Meatloaf Recipe for Sandwiches?

I'm looking for a good meatloaf recipe that produces not only a good, hot meatloaf but also is nice and FIRM (not dry) to use the leftovers for sandwiches. I make a good meatloaf, but it is kind of crumbly when cold and doesn't slice well for sandwiches. Can anyone help me out with this?Meatloaf Recipe for Sandwiches?
Tips: using your same recipe, but with a less fatty ground beef. Don't use hamburger beef, as the fat will melt while cooking, leaving gaps in the meatloaf. Thus, the end product becomes crumbly. Try adding some flour and increase the number of eggs. The flour and eggs will make the ingredients stick together.Meatloaf Recipe for Sandwiches?
Take your meatloaf recipe and add some stovetop stuffing to the ingredients as you prepare it. That will make it soft when cold - still firm - but you'll be able to cut it into slices. The only other thing I can think of is to add some bulgar that you have soaked in hot water to the mixture. It's difficult to cut because of the fat in the meat. The eggs and stuffing would hold it together better for cutting.
1 can (8 oz.) tomato sauce


1/4 c. firmly packed brown sugar


1 tsp. prepared mustard


2 lbs. lean ground beef


1/4 c. cracker crumbs


2 lg. eggs, lightly beaten


1 med. onion, minced


1 1/4 tsp. salt


1/4 tsp. pepper





Combine tomato sauce, brown sugar, and mustard. Set aside. Combine remaining ingredients. Add 1/2 cup tomato sauce mixture, blend well. Fill (8 cup) microproof ring mold. Pour remaining tomato sauce mixture evenly over top. Place in microwave. Insert temperature probe into center of meatloaf. Cooks high about 12 minutes.

A Best Restaurant Beef Recipe


Preparation time: 20 minutes. 10-12 servings.





Ingredients for Meatloaf Recipe:


2 pounds ground chuck (not ground beef)


4 ounces onions, finely chopped


3 ounces Worcestershire sauce


3 ounces ketchup


2 cups soft bread crumbs


3 eggs, beaten


1/2 teaspoon black pepper


1 teaspoon salt


2-4 slices bacon (medium to thick cut preferred)





Instructions for Meatloaf Recipe:


Combine and thoroughly mix all ingredients being careful to mix lightly (mixing too vigorously will cause the meatloaf to be tough)


Form one or two meat loaves and place in one or two loaf pans


Top each loaf with 2 slices of bacon


Bake in 350 degree F oven for about one hour and 10 minutes


Drain off fat


Let sit several minutes before slicing or refrigerate and slice cold


(To reheat: place slices in covered skillet with a little chicken or beef stock over low heat until hot. Microwaving not recommended.)
You can buy pre-cooked meatloaf at your grocery store. I'm not sure, but I think it is Hormel or Armour. One of the top brands. It is in the cold section, not in the freezer section. Ask a clerk to show you where it is. We buy it and cut into slices for our sandwiches. It can also be heated in its contain in the microwave if you wish. And it can be frozen if you want to keep more on hand.





You might want to give the other pre-cooked meats a try. They are all delicious.....pot roast, ham, pork chops, chicken, pork roast, etc. Smithfield is our favorite brand if you can find it.
I always make my meatloaf using the recipe from Martha Stewart. It tastes great and serves up cold very well. I would say to use firm bread slices such as sourdough to help hold your meatloaf. But do try the recipe, it is on Martha's website. Enjoy
