Anyone know of a good meatloaf recipe?

Does anyone know of a home made (not the store made stuff) meatloaf? I would like to try to make something different than what my mom makes. What would you recomend for the side dishes and desert?Anyone know of a good meatloaf recipe?
Do try this delicious german recipe with the hardboiled eggs in the middle. It is pretty easy to make:





Hackbraten (Meat Loaf)





Ingredients:





750 g minced beef


2 eggs


2 big onions (medium), to be finely sliced into fine cubes


1 bread bun (Br枚tchen), to be soaked in warm water


1 clove garlic, to be finely minced


3 tbsp chives (Schnittlauch), to be finely cut


2 tbsp parsley (Petersilie), to be finely cut


2 carrots, to be peeled and sliced into fine cubes





1 tbsp oil


4 hardboiled eggs, shelled





Method:





1. Squeeze the water out from the bun until it is dry. Put all ingredients into a bowl except the hardboiled eggs and the oil. Mix thoroughly.





2. Spread the oil in a loaf tin to cover the bottom and sides. Spread half of the meat mixture into the tin evenly. Place the hardboiled eggs on top and then spread the remaining meat mixture evenly to cover the eggs. Press the mixture evenly.





3. Bake in a preheated oven (place tin on the middle rack) at 180潞 C (Fan: 160潞 C) for about 45 minutes.





4. Serve meat loaf with green salad.Anyone know of a good meatloaf recipe?

I lb. of lean beef,1lb. of pork sausage,mix, add 1 can campbell's french onion soup, cup of italian bread crumbs,add water as needed so its moist,season with some garlic and add whatever spices rock your boat.Form into loaf and bake at 325 degrees for 60 min.Enjoy!
you got a microwave? how bout a casserole dish w/lid? use any recipe you like or just throw together what you like. hamburger meat, diced onions, tomato sauce, crackers, 1 egg, salt, pepper, and whatever veggie you may like. press into prefferably round casserole dish. cover. cook till done. usually you will smell it or your microwave will have a sensor. or just go 15 min. and check. always cover dish to prevent scorching. baked potatoes are also great in the micro. wash put in grocery bag, twist closed. bake like 10 min. depending on how many potatoes you bake. you can even add a salad to that meal. well since the oven is free we can bake desert in it. get a frozen pie, and ice cream. you'll look like you cooked all day.

** Bacon-Wrapped Meat Loaf with Brown Sugar - Ketchup Glaze **

If you like, you can omit the bacon topping from the loaf. In this case, brush on half the glaze before baking and the other half during the last fifteen minutes of baking. Serves 6 to 8





Brown Sugar - Ketchup Glaze


1/2 cup ketchup or chili sauce


4 Tbsp.s brown sugar


4 Tbsp.s cider vinegar or white vinegar





Meat Loaf


2 tsp. vegetable oil


1 medium onion , chopped medium


2 medium cloves of garlic , minced


2 large eggs


陆 tsp. dried thyme


1 tsp. table salt


陆 tsp. ground black pepper


2 tsp. Dijon mustard


2 tsp. Worcestershire sauce


1/4 tsp. hot pepper sauce


陆 cup whole milk or plain yogurt


1 pound ground chuck


陆 pound ground pork


陆 pound ground veal


2/3 cup Saltine crackers , crushed (about 16), or quick oatmeal, or 1 1/3 cups fresh bread crumbs


1/3 cup fresh parsley leaf , minced


8-12 slices bacon





1. For the glaze: Mix all ingredients in small saucepan; set aside.





2. For the meat loaf: Heat oven to 350 degrees. Heat oil in medium skillet. Add onion and garlic; saut茅 until softened, about 5 minutes. Set aside to cool while preparing remaining ingredients.





3. Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce, and milk or yogurt. Add egg mixture to meat in large bowl along with crackers, parsley, and cooked onion and garlic; mix with fork until evenly blended and meat mixture does not stick to bowl. (If mixture sticks, add additional milk or yogurt, a couple Tbsp.s at a time until mix no longer sticks.)





4. Turn meat mixture onto work surface. With wet hands, pat mixture into approximately 9-by-5-inch loaf shape. Place on foil-lined (for easy cleanup) shallow baking pan. Brush with half the glaze, then arrange bacon slices, crosswise, over loaf, overlapping slightly and tucking only bacon tip ends under loaf .





5. Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool at least 20 minutes. Simmer remaining glaze over medium heat until thickened slightly. Slice meat loaf and serve with extra glaze passed separately.
I like to blend my mince (and it can be either beef, pork or lamb) with about 1/4 of the same amount in sausage mince. Then I add diced onion, capsicum (bell pepper red), 1 clove of mince garlic, one packet of thickened soup or spring vegetable soup mix (any dry packet soup mix will do) 2 eggs, 2 tablespoons of tomato suace (Ketchup) 1/2 cup of breadcrumbs and 1/4 cup flour. Mix well. In a loaf tin spray with spray oil (or buttewell) and sprinkle evenly with breadcrumbs, place mixture in and firmly pat down and sprinkle mixture with additional breadcrumbs. Cook for about an hour and a half in a moderate oven. You can use the over to roast potatoes or you can serve with mashed potatoes and steamed carrots and green beans. Or just with a mixed salad. If you like a spicy meatloaf add a teaspoon of minced chilli but thats up to you. For dessert take a sheet of puff pastry and let it thaw. Cut into 1/2 and then into 1/3's so you have 6 even rectangles. Spread with some apricot or plum jam (jelly? the stuff you eat with PB not jello) then lay thin slices of peeled and core apples. Sprinkle liberaly with icing sugar and bake for 20 min to 1/2 hr serve with whipped cream.

mix all those and then take mo tomato suace and spread on da bottom of da meat loaf pan put mean it and spread on top of meat loaf then bake it till its cooked!! YUMMY!
Most refer to meatloaf as comfort food, especially when served with mashed potatoes and gravy. Enjoy!





Meatloaf Recipe


A Best Restaurant Recipe


Preparation time: 20 minutes. 10-12 servings.





Ingredients for Meatloaf Recipe:


2 pounds ground chuck (not ground beef)


4 ounces onions, finely chopped


3 ounces Worcestershire sauce


3 ounces ketchup


2 cups soft bread crumbs


3 eggs, beaten


1/2 teaspoon black pepper


1 teaspoon salt


2-4 slices bacon (medium to thick cut preferred)





Instructions for Meatloaf Recipe:


Combine and thoroughly mix all ingredients being careful to mix lightly (mixing too vigorously will cause the meatloaf to be tough)


Form one or two meat loaves and place in one or two loaf pans


Top each loaf with 2 slices of bacon


Bake in 350 degree F oven for about one hour and 10 minutes


Drain off fat


Let sit several minutes before slicing or refrigerate and slice cold


(To reheat: place slices in covered skillet with a little chicken or beef stock over low heat until hot. Microwaving not recommended.)





You're now ready to serve it with some potatoes (mashed or otherwise) and vegetables.





Any meatloaf remaining can be used in soup or spaghetti sauce or on sandwiches.





An option for this beef recipe: Top with tomato sauce or Marinara sauce or brown gravy to serve.
