

Meanwhile, mix: 3/4 cup catsup and 3/4 cup brown sugar. Sprinkle with garlic powder and black pepper. I use onion powder too but of course that's optional. Mix well.

When meatballs are done, drain them well. Then spoon catsup mixture over each meatball. Put back into oven for 15-20 minutes until the glaze looks ';done';...it will set up and be shiny. I always serve these with creamy mashed potatoes and Italian green beans. It's a family favorite meal you might want to try.
You do not have to put opnions in this you can opt for onion powder or nothing at all.

Ground Round (however much you want to make)

Italian bread crumbs (I use the ones with Parmesan cheese)

Onion (chopped)

Granny smith apples (chopped)

Ketchup

Brown Sugar (depends on how much you are making)

Eggs (beaten at room temperature, depends on how much you are making)

Put the meat in a big bowl and add ketchup, bread crumbs and brown sugar ( I do not use a whole lot)

In food processor mince onions and apples and then add to your meat mixture.

Place in a pan and bake. When it is just about done mix some ketchup, brown sugar and Worcestershire sauce together and pour over top, let it finish baking a little to glaze.

The apples add moisture and a wonderful taste to the meat loaf.

In bowl, combine beef, garlic, eggs, tomato sauce and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.

1 small green pepper diced

salt %26amp; pepper

1 egg

mix all the above together... form a loaf place in 9x13 pan surround with quartered potatoes and cut carrots and celery pour over all of it a med can of tomato sauce

cook in a 350 oven for 40 mins or until the loaf is done.... you will find it easy to make juicy and very flavorful
