Good Eats Meat Loaf

6 ounces garlic-flavored croutons

1/2 teaspoon ground black pepper

1/2 teaspoon cayenne pepper

1 teaspoon chili powder

1 teaspoon dried thyme

1/2 onion, roughly chopped

1 carrot, peeled and broken

3 whole cloves garlic

1/2 red bell pepper

18 ounces ground chuck

18 ounces ground sirloin

1 1/2 teaspoon kosher salt

1 egg

For the glaze:

1/2 cup catsup

1 teaspoon ground cumin

Dash Worcestershire sauce

Dash hot pepper sauce

1 tablespoon honey

Heat oven to 325 degrees F.

In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.

Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.

Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.

ingredients

陆 cup milk

4 slices white sandwich bread, torn into pieces

1-陆 pounds ground sirloin

1-陆 pounds ground pork

2 small onions, finely chopped

6 garlic cloves, minced

陆 cup chili sauce, plus 录 cup for glaze

1 cup chopped fresh parsley

陆 cup grated Parmesan cheese

2 large eggs, lightly beaten

Coarse salt and ground pepper

A quintessential and much-loved presence in everyday American cuisine, meat loaf can serve as both a quick and satisfying entr茅e and the main sandwich ingredient for several days of lunches. This version features a chili sauce for a twist on the traditional recipe.

Preheat oven to 350掳, with rack in center. In a large bowl, pour milk over bread; let soak, about 30 seconds. Add sirloin, pork, onion, garlic, 1/2 cup chili sauce, parsley, Parmesan, eggs, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Using your hands, mix until combined; do not overmix or meatloaf will be dense.

Divide mixture in half. Gently pat each half into a log, and place each log in an 8 1/2 -by-4 1/2-inch loaf pan. Do not press down or into corners.

Bake 50 minutes. Brush tops of loaves with remaining 1/4 cup chili sauce; continue cooking until juices run clear and an instant-read thermometer inserted into thickest part registers 160掳, about 10 minutes.

Remove from oven; let rest 5 minutes. Turn loaves out of pans; slice each into eight 3/4-inch-thick slices.

really easy and really good meatloaf recepi....

requires hamburger with some fat in it...no fat or low fat ..just turns out way to dry.

I mix 1 pound of hamburger with 2/3 cup of chopped onions.. 1 small can of tomato sause ..salt and pepper..enough seasoned bread crumbs ( I buy them) to make a loaf that will hold together in a loaf pan.. start out with 1/2 cup and keep adding and mixing..put it in a slightly greased loaf pan..

I make an indention down the center and drizzle catch up :) Bake at 375 for about 45 minutes.

Serve with Betty Crocker scalped potatoes and a fresh green salad.

takes about 10 minutes to make this whole thing..moist and yummy!
rachel ray has a couple really good ones... check out her site.

But really you can do what you want--- the basic is hamburger meat, chopped onion, a filler such as crushed crackers or chopped fine bread crumbs, egg to hold it together, a can of tomato sauce, and salt and pepper. After you put in in the pan (use a bread pan), smooth it out and spread ketchup all over the top. Cook it almost an hour at about 350.

YUM!
